The General GSE-109 (nine inch), GSE-110 (ten inch)and GSE-112 (twelve inch) slicers are heavy duty pre-cision crafted, versatile units. These all-purpose slicersuse an all stainless steel drive system that provides foryears of corrosion free operation. The heat treatedcarbon steel knife was designed for years of use.

Each slicer comes standard with a stainless steel drivesystem, On board knife sharpener, safety interlockswitch, easy to use controls, smooth rounded cornersand edges and a anti-microbrial finish. The power con-trol switch has a moisture resistant protective coveringand all units come equipped with a motor overloadswitch to protect the motor from amperage overload.

To help assure you receive your GENERAL prod-uct in the best possible condition, General hasinstalled a “G-Shock” device many of our products.Designed to indicate if there was any unusualshock during transportation The LegacyCompanies wants to be assured your productarrives safely without damage.

When you first receive your new GENERAL prod-uct and before opening the box, you should firstinspect the Drop N Tell “G-Shock” device locatedon the outside of the box near the packing slip.Review the adjacent pictures and determine whichpicture identifies your device.

Figure 1 does not have an exposed blue chevronindicating your mixer has not sustained unusualshock while being delivered to you from your deal-er or distributor and you may continue to the sec-tion marked UNPACKING.

Figure 2 has an exposed blue chevron indicatingyour mixer may have been subject to unusualshock during transportation. Although Figure 2 isnot an indicator of actual damage, it does indicatethat there may have been an issue during the ship-

ping process. If your “G-Shock” device looks like this,you should immediately notify your shipper, dealer ordistributor. You are also encouraged to notify TechnicalService at The Legacy Companies at 1-877-368-2797.

1. Place the unit on a sturdy, level table or othersolid work surface.

CAUTIONWHEN USING CHEMICAL CLEANERS, BE SURETHEY ARE SAFE TO USE ON CAST ALUMINUMSURFACES. SOME CLEANERS WILL TARNISH ANDPIT THE SURFACE

When placing the unit into service, pay attention to thefollowing guidelines:

• Assure the appliance is placed upon a solid, sta-ble platform.

• Do not block or cover any openings on your GSEslicer.

• Assure the chosen installation location is solidand level.

• Do not use extention cords

• Install the slicer in a well-lighted area with ade-quate unobstructed space to allow free move-ment by the operator..

1. Carefully open the box. It should contain the fol-lowing:• GSE-109, GSE-110 or GSE-112 Slicer,• Warranty Packet,• Operation Manual,• Plexi-Gard

2. Remove information packet.

3. Remove all packing materials and protective cov-erings from the slicer.

3. Install Plexi-Gard

NOTE: Do not use a dripping wet cloth. Wring outbefore use.

4. Wash all removable parts in soap and water.Rinse with clean hot water and allow to air dry.

5. Wipe all surfaces of the unit with a hot dampcloth and a mild detergent.

6. Re-install all removed parts.

• Do not allow the cord to hang over edge of tableor counter.

• Before attaching any accessories or attachmentsto the slicer, refer to the operating instructions.

• Tighten the black thumb screw to secure the knifesharpener located at the top of the slicer.

• Tighten the black thumb screw to secure the knifecover, located on the rear of the slicer directlybehind the knife

• Tighten the large black hand screw locate on thefront slide to secure the product pusher arm.

• Turn the depth gage to assure free movement ofthe product tray.

2. Ensure that the line voltage corresponds to thestated voltage on the mixer specification labeland power cord warning tag.

3. Connect the unit to the power supply.

NOTE: Do not use extension cords with this appli-ance.

NOTE: Do not conncet without an approved earthground.

OPERATION

WARNINGTHE WEARING OF LOOSE CLOTHING OR HANGINGJEWELRY CAN BECOME CAUGHT IN THE CAR-RIAGE AND KNIFE AND CAN CAUSE SEVERE BOD-ILY INJURY.

OPERATION - PREP FOR USE

1. Set the slicer on a stable platform.

2. Be sure all shipping materials have been com-pletely removed.

3. Un-screw the knfe sharpener assembly located atthe top of the slicer knife by loosening the blackknob/screw behind it. Gently lift and remove thesharpener.

NOTE: With the knife sharpener removed a portionof the knife will be exposed

4 Located at the center rear of the slicer in theknife cover lock. Turn the knob counter clock-wise until it slides free from the machine.

5. Remove the locking rod about 2 inches from itshousing then push it back in until it stops. Thecover over the knife will move away from the diskallowing you to carefully remove it.

6. Un-screw the large black knob located under thecarriage at the front of the machine.

NOTE: The GSE-110 and 112 have a locking screwlocated just below the knob. It must beturned counter clockwise to loosen.

CAUTIONUSE EXTREME CAUTION WHEN CLEANING ASLICER AS THERE ARE AREAS THAT ARE VERYSHARP AND EXPOSED DURING THE CLEANINGPROCESS.

7. Wearing protective gloves, cup the carriageassembly and lift in an upward motion to removeit from its mount.

8. Carefully take all of the removed parts to the sinkto be washed in a warm soapy solution, sanitized,then set to air dry.

9. Using a warm soapy solution and a clean handcloth, wipe all of the machine surface useingextra care when cleaning the knife.

NOTE: Use extra care when cleaning the surface ofthe slicer as the knife has a very sharp edge.

10. Once washed, use an new cloth and rinse theslicer with a sanitizing solution and let air dry.

11. After the slicer dries, reinstall all of the removedparts in the reverse order in which they wereremoved.

1. Be sure the table is secure and the slicer doesnot move.

2. Check the knife sharpener to assure it is in the“normal operating position” and locked in place byturning the black locking knob in a clock wiserotation until it stops

3. Check the carriage lock and assure it is lockedby turning it clockwise until it stops.

4. Verify the knife cover is secured by turning theknob clockwise until it stops.

CAUTIONUSE CARE WHEN REMOVING PACKING MATERI-ALS SUCH AS TAPE AND BAGS. SOME EDGESARE SHARP AND CAN CAUSE INJURY.

WARNINGBEFORE PROCEDING TO STEP (3), BE SURE THEUNIT IS UNPLUGGED. FAILURE TO DO SO COULDCAUSE SEVERE INJURY.

OPERATION (CONTINUED)

1. Un-plug the slicer.

2. Set the slicing depth dial to zero.

NOTE: Setting the slicing depth to zero covers theleading edge of the knife to protect againstharm.

3. Remove the knife sharpener, knife cover, andcarriage assembly as described on page 9“OPERATING INSTRUCTIONS” and wash in thesink using warm soapy water to wash, a warmsanitizing solution to rinse and let stand to air dry.

NOTE: Never use an abrasive pad or cleaner towash the slicer or its parts. Doing so willdamage the finish.

4. Using a clean warm soapy cloth, wash all sur-faces of the slicer taking special care whencleaning the knife.

5. Once the slicer has been washed, use a cleansoft dry cloth to towel dry the machine.

5. Verify the cut thickness dial located on the frontleft of the slicer turns freely and moves the guideplate accordingly.

6. Loosen the guide plate locking screws locatedadjecent to the knife sharpening tool and backthe lock screw away from the plate.

7. Adjust the cut thickness to your desired setting.

8. Adjust the guide plate lock to rest against theplate and secure by tightening the locking nut onthe screw.

NOTE: The guide plate locking screw is used toassure a consistant cut depth each time youslice your product.

9. Plug the slicer in to a grounded 120VAC plug.

10. Before applying product, be sure all lockingscrews are secure.

11. Apply product to the cutting plate by sliding thepress plate away from the guide plate.

12. Once the product to be sliced is in the carriage,lower the press plate against the product.

13. Turn the slicer on by pressing the white squarepower button with the horizontal line through itlocated near the depth dial on the left side of theslicer.

SLICING PRODUCT

1. With your right hand. Hold the black handle onthe press plate and push in a forward motion withan easy even motion.

2. With your left hand, place behind the carriage tocatch the product after it has been cut.

3. When you are done slicing the product, be sureto pull the carriage back so the product is off theknife.

4. Turn off the slicer by pressing the black buttonwith the white circle. This is a momentary buttonand will sring out when you release it.

5. When the knife stops, remove the remaining unsliced product by lifting the press plate away fromthe product, then removing the product.

6. RInse the slicer with warm sanitizing solution,again taking care on and around the knife. the letthe machine air dry.

7. Once dry, reassemble the slicer with the partscleaned at the sink.

8. Leave the unit unplugged until its next use.

CLEANING (CONTINUED)

KNIFE:

1. After each use and after the slicer has beencleaned and sanitized, With the cutting surfacewith a liquid vegetable oil (seasoning). This pre-vents pitting and any possibility of corrosion.

2. Sharpen the knife daily to remove and chippingthat may have occurred and to assure a sharpclean edge every time. (Refer to the knife sharen-ing information found latr in this section)

CARRIAGE GUIDE:

1. Carefully lift the front of the machine up so theslicer rests on its back side exposing the under-side of the carriage and slide bar.

2. Push the carriage to one side and with a cleandry towel wipe away the dirt and grease that mayhave accumulated. Push the carriage to theopposite side and repeat the process.

3. Using a food grade grease, smear a liberalamount onto the guide bar.

4. Slide the guide back and forth to work the greaseevenly onto the guide bar.

5. Lubricate weekly for optimum trouble free opera-tion.

PRESSER AXEL LUBRICATION:

1. Clean the pusher slide bar by first wiping theexposed portion with a clean dry cloth. Then liftthe pusher to the opposite end and repeat thecleaning to the lower portion of the bar.

2. Using liquid cooking oil, wipe a libral amount ontothe bar, then raise oan lower the pusher to evenlydistribute the oil along the guide bar.

3. The presser guide bar can be lubricated daily foroptimal use.

SHARPENER LUBRICATION:

1. Remove the sharpener from its mounted positionby loosening the black locking knob.

2. Using a clean dry towel, clean the guide bar ofany debris.

3. Apply cooking oil to the guide bar and re-assem-ble.

4. This operation can be done daily or weeklydepending on usage.

THICKNESS DIAL LUBRICATION:

1. With the slicer placed carefully on its side, locatethe thickness dial on the left sideof the machine.

2. Turn the dial to its maximum setting. Using aclean dry cloth, wipe away and dirt and debris.Turn the dial to its minimum setting and repeat.

3. Using a food grade grease, apply a liberalamount into the channel of the dial.

4. Turn the dial to its maximum position and then toits lowest to work the grease into the cam.

5. This operation can be done weekly or as needed

KNIFE SHARPENING:

1. loosen the sharpener locking screw on the back,bottom of the knife sharpener.

2. Lift the sharpener about 2 inches and rotate it180 degrees.

NOTE: Once turned the sharening stones will beover the blade. Use care when handling.

3. Secure the sharpener by tightening the lockingscrew.

4. With the slicer off, press the rear button (facingaway from the slicer) gently and verify it is flushwith the blade. If no, the loosen the lockingscrew to adjust.

5. Once the sharpening stones are flush with theblade, secure the sharpener by tightenng.

MAINTENANCE

8. Press the front silver button gently until you hearthe stone against the blade. Hold for 3 to 5 sec-onds to clean the oposite side of the knife ofburrs created from the sharpening process.

9. Once sharp, turn off the slicer and unplug. With aclean dry towel, carefully wipe the blade clean ofany remaing debris. Clean with a warm soapysolution, wipe, then using a warm sanitizing solu-tion wipe the blade again.

10. Once dry, apply liquid vegatable iol to the cuttingedge to season the steel against pitting and cor-rosion.

11. This operation can be performed as needed.

6. Turn the machine on and press the rear silverbutton on the sharpener lightly until you hear thestone against the blade.

7. Hold the button in for at least one minute thenrelease
