Ocho municipios forman El Condado, en elnorte de la provincia de Jaén, sobre más demil quinientos km2 ocupados por un mosai-co diverso de paisajes: tierras rojas y oliva-res; singulares dehesas de encinar, laderas yvalles de monte mediterráneo, y un buennúmero de arroyos, ríos y embalses.
El Condado fue territorio fronterizo yencrucijada de caminos. Huellas de dino-saurio, arte rupestre, íberos, puentes roma-nos, castillos y torreones, pueblos de colo-nización, museos, centros de interpreta-ción, yacimientos visitables, iglesias, núcle-os de trama urbana de origen árabe concalles serpenteantes y empinadas, paisajesdel poeta medieval Jorge Manrique, casasmodernistas,… son algunas de las múltiplessugerencias para visitar y conocer estazona.
Una comarca noble por su origen y por lahospitalidad de sus habitantes, que trabajacon ilusión en ofrecer Calidad Rural enproductos, servicios y paisajes. El Condado, located in the north of the pro-vince of Jaén, comprises eight municipal dis-tricts and covers an area of over 1,500 km2. Ithas a diverse mosaic of landscapes: red earthand olive groves, the unique ecosystem ofholm oak pastures known as the dehesa, hill-sides and valleys with typical Mediterraneanmountain vegetation, as well as an abundan-ce of streams, rivers and reservoirs.
El Condado was once a frontier territory, andstands on a crossroads. Dinosaur tracks, rockarts, Iberians culture, Roman bridges, castlesand towers, settlers' towns, museums, visitorcentres, archaeological sites open to the public,churches, villages and towns with steep andwinding streets whose urban layouts datefrom Arab times, landscapes of medieval poetJorge Manrique, modernist houses… these arejust a few of the countless options on offer forvisitors wishing to explore this area.
The nobility of this region stems from itsorigins and from the hospitality of its inhabi-tants, all of whom are wholly committed toensuring maximum Rural Quality in theirproducts, services and in the state of thelandscape. Las tonalidades oscuras y la densidad delmonte mediterráneo han catalogado a SierraMorena como escenario de leyendas en lasque hombres viven con una naturaleza sal-vaje y desconocida. Mitos como el de losbandoleros y escenarios que han generadopelículas como ”Entre lobos” en este tipo depaisajes.
El monte bajo denso y profundo de enci-nas, alcornoques, madroños, enebros, que-jigos, torviscos, jaras,…y el pinar de repo-blación ocupan el norte de El Condado enun relieve moderado en altura y acciden-tado en diferentes barrancos y arroyos. Laausencia de poblaciones permite uncorredor natural de más de 100 km surca-do por caminos de trashumancia y pistasforestales en los que es frecuente atisbardiferentes ejemplares de animales comoáguilas reales e imperiales, búhos, cárabos,buitres leonados, zorros, ginetas, gatosmonteses,… junto con numerosos reptilesy anfibios. También las especies cinegéti-cas como jabalí, ciervos, gamos y muflo-nes caracterizan a esta sierra como desti-no famoso entre cazadores.

The dark colours of the dense vegetation sotypical of the Mediterranean countrysidehave forged the Sierra Morena's reputationas a land of legends, where men have livedimmersed in nature in all its impenetrablewildness. These landscapes have seen figuresof folklore such as bandits and highwaymen,and served as the backdrop for various films,including “Entre lobos” (“Among wolves”).
The northern part of El Condado is populatedby deep, dense undergrowth beneath a canopyof holm oaks, cork oaks, strawberry trees, juni-pers, gall oaks, daphne, rock rose… as well asreforested areas of pine trees on moderatelyhigh and mountain landscapes cleft withvarious gorges and streams. The absence oftowns and villages creates a natural corridor ofover 100 kilometres, which is criss-crossed bycattle migration routes and forest trails wherevisitors can frequently spy wildlife such as gol-den and imperial eagles, owls, tawny owls, grif-fin vultures, foxes, genets, wild cats… in addi-tion to numerous reptiles and amphibians.There is also an abundance of game speciessuch as wild boar, red deer, fallow deer andmouflons, which make this mountain area awell-known destination for hunters.

La inclusión en la Red Natura 2000 comoterritorios de especial interés para la conser-vación de especies amenazadas como ellince ibérico, actualmente en proceso dereintroducción, certifica el valor ambientaly ecológico del territorio de El Condado.Junto a la caza y el aprovechamiento fores-tal y ganadero, aún perduran otras activida-des de marcada tradición rural como la reco-lección de setas y plantas aromáticas, laextracción del corcho y la apicultura.
Hacia el sur el aclarado de árboles y mato-rrales, transforma el paisaje de monte endehesas alomadas. Escenarios del aprove-chamiento sostenible de recursos fores-tales, agrícolas y ganaderos, que generanuno de los ecosistemas más biodiversos porla multiplicidad de especies herbáceas.Éstas tiñen de colores en primavera y otoñoestos parajes de gran belleza.

Territory
Its inclusion in the Natura 2000 network asa territory of special interest for the conser-vation of endangered species such as theIberian lynx, currently undergoing a pro-gramme of reintroduction, underlines theenvironmental and ecological value ofthe territory of El Condado. In addition tohunting, forestry and cattle farming, thereare various other activities with a markedrural tradition which take place here, inclu-ding collecting wild mushrooms and aroma-tic plants, cork harvesting and beekeeping.
Towards the south the tree and shrub cover givesway to a natural landscape of gently sloping spar-sely wooded pastures. This environment is theperfect example of the concept of sustainableexploitation, and is used for forestry, farmingand cattle farming, generating a highly biodiver-se ecosystem thanks to the wide variety of herbspecies to be found here. In spring and autumnthe landscape is transformed by carpets of theseplants which create swathes of gorgeous colours.
As well as holm oaks and birch trees, and corkoaks on the shadier mountainsides, this typi-cal landscape of wooded pastures known asthe dehesa is also populated by rock rose,alders, ash, mastic... and is home to numerousspecies such as tits, willow warblers, hoopoes,birds of prey, rabbits and hares, in addition toflocks of sheep and goats, and herds of cows.
Fighting bulls also roam over many of thewooded pastures in El Condado, as the regionis home to around twenty bull-breeding ran-ches. Some of these farms have adapted theirfacilities and provide a variety of restaurantand accommodation services so visitors canlearn more about the secrets of handling, bre-eding and selecting the cattle, while they enjoythe spectacle of the fighting bull in itsnatural setting. Further towards the south, near the towns andvillages, visitors will come upon a sea of olivegroves, made up of over 8 million trees and
where different shades of green stand outagainst the red clay of the rolling landscapes ofEl Condado, in stark contrast with the clays andwhite loams to be found to the south of theGuadalimar river. It is particularly worth notingthe spectacular and abruptly sloping terraceswhich are a testament to the labours of gene-rations of rural folk who were determined touse every last plot of land and farm their olivegroves despite the difficulty of using mechani-4

The olive harvest takes place betwe-en December and February, and the olivevariety generally produced here is the picual,which yields the characteristic olive oil of Jaénwith its strong fruity taste. During thesemonths the whole of the region becomes a hiveof activity, while the aroma of crushed oliveswafts from a multitude of olive presses.
The presence of water alleviates the hars-hness of the summer and winter temperatu-res in this mosaic of landscapes. El Condadohas various areas of wetlands. Natural lakessuch as those of Perales, Santisteban andPedernoso; rivers and streams like theGuarrizas, Montizón, Guadalén, Guadalmena,Dañador and Guadalimar, and as many asfive reservoirs serve as a refuge for biodiver-sity, in a setting of olive groves. Riverbankvegetation with willows, poplars, elms, tama-rind and oleander… is home to birds such ascormorants, egrets, herons, black-crownednight herons, black-winged stilts, plovers…who feed off fish and amphibians.

con el mayoral, asistir en silencio a unatienta, compartir otras tareas ganaderascomo un herradero,… son algunas de lasposibilidades de un servicio turístico en unentorno natural privilegiado.
Más al sur, y junto a los núcleos de pobla-ción, encontramos un mar de olivos conmás de 8 millones de árboles, donde lostonos verdes contrastan con los rojos arci-llosos de estas tierras onduladas de ElCondado, muy diferentes a las arcillas ymargas blancas que aparecen ya al sur delrío Guadalimar. Son especialmente llamati-vos los parajes en pendiente que señalan elesfuerzo de generaciones rurales empeña-das en aprovechar la tierra y que mantie-nen el olivar a pesar de su difícil mecaniza-ción. Entre diciembre y febrero se producela recolección del olivar, la mayoría de lavariedad picual, que ofrecen un aceite desabor fuerte y afrutado característico deJaén. En estos meses toda la comarca seinunda de actividad y aromas procedentesde la molturación de la cosecha en lasnumerosas almazaras.
La presencia del agua suaviza la dureza delas temperaturas de verano e invierno, eneste mosaico de paisajes. El Condado cuentacon varias zonas de humedales. Lagunasnaturales como la de Perales, Santisteban yPedernoso; ríos como Guarrizas, Montizón,Guadalén, Guadalmena, Dañador yGuadalimar y hasta un total de cinco embal-ses son refugios de biodiversidad entre oli-vares. Vegetación de ribera con sauces, cho-pos, olmos, tamarindos, adelfas,… en los queaparecen aves como cormoranes, garcetas,garzas, martinetes, cigüeñuelas, chorlite-jos,… que buscan alimento en peces y anfi-bios.

Sorihuela del Guadalimar. Precisamente en latorre de Sorihuela, hoy se pueden conocer losdetalles de este periodo histórico en el centrode interpretación de las Cuatro Villas.
Tras la conquista de estas tierras por FernandoIII el Santo, Chiclana de Segura y buena partede la comarca quedaron en manos de la Ordende Santiago, siendo uno de sus comendado-res el poeta Jorge Manrique. Sobre su figura ymomento histórico se puede visitar el Centrode Interpretación en Chiclana de Segura.
Santisteban se convirtió en Villa Real y se con-solidaron poblaciones como Castellar y Navasde San Juan. La acumulación de privilegios yseñoríos favoreció que Enrique IV creara elCondado de Santisteban comandado porDon Sánchez de Benavides en 1473. Paraentender la importancia histórica de este perí-odo y del recorrido histórico de la comarca esimportante visitar el Centro de Interpretacióndel Condado de Santisteban. Este fue seguidopor el Condado de Vilches en 1627, creando labase del carácter nobiliario de esta comarca.Blasones, mansiones, escudos, artística rejería ydinteles de gran porte engalanan aún hoy lascalles de estos municipios y hablan con nom-bres y apellidos de la historia de sus vecinos.
En la época moderna, las repetidas crisis desubsistencia despoblaron esta zona. Carlos III,impulsado por las ideas ilustradas, promulgó el“Fuero de las Nuevas Poblaciones de SierraMorena”, planeado y ejecutado por su ministroPablo de Olavide, vinculado a la localidad deArquillos en la que existe un centro de inter-pretación sobre este período. La Ilustración enla comarca se visualiza en el racionalismourbanístico de núcleos como Arquillos, ElPorrosillo, Montizón, Venta de los Santos yAldeahermosa. Trazados de amplias calles endamero, casas homogéneas de una o dos plan-tas con patios traseros dispuestas alrededor deuna gran plaza. Fueron municipios repoblados
Desde tiempos remotos se puede leer la his-toria visitando el diverso patrimonio de ElCondado, como en las huellas de dinosaurioen Santisteban del Puerto, o las pinturas de“arte rupestre” del Arco Mediterráneo ArteLevantino declaradas Patrimonio de laHumanidad por la UNESCO, en las cuevas delApolinario, Morciguilla de la Cepera, Cerro dela Caldera y La Alamedilla y Arroyo del Hellín.
La abundancia de minerales atrajo tambiéna fenicios y griegos. Pero si hubo una civili-zación protagonista en la comarca estafue la de los íberos. De referencia obligadaes el asentamiento de Giribaile, presentadocomo yacimiento arqueológico importanteen el centro de interpretación en Vilches; y elSantuario Ibérico de la Cueva de la Loberacon su Museo de Arte Ibérico en Castellar.
La presencia de Roma queda patente en laVía Augusta que transcurre por toda lacomarca con puentes como el Piélago y laGolondrina en Vilches o el puente Montizónen Santisteban del Puerto. También el PuenteMocho sobre el Guadalimar en Chiclana deSegura ya en la Vía Cartaginesa.
De la Edad Media, es el legado andalusí elque más destaca en muchos pueblos de lacomarca. Numerosos topónimos y costum-bres son reflejo de la convivencia entre la cul-tura cristiana, musulmana y judía. The history of El Condado can be traced sinceremote times by visiting elements of its ancientheritage such as the dinosaur tracks inSantisteban del Puerto, and the rock paintingswhich form part of the Levantine art of theMediterranean basin –awarded the UNESCOWorld Heritage designation– in the caves of ElApolinario, Morciguilla de la Cepera, Cerro de laCaldera and La Alamedilla and Arroyo del Hellín.
The abundance of minerals also served asmagnet for the Phoenicians and Greeks.However there was one outstanding civili-sation that made its mark in this region: theIberians. An important reference is the set-tlement of Giribaile, and this archaeologicalsite is also a key feature of the Vilches visi-tor centre. Also worth noting is the Iberianshrine in the cave of La Lobera, and theMuseum of Iberian Art in Castellar.
The distinctive Roman presence can clearly beseen in the Vía Augusta road which runsthrough the whole of the region, punctuatedby bridges such as El Piélago and LaGolondrina in Vilches, the Montizón bridge inSantisteban del Puerto, and the Mocho brid-ge over the Guadalimar in Chiclana de Seguraon the Vía Cartaginesa part of the route.
The traces of the heritage of al-Andalusfrom the time of the Middle Ages are clearlyevident in many of the towns and villagesthroughout the region. Numerous placenames and customs are a testamentto the peaceful coexistencebetween the Christian,Muslim and Jewishcultures.

A finales del siglo XIX, El Condado fue testigode un resurgir de burguesía agraria que impul-só en municipios como Castellar el gusto porla arquitectura modernista influenciada porel foco levantino. Este florecimiento económi-co estuvo muy localizado y no fue sostenibleen el tiempo. Tras la Guerra Civil la situación dela comarca hace que vuelva a ser punto demira de otra experiencia de repoblación y asíen la década de 1950 se edifica el poblado deMiralrío en Vilches, ejemplo de arquitecturaorgánica.
El Condado ha sido y es lugar de nacimientoy encuentro de artistas, pensadores y perso-najes ilustres. Los detalles de estos protago-nistas, así como los principales hitos delpatrimonio están señalizados para ofrecer alviajero un recorrido ilustrado por esta noblecomarca, que desde 1993, con la creación deASODECO trabaja en común en el desarrollorural.

regular one- or two-storey houses with backcourtyards arranged around a large square.These towns and villages were resettled predo-minantly by families from northern Europe, andthis ancestry can still be seen in some of thesurnames found in the region.
At the end of the 19th century El Condado wit-nessed a resurgence of the farming bourgeoisie,which in towns such as Castellar gave rise to ataste for modernist architecture influencedby the focus of this movement in eastern Spain.This economic boom was highly localised andwas not ultimately sustained over time. Afterthe Spanish Civil War the situation in the regionmade it once again the destination of anotherwave of resettlement, leading to the creation inthe 1950s of the settlement of Miralrío inVilches, an example of organic architecture.
El Condado has been and is still today the birth-place and meeting point for artists, thinkers andeminent men and women. Information aboutthese figures and the highlights of their illus-trious heritage are indicated in order to offertravellers an instructive journey through thisnoble region which since 1993, with the crea-tion of ASODECO, has worked together to pro-mote rural development.
visitor centre in El Condado de Santisteban is anexcellent place to learn more about the impor-tance of this period and to trace the region's evo-lution throughout its history. This decree wasfollowed in 1627 by the designation of theCounty of Vilches, thereby endowing this regionwith its aristocratic character. Coats of arms,mansions, family crests, ornamental wroughtironwork and massive stone lintels can still beseen throughout the streets of these towns andvillages, and reveal the identities of the inhabi-tants who formed part of this noble past.
In modern times, a succession of subsistencecrises led to the depopulation of the area. KingCharles III of Spain, inspired by the ideas of theEnlightenment, sponsored the association ofmunicipalities known as the “Fuero de lasNuevas Poblaciones de Sierra Morena”, plan-ned and enacted by his minister Pablo deOlavide. He himself had links with the town ofArquillos, which today contains its own visitorcentre with an exhibition on this period. Theinfluence of the Enlightenment in the regioncan be seen in the rationalist nature of theurban design of towns and villages such asArquillos, El Porrosillo, Montizón, Venta de losSantos and Aldeahermosa, whose layouts havebroad streets in a chequered pattern featuring

Otros productos con Calidad Rural son larepostería tradicional, los postres y huevosecológicos y los embutidos. Se destila muchatradición en productos como tortas de man-teca, dormidas de aceite, plumillas, roscos debaño y los conocidos pericones de SanAntón de Arquillos. Un abanico de saborescaracteriza embutidos locales como morcillablanca, ajo de morcilla, lomo de orza, chori-zo cular,… En definitiva, productos naturaleselaborados artesanalmente con el objeto dedarle placer a los sentidos.
