TURKEYS THE CHOICE IS YOURSProper old fashioned birds. Broad Breasted Bronze reared on a natural diet, picking out grass and grubs from the Copas cherry orchards of Berkshire, making a really succulent roast.

Rinse Gammon in cold water, Pour inch of water into tin, Place gammon on a rack in tin, Loosely cover gammon with foil,Bake @180oC for 45 mins per kilo, Remove from the oven and when cool enough remove skin but not fat,Score fat in a criss-cross pattern,Cover with the marinade of choice (marmalade, honey) and place in a hot oven to glaze for 20 minutes.
