ne of Memphis’ newest fine-dining restaurants

is everything you would expect: Highly coveted

reservations, a seasonal menu, delicious food, and a

professional staff. What you don’t expect is to forget

you are in a restaurant.

Tucked in a non-descript residential neighborhood

on the east side of Memphis, this mid-century home

turned restaurant uses the beautifully landscaped

surroundings to its advantage, creating an inviting

atmosphere that feels so much like home. From the

bright yellow door that welcomes you in to the

sun-drenched patio that overlooks the lush pristine

acreage, you could easily mistake this experience for

a Sunday night dinner party – that is until you get

the food…..

Freshness and integrity of the ingredients that come

through the kitchen are the focus at The Acre. The

style of cuisine is not fusion (although you will find

various influences from Asia to Latin America in each

dish), nor is it traditional. Rather, Chef Wally Joe and

his culinary team work together to integrate different

ingredients and techniques from around the world using

the freshest product possible for dishes that are truly

unique yet feel homemade. The Acre’s expectations of

high-quality ingredients can be found everywhere, from

their house-made syrups and infusions behind the bar

to the restaurant grown herbs and florals. Each dish is

prepared with minimal manipulation to let the individual

ingredients shine.

kitchen with Chef Andrew Adams as he prepared one

Kimchee Glazed Snake River Sturgeon

Black Garlic-Salsify Puree, Chorizo, Artichokes, Lotus Root & Avocado Pea Puree

• 1 lotus root segment • 6 cloves Korean black garlic• 2 salsify roots peeled and diced• 1 cup milk• 4 baby artichokes• 2 oz white wine• 2 shallots, minced• 1 cup of blanched english peas• 8 nasturtium leaves (substitute with arugula if necessary)• ¼ cup avocado oil • 2 oz Spanish dry chorizo• 2 cups pea tendrils • 4 6oz sturgeon fillets • 3 Tbs Momoya kimchee base or homemade kimchee pureed

• Salt to taste• Olive oil for sautéing fish and artichokes

PREPARATION

Turn oven to 350 degrees.

Peel lotus root. Cut half of the root into ¼-inch disks and boil for about an hour, strain and reserve. Slice the other half of the lotus root into very thin wafers and fry until golden. (optional garnish)

Simmer salsify in milk until tender for about 20 minutes. Strain the salsify and puree in a blender with black garlic. Add a small amount of milk as needed, but not all, to thin out puree. Season mixture with salt and hold warm.

Peel artichokes down to the heart, place in acidulated water, and discard the green leaves. Sweat half of the shallots and add the white wine. Add the artichokes and cover with a mixture of half olive oil and half water or vegetable stock. Cook on low heat until tender, about 20-30 minutes. Strain and reserve.

Sweat the remaining shallots over low heat in a sautee pan and mix with peas and nasturtium leaves in a blender. Puree with avocado oil until smooth. Season with salt and hold warm.

Cut chorizo into small string-like strips (reserve a pinch for optional garnish). Sautee pea tendrils with olive oil in a pan over medium high heat. Add artichokes, boiled lotus root, and chorizo. Hold warm.

Heat a large sauté pan or two small sauté pans over medium-high heat. Dry then season the sturgeon with salt. Add olive oil to the pans and then the fish. Sear until both sides are golden brown (about 1 minute per side). Remove fish from the pan and brush the kimchee base over the fish. Cook fish in the oven until cooked through. This will take about 3-5 minutes for a 2-inch thick fish.

To plate, alternate dotting the salsify puree and pea puree on the plate. Place the pea tendril mix in the center of the plate and place the fish on top. Garnish with fried lotus root, additional nasturtium leaves, and chorizo.

hether blissfully living a dream romance or bored to tears in an existing relationship, there’s always this natural curiosity about how our love lives stack up to others and what our place is in the current perception of “normal.” In the hot-off-the-presses book aptly entitled The Normal Bar, wellness entrepreneur Chrisanna Northrup teamed up with two American sociologists, Yale Ph.D. Pepper Schwartz and Harvard Ph.D. James Witte, to come up with a process of polling, indexing and analyzing current couplings.

The authors designed a very detailed and highly interactive survey with the objective of gathering intimate information about relationships from all around the world. After nearly 100,000 responses, the team sorted through the data and took a critical look at the satisfaction of couples in areas such as communication, affection, trust, fidelity, sex, as well as financial and even domestic cooperation. Sorting by age and gender, racial and geographic differences as well as sexual orientation, the authors were able to reveal many interesting findings with similarities in certain areas and some interesting, even surprising differences in others.

For example, the number one complaint by men was not the lack of sex in their current relationship, as one would typically assume, but a lack of communication. When the happiest couples were asked to rank the most fulfilling aspect of their relationships, communication was at the top of the list followed by friendship, affection, sex, lifestyle, personal growth, financial stability, and then parenting.

Packed full of interesting findings, The Normal Bar offers more than a somewhat voyeuristic look into the minds and domestic lives of couples from all over the globe. It identifies who typically wants what when it comes to couples’ sex lives, the factors that cause conflict, how kids and family figure into the mix, issues with educational, political, cultural, even spiritual differences and even the tiny habits or shortcomings that become big problems over time.

Michael Costello is an American Couture Fashion Designer of Greek and Italian descent, and the first ever Gypsy fashion designer. The 29-year-old father of two was featured on Project Runway season 8,

finishing in 4th place, and he was a Project Runway All-Star season 1 finalist.

Pan-Roasted Tilapia with “Forbidden” Black Rice, Heirloom Carrots and Basil Puree

• x4 4 oz. Tilapia filets• 1 tsp. salt• 1 tsp. black pepper• 1 c. Chinese forbidden rice • 1 ½c. water• 1 Bay leaf, fresh• 2 cups mixed Asian mushrooms• 2oz. Ponzu sauce• 8oz. Heirloom baby carrots• 6oz. Heirloom baby potatoes• 3oz. Extra virgin olive oil • 1oz basil leaves, fresh• 1oz. Edible flowers • Salt and pepper to taste

PREPARATION

Preheat oven to 350F. In a large bowl, combine carrots and potatoes with olive oil, salt and pepper. Place them on a sheet pan and roast for 20 minutes or until tender. Keep in a warm oven until ready to serve.

While the vegetables are roasting, combine rice, water and bay leaf in a sauce pan. Cover sauce pan with a lid and cook over medium heat for 15 minutes.

Remove sauce pan from heat and keep the rice covered until ready to serve.

Next, sauté mushrooms in a skillet on high heat for 3 minutes. Then deglaze the pan with Ponzu sauce using a wooden spoon to scrape up browned bits on the bottom of the pan. Set mushrooms aside.

To prepare basil puree, bring a pot of salted water to a boil and blanch the basil leaves until bright green. Squeeze out excess liquid and allow leaves to cool. Once cooled, place the basil leaves in a blender and puree with 4-5 ice cubes. Season the puree to taste with salt and pepper and finish off with a drizzle of olive oil.

Prepare the Tilapia by seasoning it with salt and pepper. Cook in a non-stick skillet over high heat for 2 minutes on each side. To plate, place a mound of the warm rice in a center of the plate, place fish over the rice, arrange mushrooms, carrots and potatoes around the fish and spoon the basil puree in between the vegetables. Garnish with flowers and enjoy!

Curated by the Graceland archives team in partnership with the Rock and Roll Hall of Fame and Museum, this groundbreaking exhibit features 75 artifacts on loan from the famed Cleveland museum, along with items from the collections of many of today’s biggest names in music who have been influenced by the King of Rock ‘n Roll. Elvis purchased a 1958 Convair 880 in April 1975 and named it Lisa Marie after his daughter. He spent more than $800,000 having the jet remodeled. Then, take a peek inside Elvis’ smaller Lockheed Jet Star, customized by Elvis with a yellow and green interior, that was primarily used for taking Elvis’ manager and his staff from city to city on his concert tours.

The Peabody DucksIn 1933, Peabody General Manager Frank Schutt and his duck-hunting friends decided to play a prank on hotel guests by placing live decoy ducks in the fountain of the hotel’s Grand Lobby. The reaction from hotel visitors was astoundingly positive and soon after, five North American Mallards were introduced to the continuing delight of the hotel’s guests.

Later, the hotel bellman, a former circus animal trainer named Edward Pembroke offered to usher the ducks to the fountain each day eventually training them to descend the elevator and march to the fountain at precisely 11:00 am and return to their Royal Duck Palace on the roof each evening. Today, the “Peabody Duck March” is a daily event that’s a great way to kick off your Memphis experience in fine feathered style.

Sun Studio is a working recording studio opened by rock pioneer Sam Phillips on January 3, 1950.

Sun is the home to the very first rock-and-roll single, Jackie Brenston and his Delta Cats' "Rocket 88" recorded in 1951 (with song composer Ike Turner on keyboards.)

This relatively obscure fact entitles Sun Studio the undisputed designation as the “birthplace of rock & roll.”

Along with blues legend Howlin’ Wolf, Rock-and-roll, country, and rockabilly pioneers who called Sun their recording home include Johnny Cash, Elvis Presley, Carl Perkins, Roy Orbison, Jerry Lee Lewis and too many more to mention.

An American clergyman, activist, and prominent leader of the African-American civil rights movement, Dr. Martin Luther King, Jr. was a Nobel Peace Prize laureate who became known for his advancement of civil rights for all Americans. Today, the story of his untimely demise and the legacy he leaves behind lives on at the National Civil Rights Museum.

Through its collections, exhibitions, research, and educational programs, the National Civil Rights Museum promotes a better understanding of the lessons of the civil rights movement and its impact and influence on human rights movements worldwide. A Memphis area must-see, the museum chronicles the civil rights movement with historical exhibits, including Room 306, the hotel room where Dr. King stayed in April of 1968.

The museum was dedicated on July 4, 1991, and officially opened to the public on September 28, 1991, and has since hosted over three million visitors. Accredited by the American Association of Museums and one of only five U.S. accredited international sites of conscience, the National Civil Rights Museum is one of the top premier heritage and cultural museums in the nation.

In 1999, the museum acquired the properties facing it, the former Canipe’s Amusement store and rooming house, where convicted assassin James Earl Ray stayed under the alias of John Willard and was alleged to have fired the deadly shot. This facility became the Exploring the Legacy expansion to the museum, which opened to the public on Sept. 28, 2002.

A Catalyst to Change

Located in the historic art district of downtown Memphis, the National Civil Rights Museum is the site of the Lorraine Motel where Dr. Martin Luther King, Jr. was assassinated on that fateful day back in April 1968 – an event that sparked a turning point in the civil rights movement.

The aftershock of Dr. King’s assassination eventually plunged the Lorraine into a long and steep decline. The motel’s owner, Walter Lane Bailey, maintained two rooms, 306 and 307, as a shrine to Dr. King and in memory of his wife Loree who died days after the assassination. Realizing the symbolic significance of the Lorraine, Mr. Bailey searched for help to maintain the property as a civil rights shrine. He reached out to Mr. Chuck Scruggs, program director of local radio station WDIA radio and the “Save the Lorraine” campaign was born.

A group of prominent Memphians, concerned that this historical site would be destroyed through continued neglect and indifference, formed the Martin Luther King Memorial Foundation and in 1984 changed its name to the Lorraine Civil Rights Museum Foundation. Under the leadership of local attorney and activist, D’Army Bailey, the Foundation raised enough money to purchase the property on the courthouse steps at a public auction for $144,000.

Using a design report by former Smithsonian Institution curator, Benjamin Lawless, the foundation moved forward to create the educational facility and memorial site that today is the National Civil Rights Museum.

Currently, exhibits in the Lorraine Motel are closed for renovation, but exhibits in the Legacy Building remain open for tours.

Beale Street

Declared a National Historic Landmark in 1966, followed by an act of Congress in ‘77 declaring Beale Street the official Home of the Blues – music enthusiasts worldwide arrive in droves to sit back, relax with a cool beer and take in all that is American Music’s history and future.

A three block cornucopia of nightclubs, restaurants and retail shops, Beale Street, deep in the heart of Memphis TN, oozes Delta blues, jazz, rock ‘n roll, gospel and even modern alternative music.

Established in the early 1800s as a home to traders and merchants along the Mississippi River, Beale Street provided the perfect stop for street musicians to entertain, solicit and pick the pockets of local business owners, consumers and passers-by. 1890 brought The Orpheum Theatre, known locally as “The South’s Finest Theatre,” and with it came a slow transformation from ruffian street scene, to a favorite gathering spot for world-class entertainment.

A 20-year music celebration on Beale Street from 1920 through 1940 brought backbone to the Blues. Legendary jazz and blues artists such as Albert King, Louis Armstrong, Memphis Minnie, Muddy Waters, and B.B. King (B.B. is short for Blues Boy) established a new style known as Memphis Blues, cementing a rich history for Memphis as a world leader in music.

Today, if a stroll down Beale Street doesn’t invoke a nostalgic beat in your soul, the celebration of sight, scent and sound will. Decorated with neon and brightly colored lights, Beale Street is a visual circus not to be missed. Stomach thrilling scents waft from local eateries such as Kings Place Café known for their Barbecued Ribs and Cajun specialties, or Miss Polly’s Soul City Café famous for chicken and waffles. But sight and scent are nothing compared to the delicious sounds spilling out of clubs and into your ears.

Historically Cool Since 1892

Ryman Auditorium

One reason Nashville gained so much notoriety as the “Music City” is because of Ryman Auditorium.

Originally built by Thomas G. Ryman for the fiery evangelist Sam Jones in 1892, it quickly became the venue of choice in Nashville for music and entertainment.

It wasn’t until 1943 that the Rymanwould become sacred ground formusicians around the world when the Grand Ole Opry moved in and called the Ryman home for the next 30 years, solidifying its namesake as“The Mother Church of Country Music.”

Musical greats like Johnny Cash, Elvis Presley, Hank Williams, and Patsy Cline were known to grace the stage at the Ryman frequently. But country music wasn’t the only sound originating from the stage of the Ryman, it’s also the birthplace of Bluegrass, officially recognized by the state of Tennessee as where the definitive sound of bluegrass originated.

After visiting the “Mother Church of Country Music,” our next stop is the Country Music Hall of Fame and Museum.

Located just blocks from the Ryman Auditorium and the honkytonks of lower Broadway, the Country Music Hall of Fame and Museum is a journey through time that illustrates the story of the visceral art form and cultural phenomenon that is country music.

Spanning three floors, this architectural marvel features spectacular exhibits and a mind boggling array of elements that illustrate the art and business of country music.

Originated in 1967, the museum and hall of fame relocated to its $37 million home in May 2001, commanding the center of Nashville’s cultural and entertainment district with stunning architecture and and a replica of the famous WSM radio tower that can be seen from anywhere in town.

RCA Studio B

What’s known as the “Nashville Sound” was perfected at the historic RCA Studio B. Known originally as RCA Studios, it is now part of the Country Music Hall of Fame and Museum. This small recording space has recorded over 35,000 songs with over 1,000 American hits by the likes of Elvis Presley, Dolly Parton and Roy Orbison.

As Music City's singular historic studio tour, RCA Studio B provides a glimpse into the heart of Nashville music-making during one of its most exciting periods when the little Studio saw the creation of numerous chartbusters, such as Dolly Parton's "I Will Always Love You," Elvis Presley's "Are You Lonesome Tonight?" and Charley Pride's "Kiss an Angel Good Morning."

Hatch Show Print

Though Nashville is known for the musical legends that perform on its various venues, many performers would not have attracted their followings without the assistance of Hatch Show Print.

ollywood beauty, fitness and lifestyle expert, Donna Spangler is perhaps best known for her best-selling book, How To Get A Rich Man - A popular read that offers advice and guidance for finding the perfect man who is rich in spirit and heart while offering financial stability.

A former model, actress and Playboy bunny, Donna is the go-to expert for all things beauty, fitness and the Hollywood lifestyle. She often makes guest appearances on TV and can be seen in magazines and on countless blogs and websites. She also writes for LA Splash magazine, It’s A Glam Thing and her own blog, DonnaSpangler.com.

Health Beauty Life visited Donna in her lovely home in Beverly Hills, California, where she shared some tidbits about herself, as well as quick, at-home fitness and cooking tips.

“I was into fitness early on,” says the blonde stunner and former pin-up model. “I was always into body conscious ways, being mindful about what I ate and how I looked. Being a Playboy model, I went out for bikini season and had to look good. So it was essential to stay fit and focused.”

She continues, “In order to get the best, you have to make yourself the best and treat yourself well. A lot of women these days are treating themselves better than they did way back when. I think that’s really important because women are looking better. That’s also important because what you project to the world is what you think of yourself. Nobody wants to have someone who doesn’t take care of themselves or doesn’t have self-esteem.They want someone who takes pride in how they look.”

Donna feels that it is her mission to inform other women about the importance and benefits of having a healthy diet and keeping a regular fitness routine. She personally works out 4-5 days a week between the gym, taekwondo classes and an occasional ice skating session. When things get too busy or she’s writing from home, she likes to step up with some stretches and at-home exercises to stay fit and focused.

Donna offers these no-excuses, get-fit solutions for busy women. Instead of complicated workout equipment, she opts to show simple exercises that anyone can do using everyday items found around the house.

Starting with a heavy book and holding it in both hands, with feet slightly spread, raise the book high over your head but to one side. While keeping your back straight and your arms as extended as possible, bring the book down diagonally across your body as you lunge to the side bending that knee as you lower the book to that same side. Repeat 12-15 times on one side and then change sides and repeat 12-15 times.

Center yourself over spread-apart feet. With both hands on the book, raise your arms above your head. Keep your arms fully extended and lower the book straight in front of you. Bend at the waist and drop your arms, allowing the book to swing back behind you from between your legs, and then rise back upright. Repeat 12-15 times.

Center yourself again with feet apart, arms extended and raised above your head. Complete a full circular motion with the book in one direction 12-15 times and then repeat while going the opposite direction.

Lower BodyLunge forward with one leg bending at the knee, reach down with your hands to the ground and balance the other foot on the tip of your toes. Go down as far as you can go being comfortable and stable. Roll your heal on the back leg to each side, repeating 12-15 times and then stand upright again. Repeat on the other side. This exercise will loosen your hips, and strengthen your glutes as well as inner and outer legs.

While standing, hold a can (or weights) in each hand while keeping your arms straight at your sides. Keeping your back up straight, lunge forward with one leg, bending at the knee but not touching the ground. Hold a second or two in the downward position and come back upright. Lunge with the other leg and then repeat the process about 12-15 times on each side, rest and repeat.

Stand straight up; rest your elbow against your body slightly in front. With your palm up, grab a can (or weights when you work up to it), squeezing slightly for a good grip, and while concentrating and focusing on the weight, raise and lower the can while keeping your arm in a straight line. Repeat 15-20 times on each side, rest and repeat.

ArmsThese are great exercises for the upper arms, to tone the triceps and biceps and diminish the dreaded flap of flab.

Use a stable chair on a flat surface. Sit on the edge of the chair and place your hands on the corners on either side of you. Walk your feet out so your legs are extended out in front of you. Holding yourself with your hands on the edge of the chair, scoot forward until your back end clears the chair. Donna’s Gluten-Free Chicken NuggetsDonna’s gluten-free chicken nuggets are high in protein and best of all easy to make! Patrick was lucky enough to join Donna in the kitchen to share her simple recipe for this healthy, tasty treat.

• 3 Whole chicken breasts• ¼ c. pickle juice• ¾ c. low-fat milk• 1 egg• ¾ c. gluten-free flour• 1 tsp. black pepper• 1 tsp. salt• 2 T powdered sugar• ¼ c. canola oil

PREPARATION

Prepare chicken breasts by cutting them in to bite-size pieces. Add pickle juice, low-fat milk and egg in a 2qt. bowl. Add chicken pieces, cover with plastic wrap and refrigerate at least 3 hours or overnight. When ready to prepare chicken, combine flour and next three ingredients in a shallow bowl and stir to combine. Remove chicken from the refrigerator and dredge in flour mixture a few pieces at a time. Heat canola oil in a large non-stick pan. Add chicken one piece at a time to prevent the hot oil from splattering. Cook chicken, turning frequently, until golden brown and crispy on the outside and no longer pink on the inside. Serve immediately – ENJOY!

4 U-10 Diver Scallops

2 Stalks white asparagus (blanched & cut into thin strips)

1 Granny Smith apple (peeled, seeded & cut into thin strips)

3 tbsp. Passion fruit juice

Juice from 1 lime

Lime zest from ½ lime

6 tbsp. plus 1 tbsp. virgin olive oil

1 shallot (chopped fine)

½ cup baby arugula

1 tbsp. fresh chervil

1 tbsp. fresh chives

Salt, Black Pepper, & White Pepper

INGREDIENTS

PREPARATION

Scallops:

Heat 1 tablespoon of olive oil in a small Teflon pan and heat over high heat. Salt & pepper the scallops on both sides and place them in the hot oil. Cook for 1 minute on each side then toss them in a 400 degree oven for

2 minutes.

Vinaigrette:

In a small bowl mix together the passion fruit juice, lime juice and lime zest along with salt and fresh ground

white pepper. Then add 6 tablespoons of olive oil and the chopped shallot. Next, mix the thin strips of white asparagus and the thin strips of granny smith apples

together in a small bowl; add some salt and fresh white pepper, chopped chervil and chopped chives.

Place a small amount of baby arugula on each plate then place the apple/asparagus mix on the top of the arugula. Remove the hot scallops from the oven and place them over the asparagus and apples and drizzle the passion

fruit vinaigrette over the scallops and salad.

Pan seared Diver scallops over white asparagus, young arugula and granny smith apples in a passion fruit vinaigrette.

Sean Kanan is an American actor best known for his role as Deacon Sharpe in the daytime drama The Bold and the Beautiful and subsequent spinoff, The Young and The Restless. What most people don’t know about him is that he is both funny and witty and is a dedicated family man, loving husband, and a self-taught chef who has mastered the Italian language.

Born in Cleveland, Ohio, Sean was raised in New Castle, Pennsylvania where his parents encouraged him to pursue a wide range of interests including acting and martial arts. He attended Boston University for two years before transferring to UCLA and completing a Bachelor of Arts degree in political science. After graduation, his martial arts skills came in handy when he landed a major role in Karate Kid III, starring as Ralph Macchio’s nemesis and performing all of his own stunts. Sean quickly followed with roles on the TV series produced by Francis Ford Coppola’s The Outsiders, and Oliver Stone’s Wild Palms, eventually moving on to network television with major roles in various soaps and guest appearances most recently on Happily Divorced and Desperate Housewives. He is also a recurring guest panelist on both FOX’s Red Eye and HLN’s Showbiz Tonight.

In addition to acting, Sean frequents the comedy club circuit and makes numerous appearances at the Hollywood Improv, The Laugh Factory and the HaHa, where he offers his perspective about his ten years in daytime television, his time living in Italy when he was a featured contestant on the Italian Dancing with the Stars, and getting beaten up in Karate Kid III. He also toured with the USO, entertaining our troops in such places as Bosnia and Kosovo.

Often cast as characters that are obnoxious and menacing, the real Sean Kanan is anything but the off-the-scale bad boy he always seems to play. Still unmistakably a guy’s guy, this newly married father of five has been heavily involved with the Anti-Defamation League (ADL) lobbying on the topics of anti-bullying and sexual orientation inclusion.

Sean has also authored a book called The Modern Gentleman: Cooking and Entertaining with Sean Kanan where he outlines how to create meaningful connections through the art of cooking and entertaining. Although packed full of diverse but easy to follow recipes, this publication is more than just a cookbook. Spiced Lamb Chops with Couscous and Sautéed Vegetables

Spiced Lamb ChopsINGREDIENTS

1/2 c. olive oil2 tsp. herbs de Provence1/4 tsp. cayenne pepper1/8 tsp. cinnamonPinch nutmeg (fresh ground if possible)1 tsp. paprika2 tsp. kosher salt3 tbs. balsamic vinegar3 tsp. garlic, minced2 tsp. chopped fresh parsley3-4 lbs. lamb chops

PREPARATION

Preheat oven to 350F. Line a baking sheet with aluminum foil and set aside. In a large bowl, add olive oil and next 9 ingredients. Whisk to combine. Add lamb chops and stir to coat all pieces evenly. Place lamb chops on the baking sheet and spoon remaining marinade over the top. Place in the oven and cook until chops are medium rare (10 minutes for small chops and 15-20 for larger chops), turning half way for even browning. Place lamb chops on a serving platter and allow to rest.

Couscous

INGREDIENTS

3 c. chicken broth1 ½ tbs. coconut oil1 tsp. garlic powder1 tsp. onion powder1 tsp. dried parsley2 c. couscous1 c. garbanzo beans15 oz. diced tomatoes½ c. artichokes½ c. black olives2 tbs. chopped fresh parsley¼ c. sliced almonds¼ c. currants, divided2 tsp. kosher salt, divided1/8 tsp. cinnamonPinch nutmeg (fresh ground if possible)¼ tsp. smoked paprika

PREPARATION

In a large stockpot, add chicken broth, coconut oil, garlic powder, onion powder and dried parsley. Cover and bring to a boil over medium-high heat. Add couscous and stir for 30 seconds. Add next 7 ingredients and half of the currants to the pot and stir to combine. Cover and turn off heat and allow to stand for 5-7 minutes or until liquid has evaporated. Keep covered until ready to use. Before serving, add remaining currants and season to taste with salt.

Sautéed VegetablesINGREDIENTS

2 tbs. coconut oil2/3 cup red onion, chopped10-12 asparagus stalks, chopped1/2 head napa cabbage, shredded6 oz. assorted mushrooms, sliced

PREPARATION

Add coconut oil to large sauté pan and heat over medium-high heat until oil is loose and coats the bottom of the pan. Reduce heat to medium and cook vegetables until crisp tender, about 5-7 minutes. Serve immediately.

he Vergo family knows a thing or two about feeding a hungry crowd in Memphis. Originally from Greece, Charles Vergo’s grandfather

settled in Memphis in the early part of the 20th century and eventually found success with a hot dog stand located on iconic Beale Street. By the

late 1940s Charles commandeered the basement of his father’s now-famous venue and put the coal shoot to good use. Originally used to smoke the

meats that stuffed his sandwiches and other causal fare of the day, Charles was inspired to give something new a try. With a case of ribs, some

inspiration from a Memphis legend, and a mix of seasonings, he rubbed the meat, threw it in the charcoal pit and gave birth to a legend –

the Memphis Dry Rub.

It all starts with good meat and a bit of charcoal. The Rendezvous only uses loin back ribs for their meatiness and cooks them from the inside out in their charcoal pit to keep them moist and

succulent. The whole process takes about an hour and a half, allowing them to feed a hungry crowd almost every night of the week (the

restaurant is closed on Sundays and Mondays) - the restaurant literally turns out TONS of ribs to their ravenous fans each week.

Now run by the kids, the restaurant still turns out mouth-watering ribs, chicken, sausage and coleslaw with the same

passion and enthusiasm that put Charles on the map over 50 years ago. With the help of Bobby Ellis, The Rendezvous’ kitchen manager of 44 years, the restaurant has grown from a modest 80 seats to a bustling (and always busy) 700 seat restaurant that feed locals and celebrities alike. Throughout

Health Beauty Life Publisher, Patrick Dockry, was happy to step into Dr. Tess’ Time machine at M Beauty, her

new office in Del Mar, California. In Patrick’s case, Dr. Tess addresses a few minor issues but mainly

focuses on maintenance and a little prevention. Patrick has some lines in select areas, a few sunspots on his forehead and slightly increased skin texture and pore size. He also wants to address the under-eye area, which shows some

slight bagging.

Round 1For the first set of procedures designed expressly for

Patrick’s needs, Dr. Tess adds some filler as needed to soften deeper lines, uses laser resurfacing on his face and

neck, and then applies Platelet Rich Plasma therapy or PRP to speed healing. First, a very effective topical numbing

treatment is applied to Patrick’s face and is allowed to take effect, which requires about 45-60 minutes to set in.

Once the numbing cream has taken effect, Dr. Tess in-jects Restylane, an FDA approved filler, which is laced with Lidocaine, a common local anesthetic. This filler is used to soften the line between Patrick’s brows as well as at the

laugh lines on either side of his mouth. Dr. Tess explains that filler is used for softening lines that show when a patient is not making an expression, where Botox is effective to sim-ply address lines and wrinkles that show when making an expression. Fillers also work as a scaffold for collagen over the top, making the results of the multi-step Time Machine

treatments very natural looking.

Dr. Tess moves on to the laser resurfacing treatments using the MiXto Pro CO2 Fractional Laser that can be used in

several modes and adjusted for various treatment intensities. This procedure, which can be used pretty much anywhere that needs rejuvenation, treats the effects of aging

like larger pores and sun damage as well as discoloration and texture changes in the skin. For guys, this is an

especially wonderful treatment, as the results look very natural, versus like they’ve had work done. In Patrick’s

case, this procedure is done on his face and neck.

With this fractionalized resurfacing, 20% of the skin surface is essentially vaporized which triggers the healing process

and new collagen production under the skin. Dr. Tess points out that with these new high tech machines,

dermatologists know exactly how deep into the skin they are going. In the past, the old lasers tended to go too deep even injuring pigment cells, in some cases resulting in color loss. For this reason, using lasers on darker skin was simply not done before but in the right hands, today it is possible provided the dermatologist has ample experience dealing

with pigmented skin.

Moving on to the PRP stage, any leftover numbing cream is removed from Patrick’s neck and face. Blood drawn earlier

in his procedure has been run through a centrifuge, separating the red blood cells from the plasma which

houses the platelets. This lighter platelet-rich fluid is drawn into a syringe and then applied topically onto Patrick’s face,

rubbing in slightly while observing an almost immediate soothing and anti-inflammatory reaction. The remainder is injected into key areas such as under the eyes, as well as

between his brows and at the laugh lines, where he had the filler added previously.

Dr. Tess says as she finishes with the PRP injections, “Platelet Rich Plasma therapy has actually been used in

other fields of medicine for years, using our own bodies to help speed the healing process. It’s only natural that it would

transition into the dermatology field.”

She continues, “With the laser resurfacing treatments, it’s like little microscopic wounds, so instead of waiting for Patrick’s own body to supply the platelet rich blood to

create collagen and to heal the wounds, we cheat a bit and concentrate the PRP on the areas that we have resurfaced or inject into areas that need added collagen. This will not only help him heal faster but will also boost the collagen that will be produced, thus improving any wrinkles, flat

spots or problem areas like under his eyes. This technology really is fantastic!”

Back in her offices for the second session only 10 days later, the swelling on Patrick’s face is down and his

resurfaced skin is simply glowing. The bags under his eyes and the few deeper lines are diminished considerably.

The next step involves using the Venus Freeze, a process used to boost the collagen production even more and sculpt around his jaw, chin and neckline. Using radio

frequency magnetic energy, Patrick’s skin is treated to a slight tightening, plumping and toning procedure to

accent his previous treatments and continue the accelerated growth of new collagen.

Next, some minor muscle relaxant injections are done in the same key areas that were applied with filler in the first

session. Citing that muscles become stronger with continued use, Dr. Tess explains that relaxing specific areas in the face help ward off the formation of deep lines. Taking a couple of weeks to see the full effect, this treatment lasts about four months and is suggested to be repeated two to three times a year to keep the treated lines from reforming.

Round 2

Thanks to the Time Machine by Dr. Tess, patients like Patrick show marked improvement on their eyelids,

under-eyes, cheeks, pores, wrinkles, discoloration, sagging, and overall quality of the skin. Seeing and feeling the results for himself, Patrick is one happy, younger looking camper!
