FROM THE COFFEE COLLECTION The Santa Sofia farm is owned by Pablo José Ferrigno Figueroa. Of Italian decent, he is a third generation coffee farmer. Coffee had always been part of the culture of his family; while his grandfather had an export company in addition to the family farms, coffee was his focus. Back then, the farms were at low altitude and produced mediocre grade coffee. When Pablo decided to pursue his own coffee endeavor, top quality was his goal and it led him to a new producing area in Alta Verapaz in Coban. He decided to buy some land in the small town of Tactic. The climate in Tactic is unusually cold and other farmers and family thought he was a little crazy. In 1991 he carried a bag of seed to the farm and Santa Sofia was born. Coincidentally his daughter “Sofia” was born that year as well. His dream was realized. Even today, while coffees from Coban have gained acclaim, Finca Santa Sofia is still the only farm in this small micro-region in Alta Verapaz. PROCESSING NOTES This coffee is fully washed, with a fermenta- tion period up to 48 hours. It is a blend of a few different cultivars, mostly caturra and catuaí. Although the goal is to sun dry all coffee on patios, due to unpredictable weather patterns and the cooler climate there are times when mechanical driers, or “guardiolas,” are used.
