Turn Blue Diamond Sizzle Griddle onto medium- medium high. Divide ground beef into 4 burgers. Put 2 bacon strips on each patty and wrap around. Once indicator light (green) comes on, put the burgers on and cook 5- 10 minutes depending on preferred doneness. Using the hinge button, open up the plate and cook the buns, and lay cheese on burgers if that is your preference. Plate the buns with your toppings.

ASPARAGUS STUFFEDCHICKEN BREASTHeat up Blue Diamond Sizzle Griddle to medium. Lay out thin cut chicken breasts. Top chicken with cheese slices. Put 5 trimmed asparagus in the middle of chicken. Mix breadcrumbs, paprika, Italian spices on plate. Whisk egg, S&P with fork, pour on plate. Roll up chicken breast, dip in egg mixture then breadcrumb mixture. Put in Blue Diamond Sizzle Griddle, close lid and cook for 10-15 minutes or until juices run clear.

Heat up Diamond Sizzle Griddle to medium. Lay your soft tortilla and spread a layer of refried beans on half the tortilla. Add your choose of finely cut vegetables- red, yellow peppers etc, cooked meat, cheese. Fold the tortilla in half, put on the Blue Diamond Sizzle Griddle, close and cook for approx. 3 minutes (check for preferred doneness).

Delicious Toasty sandwiches

Heat up Diamond Sizzle Griddle to medium. Put a light cover of spreadable butter on the outside of the sandwich. Pack the sandwich with your selected ingredients. Put sandwich in the Blue Diamond Sizzle Griddle, close the lid and cook for 3-5 minutes. Keep checking on it, as different breads and thicknesses cook at different speeds. Sometimes the high temperature gives the best crunch if that is your preference. (If you are making a thicker sandwich like a Cuban sandwich or French bread there is no need to butter the outside of the bread.)

There are so many versions you can do with this:

Basic cheese toasty- your choose of cheese/sAvocado, tomato and goat cheeseHam, pesto, provoloneChunky tuna- 1 can tuna (drained), 2 tbsp mayonnaise (real mayonnaise), 2 celery sticks finely chopped, 1/4 red onion finely chopped. Cajun spicy chicken thighs

Heat the Blue Diamond Sizzle Griddle to medium. Liberally cover the chicken thighs with your choice of spice. Lay the chicken thighs on the griddle. Cook 15-20 minutes, check for doneness when the juices run clear.

Steak, pepper and onion kebabs

4 chicken thighs- skin onChoice of seasoning- Cajun spices, Italian herbs, garlic powder etc.

Heat the Blue Diamond Sizzle Griddle to med-high. In a bowl, mix together chopped steak, peppers, onions, olive oil, balsamic, Italian herbs, salt and pepper. Put on skewers. Cook on griddle approx. 7-10 minutes (check on doneness depending on preference).

Croissant French Toastwith RaspberriesHeat the Blue Diamond Sizzle Griddle medium (for a lighter bake) or high (for a browner) bake. Mix together whisked egg, milk, cinnamon and vanilla essence in a bowl. Put croissant halves in mixture to lightly coat. Put on Blue Diamond Sizzle Griddle, close lid and cook for approx. 3 minutes. Check on color after 2-3 minutes. Serve with fresh raspberries (or seasonal fruit) and whipped cream.

Amazing Hash Browns

Heat Blue Diamond Sizzle Griddle to high. With Sizzle griddle open flat put one half of butter on each side. Put all the hash brown on one side, sprinkle crushed red pepper, salt and pepper on top of hash browns. Close lid and cook for approx. 5 minutes. Check for doneness, if crunchy on the outside but still not done on the inside turn the Sizzle Griddle down to medium low and cook for another 5 minutes. You can then open up the griddle to lay flat and cook the eggs and bacon slices on the side of the griddle that doesn’t have the hash browns, they will only take 3-4 minutes.

Use 1 package of store bought hash browns or grate 2-3 potatoes and squeeze out excess liquid in paper towels.Dash of crushed red pepper

Flavorful Steak

The simplest recipe for making juicy delicious steak. Heat the Blue Diamond Sizzle Griddle up to high. Put steak on high with the lid closed for about 10 minutes, this should get you a medium steak, but check as you go to see if you need a little longer or shorter time, every steak is different.

Yummy Crab Cakes

For the ingredients from scratch, mix them all together, let them rest. Heat the Blue Diamond Sizzle Griddle up to med-high. Form the mixture into a ball, about the size of a hamburger patty. Put in the Blue Diamond. Close the lid, cook for 5-7 minutes, check on doneness at 5 minutes. Serve with fresh lettuce and tartare.

1 pound of ready made lump crabmeat crabcakes (found in most supermarkets)

Zucchini Fritters

Heat Blue Diamond Sizzle Griddle med-high. Once the zucchini is squeezed dry, put in a bowl and add all the other ingredients. Stir until blended. Scoop 4 fritters onto open griddle and cook for 3-4 minutes until golden brown. Flip and cook another 1-2 minutes. Serve with your favorite sauce- sour cream, marinara (warmed up), fresh salsa or a simple squeeze of lemon.

Quick Perfect Pancakes

Heat Blue Diamond Sizzle Griddle to medium. Whisk all ingredients together starting with dry ingredients then adding wet ingredients.With griddle open, use a 1/4 size cup to put pancakes on the griddle. Once brown and bubbling, turn over and cook for another couple of minutes.

Salmon Fillet with pesto and beans

Heat Blue Diamond Sizzle Griddle up to high. Keep it open flat. Put skin down side first and let it sizzle on the griddle. You will always know when salmon is done on one side because it won’t stick to the griddle anymore. When you are looking at the salmon, once the color changes to a light pink halfway up the salmon, flip the salmon. At this point put on the green beans on the other griddle plate, drizzle with a dash of olive oil and season with salt and pepper. After 2-3 minutes, check your salmon is done to your liking (should easily flake but not be dried out). Take the salmon off the griddle and let it rest, squeeze lemon juice over it. Toss the beans for another minute or so. Taste to see they are cooked but still crunchy.

Sausages, onions and peppers

Heat the Blue Diamond Sizzle griddle to medium. Place the sausages on the grill, close the lid and cook for 7-8 minutes until seared and heated through. Open up the plates so the grill lays flat, put the sliced peppers and onions on the plate and toss randomly for 4-5 minutes. This quick meal is always great served on a quick cook flavorful packet of rice or even in a hotdog bun for the kids.

Hot Dogs

Put grill attachments on Blue Diamond Sizzle Griddle. Heat Blue Diamond Sizzle Griddle to high. Close the lid and cook the hot dogs for 3 minutes. When you see the grill lines the hot dog is cooked through, open up the grill and place your open buns on the grill for 1-2 minutes to get the grill lines. Take the buns and hot dogs off the grill and top with your favorite toppings.

Turkey Burger

Heat Blue Diamond Sizzle Griddle to medium- with grill plate plates. Mix steak seasoning with ground turkey and form into 4 patties. Once indicator light (green) comes on, put the turkey burgers on and cook 5-10 minutes depending on preferred doneness. Using the hinge button, open up the plate and cook the buns, and lay cheese. Plate with preferred toppings.

The Perfect Grilled Cheese

Heat Blue Diamond Sizzle Griddle to medium- with grill plate plates. Assemble bread and cheese how you like. Close the lid and let grilled cheese cook for 5-7 minutes until the cheese has melted and the bread is crisp. Remove sandwich from Sizzle Griddle and let sit for a few minutes before serving to allow cheese to thicken.

Cuban Sandwich

Heat Blue Diamond Sizzle Griddle to medium- with grill plate plates. Spread the outside of rolls/buns with butter. Spread the inside of each with mustard and place cheese, ham, pork, pickles on the bottom of each roll/bun. Once indicator light (green) comes on, put the Cuban Sandwiches on and cook 5-10 minutes depending on preferred doneness. Serve warm.

Garlic Lamb Chops

Mix garlic, pepper, olive oil in a bowl and marinate all sides of the lamb chops, let sit. Heat Blue Diamond Sizzle Griddle to high - with grill plate plates. Put salt on each side of lamb chops before placing on grill plates and set Sizzle Griddle to SEAR. Place lambchops on lower plate and adjust top plate so it closes barely resting on the top of lamb chops. Grill for two minutes on SEAR and then about 4-6 minutes on medium heat.

Spicy Grilled Flank Steak

Blend salt, paprika, thyme, marjoram, garlic, onion, pepper, cayenne, white pepper for about 30 seconds to create the rub Remove any fat from steak and score the meat in a cross-hatch pattern (don’t cut through more than a 1/4 inch). Place the rub on both sides of steak and let sit for at least 15 minutes. Heat Blue Diamond Sizzle Griddle to high - with grill plate plates. Grill for 6-10 minutes on each side or until personal preference. Let stand for 10 minutes before slicing into thin, diagonal slices.

Teriyaki Grilled Chicken

Mix marinade – soy, sherry, vinegar, brown sugar with a whisk. Remove any fat and add chicken into marinate bowl – let sit for 30 minutes. Heat Blue Diamond Sizzle Griddle to high - with grill plate plates. Drain chicken and add the marinade to a saucepan, bring to a boil and save for when chicken is cooked. Put chicken “skin” side down, evenly spaced out on grill plates and grill 5-6 minutes on each side. Transfer to warm plate and pour the simmered reserved sauce over the chicken. Serve with steamed rice.

Brownie Waffles

Change out the plates for the waffle plates on the Blue Diamond Sizzle Griddle. Heat to medium. Mix the store bought brownie mix according to instructions. Using a tablespoon gently lay onto the waffle plates without over filling. Close the lid and cook for 2-3 minutes. Serve with whipped cream, ice-cream, fresh fruit etc.

The simplest way to make a simple, exciting variety to regular waffles:

Traditional Waffle sandwich with bacon and cheese

Heat Blue Diamond Sizzle Griddle to medium- with regular plate plates. Cook the 8 strips bacon. Once cooled use a towel to help you remove the regular plates (or you could use previously cooked bacon and just crumble). Once cooled, put on the waffle plates.Heat the waffle plates to medium. Mix the waffle mixture according to the box. With a spoon lay the mixture into the waffle plates without over filling. Cook for 2-3 minutes, open up and place in sliced cheese and cooked bacon. Close again and cook for another minute.
