Take a moment to picture the startlingly beautiful beaches and soul-nourishing ocean views, then bask in the vast cultural and architectural history of our first port of call. Greece is the birthplace of democracy, the home of Socrates and Plato, and of course, the land of tzatziki, feta cheese, gyros, souvlaki, Greek salad and calamari, to name but a mouth- watering few. Greece’s culinary traditions have been heavily influenced by its long and storied history. Spain is a rich, diverse mixture of the classic and the modern and an intriguing melange of cultural influences. Over the centuries, Spain has adopted elements from every civilization that invaded or conquered it, be they Roman, Muslim or Christian, resulting in one of the most varied cuisines in the world. ITALY

TUSCANYWith its rolling hills and stunning medieval architecture, Tuscany is like a living work of art. And as if that wasn’t enough, it’s the home of many of the finest, food-friendliest wines in the world. Though it was the birthplace of the Italian Renaissance, and the elaborate style of food that emerged during this period has had a lasting influence on the dining habits of the rest of Europe, Tuscany’s great culinary legacy is actually one of simplicity. Popular meals include quite basic assortments of cured meats, pastas, soups and vegetables. One of the most famous of Tuscan dishes is bistecca alla fiorentina: a charcoal- grilled steak from Chianina cattle, seasoned with rosemary, sage, salt, pepper and olive oil and usually served rare. To pair with this classic dish, we’ve selected two expressions of Sangiovese, the region’s classic red grape: a Chianti Classico and a Sangiovese-Merlot blend.

ITALY

VENETOWhen your capital city is Venice, and you’re the setting of some of Shakespeare’s most popular plays, and you’ve got great skiing as well as amazing beaches, you might consider resting on your laurels, but not Veneto – it boasts great food and wine on top of everything. Proximity to the Adriatic Sea has influenced Veneto’s cuisine immensely, and many traditional dishes include sardines, clams, ancho-vies, squid and octopus (all of which will pair well with the Zenato San Benedetto Lugana featured here). But the region is quite vast, and inland, meat and pasta rule the day (hello, Giuseppe Campagnola Amarone della Valpolicella Classico, we’re looking your way!). One of the most popular foods in Veneto is cicchetti (chee-KET-eeh). Similar to tapas and most often served in bacaros (the local equivalent of tapas bars), cicchetti can include cured meats, meatballs, crostini, tramezzini (triangular white-bread sand-wiches) and pickled, stuffed or sauced veggies and seafood, among other dainties.

EBORDEAUXAs famous as Bordeaux is for wine, this storied region has an equally impressive reputation when it comes to food. There’s a great deal to choose from – think oys-ters, cèpes (mushrooms fried with shallots, parsley and garlic), escargot, duck confit, asparagus from Blaye… how about éclade de moules: a method of preparing mussels that originated with fishermen who would pull their boats up on beaches fringed by pine forests. These fishermen would cover the mussels with pine needles and then set the whole thing on fire, imparting a unique smoky flavour to the mussels. And then there’s entrecôte à la Bordelaise: steak with a sauce made from red wine, herbs, beef marrow bones and shallots. This will make a great match with the two reds we’ve picked out here. In Bordeaux, the sweet wines of Sauternes, too often relegated to aperitif or dessert duty in North America, are often paired with Sauternes-basted roast chicken.

BURGUNDY & BEAUJOLAISCoq au vin (chicken braised in red wine) is one of the most famous of Burgundy’s traditional dishes and is a classic pairing for Pinot Noir. Consider using a Cru Beaujolais to prepare the dish and to pair it with, for a lifted elegance.If you’re looking to pair a white Burgundy, give Gaston Gérard chicken a try. There are a number of variations on this dish, but they all feature Dijon mustard. The original recipe was created in 1930 when Madame Gaston Gérard, the wife of the mayor of Dijon, prepared the dish for a visiting food writer, Maurice Edmond Sailland. The story goes that she accidentally dropped a jar of Dijon mustard into the dish and then added a pile of other ingredients to mask the mustard’s flavour. Sailland loved it, and the dish became a classic (it’s not what you know, but who you know). Andouillettes de Chablis are spicy sausages typically made of pork or veal. They appeared in Chablis in the 1880s and saw a resurgence of popularity in the 1970s. These can be fried or grilled and are often served sliced as an aperitif, always with a chilled glass of Chablis, of course!

“For me, the Twisted White is the consummate summer wine,” says Ed Madronich, proprietor at Flat Rock. “It’s refreshing and balanced, and fun, but even though it’s approachable and seems casual, it’s still a serious and complex wine. It gives that fun without sacrificing quality. The percentage of each variety in the blend varies from year to year, but it’s amazing how consistent they are in what they bring to the wine.” The Twisted White comprises three particularly summer- and food-friendly varieties: “Gewürztraminer gives the wine its great aromatics; Riesling, which is always the largest percentage of the wine, adds the fresh fruit and vibrancy; and Chardonnay brings the texture, elegance and the smooth mouthfeel.”

“Riesling is an unadulterated wine, meaning we do very little to it,” says David Johnson, Featherstone winemaker and co-owner. “It’s the only grape we hand-

pick, in shallow baskets, and we use a special press – all in an effort to limit the juice contact with the skins and seeds as much as possible. Riesling is also the only grape we harvest based on its acidity rather than sugar levels. We cold-ferment, it sees no oak, and we use fairly benign yeasts; we don’t want to have too much influence. We want to keep all that freshness. The Black Sheep Riesling has quite moderate alcohol, which makes it great for the summer.”

“I am really fond of [our Unoaked Chardonnay], it’s a great choice as a summer wine,” begins Fielding winemaker Richie Roberts. “It does offer year-round enjoyment, but being so fresh and crisp, I have to say that it’s really like it was built for spring and summer. We don’t put this through malolactic and do only a little lees stirring to get some extra richness but we really want the grapes to shine in this wine.

I love the freshness and the orchard fruit character it has. It’s not tart and it’s dry with a good backbone; it’s refreshing, and super-versatile, which, I’m sure, is why it’s one of our most popular wines.”

“Whenever I talk about Gamay, I smile a lot,” laughs Shiraz Mottiar, winemaker at Malivoire. “It’s a fruit bomb, juicy and vibrant and loaded with fresh sweet cherry, raspberry and strawberry, with underlying floral and pepper spice notes. There’s an energy to it that brings pure joy. It’s not a big-bodied wine; it’s light, perfect for the summer. Gamay does really well here, and we pick when the fruit is at its freshest and perkiest. We cool-ferment, in concrete, and age about one third of it in old barrels, which adds roundness without introducing oak flavours. The rest we age in stainless. It’s about being judicious and careful so that we can harness the energy of the fruit.”
