THE WAY OF THE TRAPPER

The inventor ofthe steel leg-hold trap is unknown buthistorians believe the device may date back to the 1400,s.European immigants brought the first traps fo North America.

The typical beaver trap weiglred three and one-halfpounds, enough_to hold. a..beaver,untdrwater..lv-hile,it drowned. It had two porverzut springs to keep the rrap jaws closed so astruggling bcaver. oould not pull its leg frec. The trap wasattached to a chain which was fastened,to an immovable objectlike a tree root or a shaft driven inl.o.rhc mud. .

: ' ' !r '1^l-'i '

A mountain man paid'aboiit, five dollars, for each trapand used betwecn six and u dor"o on a trap line. The beaver hLcaught weie skirured on the spot and the trapper took not bnly thefur but the castor gland to use for preparing funre trapping bait, and, the broad, flat tail. this delicacy was cooked over the campfre lvhile the trappei tended to the chore of scraping and fleshingthe skrns and stretching them over the frames made lrom supplewillow sticks bent'into circles. The skins were set out to dry, flesh side up, in the sun.

When dried, the plews (beaver skins) weighed aboutone and one-half'pounds. They were branded with a mark ofpersonal identification, tied together into bales and transportedto a rendezvous where they were sold or traCed. A trapper mighttake a couple hundred beaver in a good season and would receivebetween four and six dollars for each quality plew.

After selling their furs, replenishing their supplies andenjoying some revelry at the rendezvous the trappers, siingly andin pairs, returned to the mountains and their solitary ways..orH

HINTS FROM THE PHOTOGRAPHY JUDGES

Judges will pay close attention to the technical qualities of your work. Next to content comes composition. This includes the number ofsubjects, their arrangement, and the background of the picture. When composing, keep your photography simple. Too much symbolismor clutter is distracting to the viewer. Avoid placing the main subject "dead center." This procluees a 6ull, static effect which ii not verypleasing to the eye' After composing the photo, carefully check the background for distracting, objectionable elements. Mzury fine shoishave been ruined by ugly telephone wires or distracting blotches of color that detract from the main subject. Nothing in the photo, eventhough in the background and out of focus, should violate Christian standards. Finally, pay close attention to the finishing touches. yourphoto should be clean imd lree of scratches, dust specks, or wrinkles, and should be matted attractively. Often these are the factors thatare used to break ties.

Nice FCF type prizes will be awarded to the winners.

SOURDOUGH

Sourdough, another name for Alaskan old-timer, also

means a ]:easty starter for leavening hot-ca}<es, t'afiles, muffrns,

bread, and even cake. to those u-ho lived alone or in a smallgroup of three of four, mining, trapping, or hornesteading,

sourdough became the basis of ther "staff of life." Bread could

not be made rr,'ithout it, so the "starter" became a precious

pcssession.

Sorirdough u'as used in the very early days before

baking porvder or yeast u'ere available. The sourdough starter

u'as made by combining flour, salt, and rvater in a crock that rvas

placed in the rvarm earth near enough to a fire to keep warm.

Once it had begun to ferment and bubble, it rvas set aside to sour

sufficientl.v to use in bread, pancakes, or biscuits. Each time the

Basic Batter rn,as used, one cup g'as held back in the crock, more

flour and r,vater u'eie added, and again it rras left ia a warrn place

to become sufficient$ sour for the next meal.

Helpful Hints and Enlightening Memorabilia

For best results, use glass or pottery containers. Neveruse a metal container or learje a metal spoon in the starter. a good

starler has a clean sour milk odor. The liquid u'ill separate fromthe baiter when it stands several days but this does not matter. Ifreplenished every fert' days with flour and u'ater, the starter

keeps fresh. If starter is not to be used for several u'eeks. &eeze

rvhich u'ill keep inert for a long tirne like old fashioned yeast

foam. R'ater ald u'armth bring the -veast back to tle active stage.

Commercjal sourdough starters now on the market are

dried and povdered. AdCing u'ater brings it to life. In grou'ing,

the 1'east gives off a carbon dioxide gas'il'hich forms bubbles inthe dough. The lactic acid bacteria changes starch and sugar tolactic acid, gir,iag tbe dough a sour odor. Soda is added to reactivith the acid tc form more gas u'hich malies the batter lighter. Ifto rnuch soda is added the product is brovirrish u'hen baked Iftoo little soda is used, the product tastes sour. Add the sodajustbefore baking. Never add soda to the starter, as it kills the, veast.

Tradition says that on a long coldjourney the owner ofthe good "start" lvould wear it in a bag arounci his neck inside hisshirt An old sourdough u'aming..."If the starter turns orange, itis noi spoiied; but rf it tums green, it must be discarded."

The other stories'of sourdough's'sun'ivel rn spite ofhardships and rigors ofpioneering explain lhat the pot of starter

sometimes needed putting "to bed" in the coldest of u'eather.

LTnder the covers, sharing the oriner's u,armlh, the "starter"

survived to leaven the nerl dalrs supply of hotcakes. Behreencamps, it rl,as the last iiem placed on the pack sack and the firstitern to be removed upon arrival at the new camp site. some

"Catching" your own wild yeast

Mix well and place in bottle or crock, uncovered. Allow mixrureto ferment 5 days in a \r arm room. stir it several times per day,

thus aerating the batter and permiuing the air to activate themixture. It rn'iil smell yeasg and small bubblesu, ill come to thetop.

Wild yeast is used in varS'ing amousts in recipes forbread, roils, hot cakes, etc. The 5th day after using, "feed" the

starter (to replace the amount used in baking) using equal parts

of flour and water or potato water. ln another 24 hours, the yeast

u'i1l foa.rr and work and be readl for use again.

Store unused porlion of the -veast in a refrigerator il a

glass or crockery container with at tight-fittiag lid. Sbake itoften. To activate it before using it again, add 2 - 3 tablespoi:::.of flour and the same amount of rrater and store.
