Footnotes: Vegetables¹ For the purposes of the NSLP, the “Other Vegetables” requirement may be met with any additional amounts from the darkgreen, red/orange, and beans/peas (legumes) vegetable subgroups as defined in § 210.10(c)(2)(iii). Additional documentationfrom the vendor would be necessary to determine crediting.² Due to the increasing number of illnesses associated with consumption of raw sprouts, the Food and Drug Administration hasadvised all consumers – especially children, pregnant women, the elderly, and persons with weakened immune systems – tonot eat raw sprouts as a way to reduce the risk of foodborne illness. Therefore, raw sprout data served in the raw state hasbeen intentionally omitted.³ Dehydrated pinto beans are whole dry beans that have been cooked and then dehydrated.⁴ Liquid from canned beans used to puree beans no additional liquid added.⁵ Pureed foods such as fruits and vegetables may contribute to meal pattern requirements, provided that the dish that containsthe pureed food also provides an adequate amount of recognizable, creditable fruits or vegetables. Additional informationregarding crediting pureed foods is available in Memo SP 10-2012 v.9.⁶ For the purposes of the NSLP, the “Additional Vegetables” requirement will be used for any vegetable mixture in which theratio of the vegetable mixture is not clearly labeled or reported.
