Environmental Sustainability

Sustainability means two things : that we continue to make a healthy and growing contribution to the economy; and that by continuing to behave responsibly towards the environment we benefit our reputation and success.

VISION

There are a host of support organisations and trade associations who offer free or part-funded advice and support to food and drink businesses in Scotland to help them grow sustainably and meet the increasing number of sustainability requirements from customers. Taking action to improve on environmental sustainability can help businesses to comply with legislation, protect themselves from rising energy, water, waste and raw materials costs, gain competitive advantage and increase job security.

Environmental Sustainability Journey

The purpose of this document is to enhance environmental sustainability within organisations and provide support to the food and drink sector to embed environmental sustainability throughout the food and drink supply chain.

Depending on what stage your company is on the environmental sustainability journey this Good Practice Guide which will highlight the support available from various support organisations.

Taking action and best practice

Set achievable targets on key performance indicators E.g. energy, water, waste, packaging, food waste, raw materials and sustainable transport so you can demonstrate continuous improvement. Summary + Case Study

This document should help organisations to enhance their environmental sustainability credentials and provide support to industry and stakeholders to

embed environmental sustainability throughout the food and drink supply chain. There is a huge amount of advice and support available in Scotland and

this document should act as a starting point so you can receive the support you need.

Case study: Ogilvy Spirits – Courtesy of Zero Waste Scotland

Family run farm in Forfar takes low grade potatoes that would normally be used for cattle feed and turns them into a high value exportable product with a

long shelf-life.

Jarron Farm run a mixed farm where they grow potatoes, cereal crops and rear livestock. The potato crop is sorted each year in different grades, with the highest quality and highest value potatoes sold to supermarkets and the lowest grade potatoes (damaged, unsuitably sized) are used for cattle feed.

Looking to find a higher value use for the crop, the Jarron Farm turned to vodka distilling as a way to turn this low value, perishable crop into an exportable product. The product was successfully launched in January 2015 after trialling twenty prototypes since the distillery was built the previous year. Sales are successful both locally and internationally and Ogilvy Spirits has gained recognition through a number of awards.

Embracing a circular economy meant that Jarron Farms were able to produce a high value product from a material that was treated as a low value waste.. Not only is the commercial value of their crop increased by the production of potato vodka but the by-products from the distillation process are also utilised.
