When thinking about meat, what generally comes to mind? A sizzling, succulent ,fillet steak? Braaied, crispy chops? A slow roasted Oxtail or delicious, juicy boerewors? Well these are certainly the connotations that come to mind. However, it seemed we were in for a staggering sur-prise when being offered an excur-sion to The Carnivore Butchery.

So, never entering a butchery before, a grouping of apprehen-sion and uncertainty lay in the air, while still attempting to keep an open mind. The first aspect which was startling was the cleanliness of the entire place. crisp white tiles and sparkling floors, dirt-free work spaces and basins, sanitary fridges and shelves, spotless crooks and corners. The entire butchery was 100% hygienic! Another aspect which could not be ignored was the smell in the air. Immediately the smell of fresh, natural, raw

and authentic meat enveloped the atmosphere. The smell seemed to charge the imagination on what was to come next...

Entering the fridges where the animal carcasses hung was initially quite daunting but the process is very intricate, well managed and elaborate that one certainly holds a respect for the method. It becomes an education on how the piece of meat at your favourite restaurant essentially gets onto your plate. It is highly fascinating and intrigu-ing; after all, should we not be concerned about what exactly we are putting into our own bodies? Thus the process was an educa-tional, informative and enlight-ening one. The meat we eat is cultivated, nourished and nurtured into becoming a heavenly, titillat-ing, well-seasoned, well- prepared piece of steak on a plate.

Furthermore, being wonderfully amazed by the procedure of Butch-ery, what seemed more surprising was the emphasis on Game meat! This is what the owners of The

Carnivore Butcher had to say: “We aim to have Game meat on the table of every South African household, at least once a week. We take pride in the contribution we make to promote sustainable game farming and conservation. We believe in optimising and promoting the use of our natural resources, and believe that the time is right to further promote game meat to the discerning public in an effort to meet the needs of the ever-increasing health conscious and ecologically-aware consumer market” And just to add to that, having tasted the Game meat at The Carnivore Butchery, it was an explosion of flavours in your mouth and was a mouth-watering alternative to beef, lamb or pork.

As the world slowly and cautiously continues to come out of the recent global recession, so the sales of coffee, both locally and overseas, are continuing on an upward trend. World coffee exports amounted to 9.21 million bags in November 2012, compared with 7.88 million in November 2011. Certainly in South Africa, consumers are in-creasingly prepared to try out new and more sophisticated options. That’s according to Chris Brown, Director at The Daily Buzz, a local chain of upmarket workplace cof-fee bars. Brown comments, “We are see-ing a change in the local coffee culture – people are becoming more discerning and aware when it comes to drinking coffee. More and more coffee drinkers have bean grinders at home – and not only coffee-making machines – which illustrates the growing shift away from drinking instant coffee in South Africa. As a country, we are in many respects still an ‘English colony’ of tea drinkers and the widespread consumption of premium coffee is still fairly new. I’d say that we’re still a few years behind the top coffee areas in the United States, though, when it comes to our coffee trends and what we’re offering and open to trying.”

Asked for his predictions on coffee trends in South Africa for 2013, Chris Brown believes we will see a continuing trend towards options that are perceived as being healthier, and also a rise of a num-ber of different brewing methods. He clarifies, “Items like frozen yoghurt, which are perceived to be healthier ‘treat’ options, will be-come available on more and more menus. As far as coffee drinks go, some of the newer, more theatrical brewing methods, which bring out the best flavours in well-roasted coffee, will begin to gain popular-ity. Locally, espresso-based coffees - which refers to a method of brewing where pressurised hot wa-ter is forced through finely ground coffee - have dominated the menu boards of South African speciality coffee shops. However, I think that in 2013 we’ll see more and more alternative brewing methods being introduced. “For example, manual coffee-making methods are becoming an increasingly popular option for home enthusiasts and coffee shop baristas alike. You’ll drink it black because it tastes so good! I believe we will also see more and more grinding of the beans on demand, as well as a steady increase in the demand for Fair Trade and organic coffee, even though it will still take up only a fraction of the market. Finally, I think we’ll continue to see some of the better independent coffee shops setting up their own in-house coffee roasters. A combi-nation of the theatrics, smell and guaranteed freshness should help draw in more customers.”

Asked on his ‘top five’ coffee capitals, Brown modestly replies that he wouldn’t like to give such a list, as he would still like to explore the coffee globe more widely, but clarifies, “Of the places I have been to, there are two that stand out above the rest. Firstly, Portland, Oregon, where the city has an intriguing quirkiness to it and the general level of the barista knowledge is way higher than anywhere I’ve seen in the world. Secondly, I give a nod to Turin, Italy, and not necessarily for the taste of the coffee, but rather their incredible coffee culture. There are tiny cafés everywhere.”

Back home, Brown comments that Cape Town seems to have become the ‘capital’ of the South African coffee scene. “I’m not sure I’d add it to a ‘top coffee capitals’ list just yet, but it definitely has a thriving coffee community, which is great to see. I believe that as time goes by, and South Africans continue to embrace a culture of good coffee, Cape Town could also become known around the globe for its coffee as well as its other famous tourist attractions,” he concludes.

Constantly trying to reach a new customer base and grow his busi-ness, he went on to open Shahmi-yana branches in Edenvale on Van Riebeeck Street and Melville as well as Birnam on Corlett Drive.

Looking for a new challenge, Bobby sold off these businesses and started a new chain of Indian restaurants called: Sahib Indian Restaurants, which he opened up in Northcliff, Rivonia, Illovo, Sandton, Norwood and Bryanston. But his craving for success didn’t stop there, Bobby then decided to

start something new and mag-nificent, but still retain that truly Indian flair. The result was the Banjaara Indian Restaurant which aimed to bring authentic North Indian Cuisine to the greater South African public who had developed a rather fond desire for the exotic food.

The atmosphere at the restaurant might be unmatched, with tradi-tional décor and a contemporary environment coinciding with the authentic cuisine - which is the real crowd pleaser. Jon-Pat Myers, Hagen Engler and David Chislett get together at Amuse to present an unusual gathering of music and talk for your ears. Myers returned to South Africa two years ago after more than a decade globetrotting on the international stone-sculpture circuit. Jon-Pat will be playing a 30-minute acoustic set of his own material... a far cry from his early days in punk band Toxik Sox! Hagen Engler, erstwhile editor of FHM and author of Comrade Baby (a collec-tion of his columns and poems) will be laying down his combination of slam poetryand acoustic tunes on guitar.
