If one is a product of his environment, then Chef Craig Lieckfelt is a product
of Detroit. His passion for the culinary arts started at an early age. A stint at
a local pizza place sparked an interest that led to his studies at the Culinary
Institute of America. During this time, Craig was offered an externship at
Gotham Bar & Grill in New York, which he found to be the benchmark for
consistency and innovation. Upon graduation, Craig was offered a fellowship at
American Bounty, where he worked under the watchful eye of Theo Roe.
However, it was during his time at Jean Georges Restaurant at the Trump
International that Craig gained a better understanding of the philosophy that
a chef should carry through his direct interaction with Chef Jean Georges.
Craig quickly climbed the ranks to Sous Chef within one year. Craig has cooked
for Presidents, acclaimed chefs and celebrities, and has even contributed to
sources such as Food & Wine and Bon Appétit. After thirteen years of working
for others, he made the commitment to his personal ventures and started
developing a pop-up diner series known as Guns + Butter.
Guns + Butter was launched in Detroit in 2012. The idea was executed and
extremely well received by diners and the community abroad. As the business
model further developed, it became evident that inspiration was coming from
all forms of culture. Guns + Butter has operated in a nomadic nature over the
last 17 months, finding temporary residency in New York, Bombay, Detroit,
Los Angeles, Singapore and Dubai. This summer, Craig, along with partners
Anthony Curis and David Goldman, will give Guns + Butter a permanent place
to call home in the city where it was all conceived … Detroit.
As the lucky winner of this delicious and innovative dining experience, you
