I first stepped intothe old pizza parlor thatChefs Rachel and AngelHidalgo planned to turninto their bakery back inMarch and I’ll admit that Iwas more than a little skep-tical of whether they couldpull this transformation off,but I quickly learned not tounderestimate the skill andwork ethic these two share.In less than one month’stime, they had metamor-phosized into the sparklingclean and bright space yousee today. Attention to de-tail is everything at DoubleBatch, from the décor to thecustom cookies and cakesto the attentive customerservice you will receive on everyvisit.

Rachel and Angel both partici-

pated in the C-CAP program, anon-profit organization thatawards scholarships to promising

young chefs in major cities acrossthe country. Both budding chefswon scholarships to The CulinaryInstitute of America; Rachel, onenever to be outdone came in first

place, scoring a full ride to theprestigious Hyde Park, NYschool. After over twenty years in

the business and working in everyfield from fine dining to fast ca-sual and online bakeries, the sea-

soned pair knew it was finallytime to embark on their true jour-ney: opening a bakery of theirown and thus, Double Batch Bak-ery was born.

Perhaps the most agoniz-ing part of starting their ownbusiness was coming upwith the name. Wanting toinclude their twin boys, Ju-lian and Sebastian, into thebakery’s story, they settledon Double Batch Bakery.Things are always better witha double batch!

‘NOVA’ makes a comprehensive journey to ‘The Planets’ By Jay BobbinHow much do you really know about Mars? Or

Neptune? Or Saturn?PBS’ “NOVA” arguably is the most appropriate tel-

evision series to administer that quiz, and it doesso with the five-part presentation “The Planets”starting Wednesday, July 24 (check local listings).Narrated by Zachary Quinto (“Star Trek,”“NOS4A2”) and airing over four weeks, the co-pro-duction with England’s BBC begins with the episode“Inner Worlds” — encompassing a planet calledEarth — as it uses footage and data collected fromspace missions, as well as computer-generated im-agery, to present a thorough look at the solar sys-tem.“When I was in school, we hadn’t launched Voy-

ager yet, and those outer planets were really justseen in a telescope from Earth,” says Dr. LindaSpilker, a participant in “The Planets” and a NASAscientist who worked on the Cassini spacecraft’smission to Saturn. “Now, you see this giant planetwith this beautiful ring system, almost like a minia-ture solar system. (You learn that) maybe the ringscame to be about the time of the dinosaurs, andthat the rings are slowly eroding away. Maybe in an-other 100 to 200 million years, the rings will begone. But just in a brief time in history, right nowwhere we live, here are the rings around Saturn.”Adds fellow “The Planets” interviewee Dr. Ashwin

Vasavada, who has been involved in NASA’s CuriosityMars rover project, “We are passionate about the sci-ence that we’ve been learning, and we love to com-municate that, so I hope people really get to know

Saturn and get to know Mars. Being more on theMars side, what I really hope people see is that Marsreally is another world ... and, in its early days, wasa world so much like Earth. I’m not sure peoplehave that appreciation.“There’s a great line in the (Mars) episode (which

also airs on July 24) that I’m not responsible for,”Vasavada notes. “Someone says, ‘The Red Planet wasonce blue.’ That’s just kind of mind-blowing, and Ireally hope people understand that wonderful jour-ney that Mars went on, and that it’s not just theplanet that it is today.”“The Planets” producer Gideon Bradshaw ex-

plains that the series’ ample time spent on the plan-ets’ ancient past mines a “really dramatic, deephistory, how they were born and then how they’veevolved over time. It’s not settled science, a lot of thisstuff — so what we tried to do was just try and talkto people like (the featured scientists) and try andreach consensus about where the current under-standing is. But that’s the joy of science, you know:progress. It always marches on. We learn more themore we look.”

Dramatic Decline in Sewer Blockages in BayonneIn conjunction with Suez-Bayonne, Mayor Jimmy Davis and Mu-

nicipal Services Director Tim Boyle announced that sewer block-ages have declined significantly in Bayonne from 2018 to 2019.According to Suez-Bayonne, from January 2018 to June 2018, Bay-onne experienced 47 sewer blockages. By contrast, from January2019 to June 2019, Bayonne had only eight blockages. This is an83% decline in blockages from the first half of 2018 to the first halfof this calendar year. This is the direct result of Suez’s move to apro-active rapid assessment tool.Mayor Davis said, “Many cities deal with blockages in aging

sewer systems. Bayonne is one of them. We’re willing to try newtechnology to provide improved service to our constituents.” Analy-sis that Suez provided states that historically several factors causesewer blockages. These factors include aging infrastructure, rootintrusion into the sewers, and the accumulation of detergent andgrease in the system from our homes, restaurants, bars and industry.A statement from Suez pointed out, “These blockages are veryproblematic, because they can lead to sewer overflows in home-owners’ basements, and clogged sewers force rainwater to puddleon the street instead of being carried away by the sewer system.”In the first quarter of 2019, Suez-Bayonne began using an inno-

vative acoustic technology called the Sewer Line Rapid AssessmentTool (SL-RAT). This equipment allows Suez-Bayonne to determine

whether there are restrictions to the flow in thepipes that would indicate that a blockage hasformed. As Suez explains it, “A transmitter is setup in a manhole and sends an acoustic wavethrough the pipe. At the same time, a receiver isinstalled in the manhole downstream from thetransmitter to collect the acoustic wave. The qual-ity of the signal collected by the receiver allowsSuez-Bayonne to determine if a blockage is pres-ent in the pipe or if a blockage is starting to form.” Once Suez-Bayonne locates a blockage, a preventative pipe cleaning operation,called jetting, is scheduled. The jet action (a highly pressurizedstream of water) breaks down the blockage and restores the pipe toits original operating condition.

Director Boyle said, “The City of Bayonne has been concernedabout sewer blockages for years; street litter, mud and disposablewipes which are not really flushable do not belong in our systemand are a constant concern. We are impressed with the effectivenessof the SL-RAT in dealing with blockage problems. Suez-Bayonne’suse of this new technology has led to a dramatic reduction in sewerblockages. Bayonne is thankful to Suez for bringing the SL-RATto our attention” Mayor Davis concluded, “We hope this new tech-nology will lead to a continuing improvement in the sewer systemin the years ahead.”
