Pistachio Crusted Rack of Lamb with Pan RoastedCarrots & Asparagus

Method:1 Preheat the oven to 200°C

2 Place the pistachios, breadcrumbs, salt & pepper into a foodprocessor and blitz until crumbly. Drizzle in a tablespoon ofolive oil and mix until well combined.

3 Season the lamb with salt & pepper

4 Warm a large skillet over high heat. When hot, add atablespoon of olive oil and add the lamb racks, cooking forabout 3 minutes on each side to brown.

5 Transfer the racks to a roasting pan with the fatty side up &spread a thin layer of mustard onto this side only.

6 Pat the pistachio mixture over the mustard coating. Press tomake sure it adheres to the lamb.

Preparation: ¾ hour

Cooking Time: 1 hour

Serves: 4

Ingredients:l 1 Double Rack of Lamb (approx 1.4kg) (4345)l ½ cup Shelled Pistachios (1495)l Wholegrain Mustard (3632)l 4 Medium Carrots (5262)l 1 Bunch of Asparagus (2235)l Small Bunch of Fresh Flat Leaf Parsley (9028)l Small Bunch of Fresh Oregano (4876)l Maris Piper Potatoes for mashing (7661)

From the Larder:l ½ cup Breadcrumbsl ¼ tsp Saltl ¼ tsp Black Pepperl 2 tbsp Olive Oill Butter & milk or cream for the mashed potato

7 Roast the lamb for about 20-25 minutes (medium-rare), takeit out of the oven and let it rest.

8 While the lamb is cooking, prepare the vegetables.

9 Slice each carrot lengthwise so you have thin long pieces.Pour a tablespoon of olive oil into the skillet and add in thecarrots, which should sizzle. Stir around to coat with oil andany lamb juices. Cook on a high heat uncovered, stirringoccasionally, until the carrots are nicely browned(10 minutes).

10 Add a little of the lamb juice to the carrots together with theasparagus, and chopped herbs. Remove from the heat &cover the pan with a lid. Leave for a further 5 - 8 minutes forthe asparagus to steam.

11 Serve with your favourite mashed potato.

Don’t forget the wine…Serve a smooth Chilean Cabernet Sauvignon, or a rich, full bodied Bordeaux withthis dish. On a beautiful, warm day, why not try a chilled Pinot Noir?
