The Health AspectReal food for real people. Good for every body. Incredible edible. The “basic four” food groups. And the question almost every vegetarian is most tired of answering: Where do you get your protein?

Let’s face it folks, agribusiness is trying to brainwash us all. And they’ve succeeded! Most women I know are convinced that the best way to prevent osteoporosis is to consume dairy products, but the well-documented fact is quite the opposite. The excess protein contained in meat and dairy products actually prevents calcium absorption by the body and is a significant risk factor for osteoporosis.

That’s right, I said excess protein. Most Americans eat too much protein. Most American vegetarians eat 50% more protein than they need. So protein really is not an issue at all. Even Frances Moore Lappe, who popularized the concept of protein complementarity in 1971, has long since admitted that “getting enough protein” is simply not an issue.

I care about protecting the rainforests.

I care about preventing the suffering

preventing world hunger. I care about

reducing energy consumption. I care

about the air we breathe, and the water

that flows in rivers. I care about my own

So what are the issues? How about heart disease and strokes, which are responsible for a whopping 50% of U.S. deaths. Data from the China Health Project suggests that about 95% of these deaths could be cut by vegetarian diets. Likewise, 80% of breast cancer deaths among women could be prevented. Wanna lower your cholesterol? It’s easy; just stop eating animal fat.

“I think in the next ten or twenty years, we’ll have evidence (showing that a vegetarian diet is superior) that is as strong as the evidence that cigarette smoking causes lung cancer. In my view, it’s plenty strong now.” T. Colin Campbell, Ph.D., director of the China Health Project.

To continue the smoking analogy a bit further, I would like to submit that meat-based diets affect everyone in much the same way that second-hand smoke can affect the health of a nonsmoker. This

is because of the disastrous effects that the meat industry has on the environment.

Environmental AspectMost people don’t think of diet as an environmental issue, but it

is! Meat production is incredibly inefficient. By growing grain which

is fed to livestock which is fed to humans, you end up with much less food

than you would have by feeding grain and other plant products directly to humans. Annually, an acre of land can produce 40,000 pounds of potatoes, 50,000 pounds of tomatoes, or a paltry 250 pounds of beef.If Americans would reduce meat consumption by just 10%, enough grain would be saved to feed the 60,000,000 people who die of hunger each year. It’s a damn shame that people in third-world countries are going hungry while their land is being used to feed meat to rich people in other countries.The grain used for livestock feed puts a heavy burden on the land and is responsible for most topsoil depletion. Topsoil depletion is a serious problem in today’s world, and it’s also historically responsible for the demise of many great civilizations. Will we be next?

Hey (I hear you cry), if meat production uses so many resources, why isn’t it more expensive? The answer lies in tax subsidies (including water supply) to the agriculture industry.

You don’t really pay for meat at the grocery store–we all pay for it when we pay our taxes. (And we pay for it again in the form of medical care for heart disease patients.) It has been estimated that hamburger meat would cost $35 per pound without subsidies.

I could get on a similar soapbox regarding gasoline products, but perhaps it’s all the same thing: “American feed for livestock takes so much energy to grow counting fuel for farm machinery and for making fertilizers and pesticides–that it might as well be a petroleum byproduct,” says Alan Durning of Worldwatch Institute of Animal suffering.

Everyone is aware that animals are slaughtered for meat. But this is only the end of the suffering for food animals. In today’s commercial “farms,” these animals are raised in inhumane conditions from the time they are born. Arguably, the situation is even worse for dairy cows and egg-laying chickens, since they are abused for a longer time before being put out of their misery. I’ve got more to say on this subject, but I haven’t finished writing it yet.

What I EatI am a strict vegetarian, which means that I eat no animal flesh of any kind, not even chicken or fish. As you may know, a vegan is even stricter than a vegetarian. Vegans avoid the use of all animal products, including eggs, cheese, leather, and so on. I consider myself to be a “quasi-vegan,” meaning that I usually avoid these products, but I am not always perfect. Some time ago, I posted a little essay on this topic to the San Francisco bay area vegetarian mailing list, and since I got some positive responses to it I am reproducing it here:

My personal choices make sense to me, because ten “quasi-vegans” would consume fewer animal products than one conventional ovo-lacto vegetarian, and because (let’s face it) I’m somewhat lazy and being a quasi-vegan is much easier than being a pure vegan. I also find that relaxing my standards a bit has made me feel much less confrontational when I go out, which is in keeping with my nonviolent philosophy.

By the way, I suppose one could define “quasi-vegetarian” in a similar manner to my quasi-vegan. In fact, that’s how I started down the road to vegetarianism... preferring to eat very little meat, but not being completely vegetarian.

Anyway, I hope nothing I’ve said is construed as a put-down of anyone whose choices are different from my own. I think it’s all a matter of degree–IMHO, the fewer animal products of any kind we all eat, the better. And this is true regardless of one’s motivation–environment, reducing animal suffering, health, whatever. But for most people, there is a trade-off between ideals, preferences, and convenience, and it seems that everyone ends up drawing the line somewhere. And for some, the line is much fuzzier than for others.

College students’ diets are often depicted by cheap

junk food snacks and sugary substitues.

ORGANICA natural and organic food diet should be at the center of a proper nutrition program. Have you ever heard the phrase– you are what you eat? By eating natural and organic foods, and consuming lots of fruits and vegetables through juicing, you can eat your way to good health. Now that is a diet I can live with!

The natural and organic food diet is not a temporary fad. It is a lifestyle change that promotes good health and long life. Because the natural and organic food diet is more likely to provide the nutrition your body needs and also has a cleansing effect on your body, it will allow your body to heal itself. By eliminating the foods that introduce or create toxins in your body, and by eating foods that are natural and organic, you will achieve good health. The premise of the natural and organic food diet is to avoid foods that contain artificial sweeteners and other additives. Since these

food additives do not naturally occur in nature and are created by man, the human body does not process them correctly. It causes the body to build up toxins and generally leads to bad health. Similarly, use of non-naturally occurring fats and oils can also lead to compromised health. Also find out why ultra-low fat diets may actually be hurting your health and why some fats are essential to your health.

College students come to campus having heard the legend of the Freshman 15. Some brush off the warnings. But for others, it’s not that easy. Many college freshmen let the fear of the 15 come to the forefront of their minds, affecting their diet and exercise habits, and causing many to lose as many as 10 pounds their first year on campus. Many students turn to exercise to keep off any extra pounds. Some students become obsessed with fending off the Freshman 15 and make extreme decisions about eating or physical activity. Those decisions may cause disordered eating. Maintaining a healthy lifestyle while in college is difficult.

THE COLLEGE WAY

Have you ever heard the phrase, “you are what you eat?”

The Western pattern diet (also called Western dietary pattern or the meat-sweet diet) is a dietary habit chosen by many people in developed countries, and increasingly in developing countries, characterized by high intakes of red meat, sugary desserts, high fat, and refined grains. It also typically contains high-fat dairy products, high-sugar drinks, and eggs.

The term is used to describe this pattern of diet in medical literature, regardless of where the diet is found, and is contrasted with diets which have higher levels of fruits, vegetables, poultry and/or fish. The “Standard American Diet” (S.A.D.) is a similar term, specifically used to describe the stereotypical diet of Americans.

What we eat affects how we feel. Food should make us feel good. It tastes great and nourishes our bodies. When eaten in too little or in excessive quantities, however, our physical appearance can be altered, which can create negative feelings toward food.

By learning how to make better choices, you might be able to control compulsive eating, binging, and gaining weight. In addition to better appetite control, you might also experience feelings of calmness, high energy levels, or alertness from the foods you eat.

Experts believe there are many factors that can influence our feelings about food and our eating behaviors. These include: Cultural factors, evolutionary factors, social factors, familial factors and individual factors.

There also are positive and negative consequences associated with eating. For example, food might help you to cope with negative feelings in the short term. In the long term, however, coping with stress by eating can actually increase negative feelings because you are not actually coping with the problem causing the stress. Further, your self-image might become more negative as you gain weight.

MENTAL I am proud of my school alone and only want to see it do

SOCIAL I avoid events with friends from other schools because it

will only cause an argument.

SPIRITUAL I feel happy when we win and when other Big Twelve

schools lose, even if it’s out of conference play.

FUNCTIONAL The Big Twelve Conference’s members, fans and students

strive to work together to be the best conference across the

US.

MENTAL I feel proud to be a part of the Big Twelve Conference and am

happy to see when fellow conference teams are successful.

02. WHERE WE’RE GOING

MEET ZOEY THE FANZoey is more than your average dedicated fan.

For years now she has made a point to attend

all of the games and be as supportive as she

possibly could. With an ex-boyfriend that’s an

avid Oklahoma fan and who only wants to talk

about her alma mater of the Texas Longhorns

in a negative way, Zooey finds herself always

arguing about the competition instead of

supporting it, even when they aren’t playing

each other. She wants to be supportive of all of

the Big Twelve Conference schools, but when

others want to talk like that it makes it difficult

to want to support them in any way.

01. WHO WE WERE

ABOUT THE CONFERENCEThe Big Twelve Conference, located in the Central United States, with headquarters located in Irving, Texas, officially formed on February 25,

1994, when members of the Big Eight Conference joined with four Texas schools from the Southwest Conference.

A member of the NCAA’s Division I for all sports, of whose football teams compete in the Football Bowl Subdivision, the higher of two levels of

NCAA Division I football competition. Member schools for the conference (up until the 2011 calendar year) are located in Colorado, Iowa,

Kansas, Missouri, Nebraska, Oklahoma and Texas.

The Big Twelve sponsors 21 sports. Men’s squads include baseball, basketball, cross country, football, golf, indoor track and field, outdoor

track & field, swimming and diving, tennis and wrestling. Women’s teams are fielded in basketball, cross country, golf, gymnastics, indoor

track and field, outdoor track and field, soccer, softball, swimming, tennis and volleyball.

A SUCCESSFUL PASTSince it began play in 1996 and 1997, the Conference can boast of 38 team crowns and 459 individual NCAA Championships. The success

continued in 2009, as Oklahoma State won the NCAA men’s cross country title while Texas captured the national championship in men’s

swimming & diving. Texas A&M maintained its place as the nation’s top outdoor track & field program, securing the NCAA crowns for both

the men and women for the second consecutive year.

Big Twelve squads continued to lead the nation in their respective sports as every single sport the Conference sponsors had at least one

school ranked in the top six of the national rankings during the past campaign. In addition, nine different sports had the No. 1 team in the

nation at some point during the 2009-2010 season.

Clearly a strong conference in terms of competition in the world of sports, the Big Twelve has held an important role in the NCAA over

a decade. While it may encompass some of the most amazing Division I schools in the United States, along with their great cities and

amazing landscapes, the conference began to fail in other ways. Something happened along the way,

LET ME TAKE YOU ON A JOURNEY

Through the corn fields of Iowa and of Nebraska, onto the vast mountain ranges of

Colorado and into the golden wheat fields of Kansas, then down to the panhandle

of Oklahoma wayside of the winding rivers of Missouri, we come to the lowlands

of Texas. What we have just experienced is the vast physical beauty of what they

call ‘the Midwest’. A region that possesses something more than just gorgeous

landscapes and precious crops: Within the ever-competitive and ever-changing

world of intercollegiate organizations, a conference exists.

A conference we have come to know as The Big Twelve.

OUR MISSION We are committed to a competitive environment, where sportsmanship and fair play take center stage. Whether

on the field, in the classroom, or within the community, the students, athletes, administrators, coaches and game

officials of the Big Twelve support the highest ideals in sportsmanship.

EXTENDING THE INVITATION As both the University of Colorado and University of Nebraska part from the conference in the coming

months, the Big Twelve will strive to remain an organization that displays tough competition and an inspiring

sense of pride. Although it may seem weird to some that the New Big Twelve Conference has only ten

members, this matter should only instigate the potentiality of expansion within the conference. Furthermore,

the Big Twelve is always on the lookout for additional schools who share the same insight, ideals and goals

to join them in being a part of this incredible and forever successful organization.
