ThereisnodoubtthattheHalalfoodindustryhasanimpactonthewaycompaniesviewtheirmarkets,especiallyinrecentyears.Halalproductsarepoisedtogrow.Growthinthissector,accordingtoFoodProcessingMagazine,“isoneofthesixhot-testtrendsinthefoodindustrythisyear.”AccordingtoBusinessWeek,Jan.2007,“59%ofMuslimadults intheU.S.haveacollegedegree,comparedwithonly28%ofallAmericanadults.Surveysshowthatmedianfamily incomeamongAmerica’sMuslimsexceedsthenationalfigureof$55,800.”A2004ZogbyInternationalpoll,reportsthatoneinthreeMuslimsearnsmorethan$75,000annually.ThefiguresreflectfavorablyastothepurchasingpowerofMuslimsinAmerica.WehadourownInternationalHalalFoodConferenceandMeetingfromApril21-April24. ThethemewasOpportunitiesintheWorldHalalFoodTrade.Andtothinkthatthismovementbeganonlyafewdecadesago,withafewwell-intentionedMuslimswhowerecommittedtoeatingZabiha,Halal.Whocouldhaveimaginedthat,oneday,companieswouldchangethewaytheymanufacturetheirproducts,inordertomeetHalalstandards?Butwecan’taskcompaniestomaketheirproductsHalal,onlyyoutheconsumercan.Halalcertificationwillguaranteethatitemssuchaschips,cheese,nachosoryourfavoritepizza,aretrulyHalal.Onanothernote,thereisnodearthofunscrupulousindividualswillingtofalselyclaimtheirproductsasHalal.IllinoisHalalFoodLaw,soontobeenforced,comestoourrescue.ItsimplementationwouldmakeitamisdemeanorinIllinois,toclaimHalalstatusforproductsthataren’tHalal.Asalways,ifyouhaveaquestionastowhatisHalalandwhatisn’t,dodropusaline.Welookforwardtohearingfromyou.

Itallbeganwithaspecialrequest,in1992,fromthe Malaysian government for Halal beef.Malaysian officialswere inCanada,meetingwithseveralbeefcompanies.Thegoal:findinga facility thatwouldbewilling to convert to
ZabihainordertosupplyHalalbeeftotheircountry.MGIBeefPackers,“amid-sizedplantthatwasownedandoperatedbyagroupof investors, includingtheMullerfamily,”wasoneofthecompaniesapproached.Afterseveral,lengthydiscussionswithleadersoftheIslamicfaithinCanadaandathoroughunderstandingofHalalprocedures,MGIagreedtoconvertitsentireslaughtertoZabiha.ThemoveopeneddoorstoHalalmarketsforbeef,notonlyinMalaysiabutinCanadaitself.Andsoonenough,MGIwasreceivingrequestsfromMuslimsacrosstheborder,inneighboringUSA.
“TherewasnonationalsupplierofauthenticHalal,ready-to-eatfoodinthemajorsupermarketsandtheHalalstores.Noburgers,nochickennuggets,”saysMr.SteveHahn.“AsMGIBeefPackers(whereMr.HahnhadbeenVice-President)weweresupplyingcutsofbeeftotheMuslimmarket.Theownersofthebutchershopswerecontinuallyrequestinghotdogs,beefburg-ers and beef stew, so weknewitwasamar-ket that wasn’t being serviced.”
Afterpurchasingsomesmallscaleequipment,MGI began to manu-factureand sell theseproducts under thelabel“Canada’sFinestHalal”. However, thecosts of marketing aconsumer brandedproductlinewerepro-hibitive.
It was then in Sept. 1999, that David Muller and Steve HahnlaunchedAlSafaHalal,withthehelpofoutsideinvestmentcapital.Today,AlSafaHalalproductsarewidelydistributedtomanygrocerystoresandfood-serviceoperationsthroughoutNorthAmerica.Theirproductlinehasgrowntoincludechicken,turkey,beef,fish,pizzaandfalafel.ItistheleadingprocessedHalalfoodbrandinmajorgrocerystoresincludingNoFrills,Albertsons,Loblaws,Wal-Mart,PriceChoppersFoodWarehouse,ShopRite,FoodBasicsandPathmark,tonameafew.
Thefirstproductswerehamburgersfollowedbychickenpatties,chickenstripsandchickennuggets.“Those
three have becomeour most popularproductswithMuslimfamiliesacrossNorthAmerica. The chil-dren, especially, loveourchickennuggets,”saysMr.Hahn.Severalnew products are inthelinefor2007.“Wearecurrentlyworkingon cookedmeatballsor kofta, abeef chaplikabab and a smokedbeefsausage.”

Withhealthyeatingnolongerjustatrendbutareal-ity,it’ssomethingAlSafaHalalpaysverycloseatten-tionto.Forinstance,theirveggiesamosa’saretransfat free. “We’renowenteringthefoodservicesectorandsellbreadedchickenpattiesinbulktouniversities,public
schoolsandprisonsystems,”saysMr.Hahn.TheseincludeUniversityofToronto,DetroitPublicSchoolSystemandtheNewYorkPrisonSystem.
“The single biggest reason for our success is thatwedon’ttakeshortcutswhenitcomestoHalalandIFANCA helps us maintain our strict standards.Chicken, beef, turkey are all hand-slaughtered byaMuslim.All theproceduresandingredientsmeetthe standards of Halal. Cheese on our pizza is Halal cheese.Intheindustrytoday,allthemeatisprocessedinmeatplantswherenon-Halalmeatisprocessed.AlSafaHalalhasproceduresandamonitoringsysteminplacewherethere’sneverachanceofnon-HalalmeetbeingprocessedatthesametimeasHalalmeat,”saysMr.Hahn.AlSafaHalalmeatisalsoHACCPregulated,adetailedqualitycontrolprocedure.“Thesourcesofmeatneverintersect,”saysMr.Hahn.
“Noneofourcatttlefeedhasanimalby-product.Ourcattleandourchickensaregrainfed.Canadianchick-ensarenotfedhormones.It’sillegalinCanadatogivehormonestopoultry.”
Futhermore,AlSafaHalalhasanopendoorpolicy.Anyonecanvisitanyfacilityatanytime,especiallytowitnesstheZabiha.Overtheyears,manyIslamicscholars,communityleaders,distributors,customersandconsumershavedoneso,andineverycaseAlSafaHalal has earned their approval.
“AnotherreasonforoursuccessisourcustomerbaseandthecontinuedsupportoftheMuslimcommunity.
Ourmarketshavegrowneveryyear.Welistenverycarefullytowhatthey’reaskingfor.”
“Oneofthehurdles,however,isbeingpartofanon-regulatedHalalmarket,”saysMr.Hahn.“AnyonecanlabelmeatasHalal,withnolegalconsequences.I’minfullsupportofstrictlawsthatensurestheintegrityofHalal.AnyoneintheHalalmeatbusinesstodaywilltellyouthatthereisagreatamountofcheating.”Mr.Hahnadvisesconsumerstolobbythegovernmenttoputenforceablelawsinplace.
“It’salsotheresponsibilityoforganizationssuchasIFANCAtoimprovetheindustry.TheMuslimcom-munityisn’tinagreementastowhatisHalalandwhatisn’t.WewillneveradvertiseourproductsasHalalifweusedmachineslaughter.Howcanyoureciteablessingovereachchicken,if160areslaughteredperminute?Iseethatasverytroubling.Formanyorga-nizations,Halalhasbecomeanopportunityforquickfinancialgain.Weareabusinessandwantfinancialgaintoobutnotatthecostofsomeone’sreligion.Werealizeit’s,firstandforemost,aboutsomeone’sreli-gion.AlSafaHalal.willalwaysbecommittedtohandslaughter,ZabihaHalal,”concludedMr.Hahn.

Dr. Shaikh Jaafar Al-Quaderi Dr.ShaikhJaafarAl-QuaderihasbeenaReligiousAdvisortoIFANCAsince1982.Dr.QuaderiisagraduateofNizamiaUniversityHyderabad,IndiaandarecipientofadoctoraldegreefromAl-AzharUniversity,Egyptin1970,whereheconductedresearchattheFacultyofShariah&Law,inUsulal-Fiqh:ResolutionsandPermissionsinIslam.HiscommandoftheArabiclanguageisoutstanding,asevi-dencedbyhis11yearsasanannounceratRadioCairo.Concurrently,hetaughtArabicattheAmericanUniversityandconductedsomeclassesattheIndianEmbassy.AftergraduatingfromNizamiaUniversity,Dr.QuaderiworkedatOsmaniaUniversity,Hyderabadasanedi-torofArabicmanuscriptsofhistoricsignificance.AfterimmigratingtotheUSAin1980,Dr.QuaderisettledinChicago,wherehetaughtArabicforthenextsixyears,firstatNorth-EasternUniversity,thenattheAmericanIslamicCollege.Since1986,hehasbeenbusyteachingArabicandIslamicStudiesandleadingthecongregationattwosuburbanIslamicCenters.Dr.QuaderiiswellversedincomparativeknowledgeofIslamicschoolsofthought.HoweverhepracticesIslam,according to theHanafiSchool.His commandof lan-guagesisexcellent,especiallyUrdu,ArabicandEnglish.Dr. Ahmad H. ImamMardinipreaches inEnglishaswell,andrecitestheQur’aninbothArabicandEnglish.Aprominentpresenceininter-faithefforts,ImamMardiniwasoneofsevenImamstomeetwithDetroitCardinalAdamJ.MaidaandDetroitAuxiliaryBishopFrancisR.Reiss, inthewakeofPopeBenedict’s comments on Islam in 2006. Hewas alsoinvolvedin interfaitheffortswithJewishleadersovertensionsthatescalatedfollowinglastsummer’sviolenceinPalestine.Aninfluentialleader,ImamMardiniisoftenaspeakeratvariousevents,includingthoseorganizedbytheMichiganHumanitiesCouncilandtheNewDetroitLeadershipSummitonRace.Ustaz Abdullah Fahim UstazFahimreceivedhisM.A.inReligiousStudiesfromtheNationalUniversityofMalaysia.HeservedastheChairmanoftheHALAL/HARAMCommitteeintheReligiousAffairsDeptartmentwiththePrimeMinisterofMalaysiaoffice’sfrom1991-1997.HewasgiventheBestOfficerAwardintheReligiousAffairsdepartmentbytheGovernmentofMalaysia.UstazFahimhasspokeninseveralconferences,bothnationally&internationally.HehasactedasreligiousconsultantforhisdepartmentwhileworkingunderthePrimeMinisterofMalaysia.In2002,hewasappointedasRegionalDirectorofIFANCASouthEastAsiawhichisbasedinKualaLumpur,Malaysia.

Halal Consumer Magazine reaches 40,000 Muslim families and organizations in the US and abroad. According to a 2004 Zogby International poll, one in three Muslim Americans earns more than $75,000 per year. Business Week magazine, (Jan. 2007) reports that “59% of Muslim adults in the U.S. have a college degree, compared with only 28% of all American adults. Surveys show that median family income among America’s Muslims exceeds the national figure of $55,800.”

worriedaboutthevariousfoodingredients,includingdairyingredientsusedinprocessedfoods.Mostoftheingredientsarenewtotheconsumersandthereislessinformationavailabletothepublic.
Dairyingredientsareveryvitalintoday’sfoodindus-try.Theseingredientscontributetotheflavor,color,appearance,body,andtextureofsauces,dressings,andpuddings.Insomeproducts,suchascheesesauceordips,dairyingredientsaretheprimaryingredientsin thebaseof theproduct. Whey:Thewateryliquidremainingafterthecurdisformedinthemanufactureofcheeseandfermentedoracidifieddairyproducts.Wheycanbeusedineitherincompoundingredientsorinfinishedproducts.ItisHalalonlyifnotmodifiedwithenzymes.Theadditionofenzymesintowheymakesitdoubtful(mashbooh)fromanIslamicdietarystandpoint.Thesourcesofenzymescouldbeanimal,microbialorplant.Thelat-tertwosourcesareacceptedbymostHalalcertifyingorganizations.Rennetisanextractfromthestomachofacalf,kid,orlamb,andusedinthecoagulationofmilkduringcheesemaking(Chandan1997).ThemajorityofwheynowproducedisHalalbecauseabout80%ofwhey,intheUS,isfrommilkcurdledwithmicrobialrennet.
WheyProteinConcentrates(WPC):WPCsareproductsderivedfromwheybyremovalofmineralsandlac-tose.Onadrybasis,theproteinconcentratecontainsaminimumof25%protein.Wheyproteinisolate(WPI)containsatleast92%protein.
AWPCof34%proteiniscommonlyusedasastabi-lizer inyogurt,bakerymixes,dietetic foods, infantfoods,andconfections.Itswater-bindingability,fat-likemouthfeel,andgelationpropertyareparticularlyusefulintheseproducts.
AWPCof50or80%proteinisespeciallysuitedforuseinnutritionaldrinks,soups,bakeryproducts,meat,dietary foods, and economical egg-white replace-mentinfoodformulation.Again,WPCmightcontainenzymes,hencefallintoMashboohclassification.
Lactose:Lactoseiscommonlyknownasmilksugar.Itiscomposedofglucoseandgalactose.Applicationsincludeinfantformula,healthfoods,dieteticformula-tions,drymixes,confections,drinks,candy,fermenta-tionsubstrate,anddairybeverages.Lactoseasasugarischaracterizedbylowsolubilityandlowsweetness.Itimpartsadesirablebrowncolortobakeryitemsandenhancesflavorinbeverages.Itisausefulcarrierofintensesweetenersandpharmaceuticalpreparations.Sofar,lactoseseemsHalalbutthatisnotalwaystrue.ThereasonforthisstatementisbecauselactosemightcontainenzymeswhichmakesitMashbooh.
Casein and Caseinates: These ingredients furnishemulsification, whipping, and texture-modifyingattributes.Sodiumcaseinateaidsintheformationofastableemulsionbylocatingitselfattheinterfaceofoilandwater.Caseinisthemajorproteininmilk.Itisusedinthemanufactureofmostcheeses.ItmaybeHalalorharam,dependingupontheenzymeusedto produce it (http://www.ifanca.org/glossary/).
