- I understand this is a new venture for you, how didyou get interested in Eco-Farming?

- “Someone recently suggested I watch a coupleof documentaries on the corporate and governmentmanipulation of our food supply. By the time the filmswere over I was already making phone calls.”

- What was the a-ha moment for you?

- “As a grower, I am all too aware of thetemptation to turn crops faster and to produce highlycolorful and unnaturally large products. But whennutrition, wellness, and sustainability of the land andproduct are sacrificed; I have to pull my name from thesuppliers list. My children and your children are eating thisstuff.”

- So what Basnight sustainable products should weexpect?

- ”Fresh, locally grown fruits and vegetables.Clean, free range fed poultry and beef. We are partneringwith some local watermen to provide us with the freshest,naturally raised seafood available. I expect to start salesfrom our farmers market at Greenbrier Farms thissummer.”

- Are there ways for the public to see your operation?

- ”The public is welcome anytime for a farm tour.The new crops are going in and the development oflivestock programs are underway. Call 757-421-2141 toarrange a tour. Growing your own natural vegetables andherbs has many benefits, such as relaxation,fresh food source or beauty (color, texture,scent). Many vegetables are easy to grow andrequire little effort to maintain.A raised bed garden is a great choice when soil

is nutrient poor. The soil is raised above thesurrounding soil (6 inches to waist high), isenclosed by a frame made of wood, rock, orconcrete blocks, and enriched with compost.

If space is an issue a container garden ispreferred. A container is usually a planting pot,but can be any object that will hold soil anddrain water. Make sure your container of choicehas ample room for the root system to grow.

You can also incorporate a garden into yourexisting planting beds. Pepper plants andvarious herbs work well and can add beauty toyour landscape.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients:

Preparation:

· 1 bunch (about 1 lb.) greens of your choice

· 1 Tbsp. salt (for boiling water) plus more to taste

· 1 to 2 Tbsp. olive oil

· 1 to 3 cloves, thinly sliced

· 1 to 3 whole, small dried chiles (such as arbol) or

1 fresh red chile (such as fresno), sliced

· Lemon juice (optional but delicious)

1. Bring a large pot of water to a boil. Meanwhile,

garlic

clean greens and cut off any tough stems. Chop

greens into fairly large pieces and set aside.

2. Add 1 tbsp. salt and chopped greens to boiling

water (you can skip this step if using spinach).

Cook until greens wilt, 30 seconds to 2 minutes,

depending on toughness of the greens you're

using. Drain and immediately rinse with cold

water until cool. Use your hands to squeeze out as

much water as possible from the greens. Set

aside.

3. Heat a large frying pan or saute pan over high

heat. Add oil, garlic, and chile. Cook, stirring, until

fragrant and just starting to turn golden, about 30

seconds. Add greens and stir to combine. Cover

and cook, stirring occasionally, until greens are

tender and flavors combine, 3 to 5 minutes. Serve

greens hot, warm, or at room temperature.
