your Christmas shopping. With snow-
capped Mount Garibaldi in the distance, you
couldn’t have a more beautiful setting. Add
sparkle from the lights down Cleveland Avenue,
the backdrop of festive creativity in shop windows
and, of course, the Christmas parade, and your
holiday scene is set.
One thing Squamish excels at is great small
businesses, and you’re really spoiled for choice
downtown.
Your kitchen can be kitted out three times over
with beautiful products from our local kitchen
shop, which has everything you’ll need from cute
cookie cutters to large roasting trays. Plus lots of
hostess gift ideas.
The new cheese shop on Cleveland will transform
your post-dinner cheese board into a beautiful
display of B.C.-made cheeses, and our chocolate
store (a Squamish staple for many years) will curb
your sweet cravings with its large selection of
handmade chocolates and treats.
Give the big brands a cold shoulder for another
new shop on Cleveland selling locally made soaps,
shampoos, lip balms and creams. Head to the
back of the shop to explore the herbal apothecary
and the chance to purchase hidden gems such as
fresh vanilla beans.
Creativity abounds at our local flower store,
which is also a great place for cards, gift wrap and
vintage-style gifts. And don’t forget the kids’ store.
With a train set and kitchen inside, the children
will stay occupied while you run around choosing
gifts and stocking stuffers.

This year’s Squamish Christmas market and parade is going to be better and
more neighbourly than ever. Everyone knows no community does
Christmas like Squamish does Christmas.(OK, maybe that New York place does a
satisfactory job, but never mind, next to that one, Squamish does it best.)The 2014 Squamish Christmas Market and
Santa Parade, to be held Friday, Dec. 5, combine old favourites like pony and carriage rides, road hockey and a visit from Santa (in a helicopter, of course) with a new market location and parade route.The market will be in the middle of
Cleveland Avenue between Winnipeg and Victoria Streets and the Santa Parade will travel right through the market, down Cleveland Avenue from Pemberton to Main Streets.Centering the market on Cleveland
Avenue is to make the shopping experience cosier, like a European market where vendors and people are snuggled in together, according to organizer Cindy Cardiff. She said the street will be closed to traffic this year.
“We have been wanting to do this for years,” she said.The market has been growing every year,
with 50 unique and eclectic vendors taking part last year. Cardiff said she expects about the same this year. “It is a chance to mingle with neighbours,
do a little bit of Christmas shopping with unique artisan vendors — there will be food and Christmas carols with live, local music,” said Cardiff, who organizes the event along with Gregory Fischer and Michael and Monika Kanka. “It has got a real community feel.” The new parade route is to ensure that the
most people possible see the parade while at the same time not have the parade participants travel long stretches without much of an audience, according to Cardiff. The old route went down Second Avenue, where previous years there were few people, she said.Cardiff said she is hoping for mild weather
and that plenty of parade participants and spectators come out.

STORY AND ART CONTEST FOR CHILDRENBack this year, leading up to the market and
parade, is the “What Christmas means to me” youth literary and art contest. Last year the contest was for elementary school students only, but this year it is for all school children. The three young winners will get to go for a helicopter ride with Santa. The deadline for entries is Nov. 28 at 4 p.m. For more details go to www.squamishchristmas.com.

My Favourite Christmas Traditions

My fondest memories of Christmas traditions are from my home country South Africa – a Southern hemisphere Christmas. Every year we would go on our summer holiday to a
little town called Ballito in Kwa-Zulu Natal.Christmas dinner was held on Christmas Eve with all
the family. And, after a feast, the children (anyone under the age of 30) were allowed to open their present from my grandparents.Christmas morning was always a very, very early
start. Everyone would crowd around the Christmas tree and wait for Nanny to finish her tea, so she could play ‘Mother Christmas.’After the excitement of opening presents, it was time
for the beach. We would spend the rest of the day on the beach, breaking up the fun with lunch of leftovers from our feast the night before.Even though we now live in Squamish and have a
‘white Christmas,’ we still honour my family tradition and take a walk down to Nexen beach on Christmas Day.

I arrived in Canada four years ago with Robert, my husband of 25 years, and children Jed, 24, Meryl, 21, Justin, 20, Hans, 17, and Joaquin, 14.We learned to love Squamish, the abundance of
nature and the beautiful people, too!Every year our family is always excited to put up
the Christmas tree and hang the Philippines’ traditional star lantern.Our family’s love of music has us singing Christmas
carols both traditional and popular as early as November.It brings so much joy but, at the same time, it makes
us feel wistful and homesick as it brings back memories of Christmases past with our families back home.On Christmas Eve, we attend our church service to
celebrate the birth of Jesus, for he is the reason for the season.After the service we gather together with family,
relatives and friends in one house for food, feasting and fellowship. We share dinner together, usually noodles (our symbol for long life) and a special Filipino delicacy like sweet sticky rice, our symbol for family unity. We also exchange gifts as a sign of love and gratitude to one another. We have so much to be thankful for to God for the so many countless blessings we receive throughout the year.

We moved to B.C. from Germany in 1976, and we celebrate Christmas Eve. Traditionally, many people would go to midnight mass and, when they arrived home, the presents were there. Everything came together that night and was delivered by the Christ-child [the traditional gift bringer at Christmas]. You wouldn’t even see the tree until you came home. The very old way is that this was also when you would have your feast.My parents didn’t go to church but usually a day or
two before Christmas they would decorate a room in secret in the house. The children weren’t allowed in but I still remember trying to peek through the keyhole. It was all very magical.Also, we don’t have Santa, we have Saint Nicholas. On
Dec. 6, we would put our boots outside for him to fill with goodies such as nuts, mandarin oranges and a chocolate if we’d been good.When our sons were at school here and heard that
their friends got presents on Christmas morning, they asked for their presents that day too. We tried it for one year but they hated it and wanted to go back to celebrating on Christmas Eve. It just seems more magical when it’s dark outside and you have just the candlelight (back when we had real candles on the tree).We still celebrate on Christmas Eve with my sons, and
their wives and girlfriends. Then, on Christmas Day, they celebrate at home. My sons get the best of both worlds.

I once struggled with the Christmas holidays. I felt resentment for the invasion of materialism upon this traditional celebration. I then decided that the choice was mine: to dismiss the holidays completely in personal rebellion, or to take what I truly love about them, and foster that. I chose the latter.The holidays for me are a time to come together with
family and friends, celebrating the abundance that we have, in many dimensions, with awareness and gratitude.It is always a challenge not to get lost in the chaos of
the season, but it is a worthwhile task to pursue, in setting intention and soaking up each moment of the undeniable magic of the holiday season!

Garibaldi Estates is home to a collection of
local shops including ones that will have the
kids kitted out and their toy sacks filled, all while
they play on the swings nearby.
The main shopping strip of Garibaldi Estates is a

every level. Ski fanatics, hiking buffs, snowshoers
and fresh air enthusiasts will all find something
suitable for their stocking. You’ll also find a little

suitable investment for any hardy Squamish local.
This area of town is also an essential destination
to find gifts for men who are hard to buy for,
including tools, gadgets, gear (for everything you
could ever think of) and the world’s best
underwear. If you’re really stuck, there’s always a

Behind the big box stores is a wonderful addition
to Garibaldi Estates. This flower shop, garden
shop and farm market will help you deck the halls
and fill your fridge with all the essentials this
Christmas, as well as being a source for locally
made stocking stuffers and hostess treats.
The bigger stores in this area will also keep you
stockpiled in everything required to pull off a
successful holiday season, including cards,
wrapping paper, last-minute gifts and champagne
for the New Year.
And, when both your credit card and feet are
exhausted, head round the back of the strip for a
little pick-me-up at one of the many dining
choices there, ranging from the more exotic
Mexican, Indian and Japanese, to good old British
fish and chips.

My favourite tradition over the Christmas season is to celebrate and enjoy the season in a stress-free way.Decades ago I decided to do something different for
Christmas gift-giving and that was to buy all my presents in Vancouver shopping malls. As I was walking in and out of shops in a desperate state of searching, I realized that this was not the atmosphere for me. From that moment on I have made most of my presents. Everything I need to create the perfect Christmas can be sourced in Squamish shops or at the farmers’ market.We always start Christmas morning with my husband
Rick’s spectacular breakfast, then a walk in the woods. Dinner is traditional family favourite fare with son Max and daughter-in-law Breanne. We celebrate with a free-range turkey from the Upper Squamish Valley. The turkey looks a bit odd as the legs are taken off, deboned, stuffed, wrapped and stuck back on the bird – it kind of looks like a turkey with two casts on.I love having time to socialize and party, but am also
enthused to just have time to relax in front of the fire and do extreme Sudoku.

my parents’ house. Aunts, uncles, brothers, sisters and even cousins all come over to the house. We then all prepare a dish for the meal to help out with dinner.It’s a fun process where we all work together to prepare a
different part of dinner and it gives us a chance to enjoy each other’s company.

Most Christmases, we love to escape to our cabin on Savary Island, where we like to celebrate with close family and friends and have a lovely Christmas meal with all the trimmings.It can feel like we are the only people on the Island at
that time of the year. The beaches and trails are pretty deserted, and the kids run wild and love to comb the beaches for beach glass and shells.We usually have a fire to burn all the tree debris that
we rake up, and toast marshmallows (if we’ve remembered to pack them – because one of the only drawbacks of Christmas on Savary is having to bring onto the island everything we will need for the duration of the holidays including food and presents).We also have a big search for ‘the perfect Christmas
tree’, which usually involves a flask of hot chocolate, mince pies and mandarin oranges along the way.The question our kids asks each year is, “How does
Santa get down our chimney when we have the fire in our airtight stove going all day and night?” Somehow he always seems to manage!

Squamish Business Park is a handyman’s heaven,
with everything you could need for both small
and big projects to ready your home for Christmas. If
renovations are on your wish list, don’t start
anything until you’ve shopped here. Their DIY
experts are also an excellent source of inspiration
and sage advice.
However, if the thought of jackhammers in your
living room on Boxing Day is testing your nerves, a
Christmas tipple may be just the treat. A new craft
distillery which uses only 100 per cent Canadian
grains in all its products opened recently on
Progress Way. Shoppers also have the chance to try
before they buy in their tasting room.
You might not expect local food at this end of town
but there are two wonderful places to buy baked
goods and sit for a sandwich. Both are owned by
immensely talented chefs whose food is irresistible.
Pets are also in for a treat. Not only are their
favourite foods available from a well-established pet
food and supply store on Commercial Place but,
should they require a good pre-Christmas groom, a
pet lounge on Industrial Way takes care of everything
from a ‘pawdicure’ to a bath, cut and style.
Venture into Valleycliffe and you’ll find a
hidden-away esthetics and day spa, with a coffee
shop next door selling home-made treats. A great
getaway for exhausted Christmas shoppers or those
sprucing up for New Year.
In the opposite direction is Brackendale where,
among beautiful scenery and winter eagles, are
great gifts to be had for both art lovers and trail
riders.

I grew up in the south of Sweden, which is flat, with a very mild climate. Luckily my grandparents on my mother’s side lived further north, so we regularly got to experience a white Christmas at their house.My grandfather would go all out, dressing up in full
Santa (Jultomten) regalia. He would make an excuse for needing to be away during Christmas Eve, then he’d get on his ‘spark’ (short for ‘sparkstötting’ or sleigh), place the jute sack full of presents on the front and, with a candle lantern in hand, make his way up the driveway to our grandparents’ house, with us kids gazing through the window, waiting with great anticipation for Jultomten to knock on the door.Swedes also have a very strange tradition of watching
the annual Disney ‘Christmas special’, which has been a TV staple since the ’60s – everyone watches it at 3 p.m. on Christmas Eve, followed by either the big present frenzy with Jultomten and the Christmas smorgasbord (Julbord), or dinner first, then presents.My favourite tradition is the Julbord. My grandfather
hunted moose, and my grandmother was a great cook, who made the best moose roast, and the ultimate moose/beef meatballs. In the centre of the Julbord was the Christmas ham (no turkey), with a mustard glaze which can be tricky get just right.I’m not much of a cook myself, but I do make a point
of making meatballs for Christmas, though moose meat is substituted with bison. The lingonberry sauce (a must-have with meatballs) is substituted quite well by cranberry sauce.

Cream of Mushroom Soup
Using a variety of fresh mushrooms will enhance the fl avour of this soup.
¼ cup butter
½ cup onion, fi nely chopped
1 lb. button or assorted mushrooms
6 tbsp. all-purpose fl our
6 cups homemade chicken stock
1 bay leaf
2 tsp. fresh parsley, minced
salt to taste
¼ tsp. ground white pepper
2 tbsp. butter
1 tbsp. fresh lemon juice
1 cup whipping cream
½ cup sour cream
1 tbsp. fresh parsley, chopped
Over medium heat in a large, heavy saucepan, melt butter. Add onion and mushroom stems. Cook until onion is soft; do not brown. Stir in fl our and add stock. Cook, stirring constantly, until thickened.
Add bay leaf, parsley, salt to taste and pepper. Simmer for about 20 minutes. Strain and return liquid to pan. Discard contents of strainer.
In skillet, over medium heat, melt butter; add sliced mushrooms and sauté for about 4 minutes. Stir in lemon juice. Add mushrooms to strained soup and simmer for 20 minutes.
Add whipping cream to medium-sized bowl. Gradually add 2 cups of soup. Stir and return mixture to soup, stirring constantly.
Heat gently for 2 minutes; whisk in sour cream. Taste and adjust seasonings. Heat to serving temperature but do not boil.
Serves 8.

Mango, Avocado & Chicken Salad
For ease in preparing this dish, use the meat from a store-bought rotisserie chicken, or if you prefer white meat only and home-cooked chicken, season and roast 3 bone-in chicken breast halves.
2 lb. roasted chicken, cut into bite-sized pieces
5 tbsp. fresh lime juice
1 tbsp. peeled and minced ginger
2 tsp. light oil
3 tbsp. minced fresh cilantro, plus 1 cup whole leaves
5 cups mixed spring greens
3 mangoes, peeled and sliced
2 avocados, pitted, peeled and sliced
2 tbsp. minced red onion, plus several thin slices
In a large bowl, whisk together 2 tbsp. of the lime juice, the ginger, ¼ tsp. salt, the oil and 1 tbsp. of the minced cilantro.
Add 1 cup of the whole cilantro leaves and lettuce and mix with the dressing.
Arrange the greens on a platter, or individual plates, and evenly place sliced mango over the top.
Drizzle with 1 tbsp. of lime juice.
Arrange chicken over the top, followed by the avocado. Drizzle the avocado with remaining 2 tbsp. of lime juice.
Sprinkle remaining chopped cilantro over the top. Serve immediately.
Makes 6 to 8 starter salads or 4 main-dish salads.
Apple, Apricot, Plum & Sausage Stuffing
This fruit-infused stuffi ng is great when served with roasted birds but is equally satisfying when paired up with other wild meats.
½ cup butter
2 medium onions, fi nely chopped
1 large stalk celery, fi nely chopped
1 lb. sausage, casing removed and cut into sugar cube-sized pieces
8 cups toasted bread cubes (multigrain if possible)
1-1/2 tart apples, diced, skin on
1 cup fresh or dried apricots, diced
½ cup fresh plums, diced (or stewed)
salt and pepper
¼ cup chopped fresh parsley
2 tsp. chopped fresh oregano or 1 tsp. dried
2 tsp. fresh sage, chopped or 1 tsp. dried
1 bay leaf
1 beaten egg
¾ cup homemade chicken stock
In a heavy skillet, melt butter over medium heat. Add celery and onions, cooking vegetables until soft. Add sausage and cook for about 3 minutes. Cool.
Combine cooled sausage mixture with remaining ingredients and place in baking dish. Bake covered in a 350 F oven for 1 hour. Remove cover and continue to bake for another 15 minutes.

Recipeswith a twist
Two-Cheese Potato Casserole
This recipe can be made a day in advance. For those counting calories, use light versions of the cream cheese and sour cream.
5 large russet potatoes, peeled and quartered
8 tbsp. butter
2 cloves garlic, minced
½ cup minced onion
4 oz. cream cheese
¼ cup grated parmesan cheese
1 cup sour cream
salt and pepper
In a large pot of unsalted water, boil potatoes until cooked but not mushy. Drain well. Mash and set aside.
In a small skillet, melt butter over medium heat and cook garlic and onion until soft but not browned. Set aside.
In a bowl, beat cream cheese until softened. Add half the parmesan cheese and all of the sour cream.
Add to potatoes and beat. With a slotted spoon, remove garlic and onions from skillet to potatoes. Pour in half of butter remaining in skillet. Mix thoroughly. Taste and adjust seasoning.
Transfer to shallow casserole and drizzle with remaining butter. Sprinkle remaining parmesan over top. Bake uncovered in moderate oven until heated through and slightly browned.
Serves 8.
Good Ol’ Apple Crisp
When serving this, set out a gallon of vanilla ice cream. You can add fresh cranberries or a combination of fresh fruits to the apples.
5 cooking apples, cored and sliced, skin on
2 tbsp. freshly squeezed lemon juice
1/3 cup soft butter
½ cup all-purpose fl our
¼ cup whole wheat fl our
¾ cup brown sugar
3 tbsp. hot water
Spray a 9x13 baking dish and place sliced apples in it. Sprinkle lemon juice over apples.
In a large bowl, combine butter, fl ours and brown sugar. Work together with hands until crumb mixture forms. Spread over apples. Add water to pan.
Bake at 350 F for 30 minutes or until top is nicely browned.
Serves 6 to 8.
