Fortune Cookies

Ingredients1 egg white1/8 tsp vanilla essencea pinch salt¼ cup plain flour¼ cup sugar

Draw an 8cm circle on baking paper. Place a spoonful of batter in the middle of the circle.

Spread batter as round and even as possible to the edges of the circle.

Bake for 5 minutes (or until golden, centre will remain pale). Quickly move cookie with a knife or wide spatula and place upside down on bench.

Quickly place fortune on the cookie and fold the cookie in half.

Place the folded edge across the rim of a cup and pull the pointed edges down, one on the inside of the cup, other on the outside.

Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.
