SMOKE BITS The official publication of the
Florida Bar-B-Que Association
June 2019 4:6
Skinny’s continued on page 3
Welcome to the Moose Lodge 2073 for the 2nd annual
Skinny’s BBQ Showdown. And what a great venue it is.
Unlike last year with the torrential rain, this year we had
a couple of sprinkles and because the lodge added some
more spaces, no one was in the low land. Many thanks
to Fred & Patty Distasio, Tim Maloy, Shelby Lomen and
the amazing Moose Lodge member volunteers who
helped pull it together and make it all happen.
Who ever coined the phrase “If you remember Skinny’s,
you weren’t there”… seriously, it makes no sense. But I
will say that if you missed Skinny’s BBQ Showdown, you
missed one heck of a good time. However, if you were
somehow a little over served, there is someone out there
that will jog your memory, especially if you were the
memory.
Thursday night, (No Rain) the Moose Lodge held a Low
Country Boil for everyone. Afterward, Brevard County
Sheriff, Wayne Ivey, drew bingo balls for all teams to
pick their butts, Pork Butts that is. Each team was given
4 butts to cook for the Moose pulled pork sandwich sale
and then all teams were given a 5th butt for the Peoples
Choice. There was tons of laughter. When the Butt
Pickin’ was all over, everyone settled in for an evening of
Pink Drinks, Fireball, Bud Lite and story tellin’.

Summer has officially set in here in Flor-ida. The days have become hot and humid. This time of year contests slow down and many of the teams enjoy the break from the fast paced first 5 months of cooking nearly every weekend. It’s a great time to spend with family as the kids are out of school and an even better time to work on those
BBQ skills. So even though we don’t have any competitions for a few months we have plenty of opportunities to take a class or two. Hot Wachulas, Sweet Smoke Q, Jack’s Old South and Swamp Boys all have great classes coming up that will definitely improve your BBQ knowledge. Last month we had Skinny’s BBQ Throwdown. They had so much going on I don’t even know where to start. So if you like BBQ, Steaks, Peoples Choice, Live Music, Partying, or Bishop Bullwinkle doing a private show, then this was the place to be. Skinny and Patti go out of their way to make this event fun for everyone. This year no one left the event happier than Lee and Amanda from Pig-Chicka-Cow-Cow who took home the top prize once again. Hopefully they can keep the good Mojo working during this break. Right now they have 7 Grand Champions out of the last 11 contest and hold a 63 point lead over Tim Maloy and the Backyard Bros. I also want to congratulate our own Rub Bagby of Swamp Boys BBQ Team on his recent retirement from teaching. He has spent 30 years educating students in Polk County. Now maybe he can get serious about BBQ and add to his 64 Grand Champions, 50 Reserves, and several World Championships. Finally If you haven’t heard we have added 2 new events. First we have First Coast Ham Jam October 18, 2019 in Green Cove Springs. The second one is 7th annual Charity Chili Cookoff & BBQ Comp in Leesburg January 24, 2020. This one is backyard only! Keep a look out for several more new competitions to come online soon. FBABBQ.com or follow us on Facebook for all the latest updates.

President’s Message
Everyone can be affected by hot weather and it is important that one takes
care whenever the temperatures start to rise. A heat wave over a period of
days, or even a single day of extreme heat, may cause illnesses such as heat
cramps, heat exhaustion, and heatstroke.
1. Drink plenty of water, even if you don’t feel thirsty; keep a bottle of
water with you
2. Keep yourself cool by using wet towels
3. Wear light colored loose fitting clothing
4. Wear a hat and use sunscreen and seek shade when possible

Dennis Schmitz who has been on the DL came up to
help the Reps, Gary Washam (Lead), Ed Shemanski and I
for the weekend and did most of the meat inspections. It
was fun watching him reconnect with friends not seen in
a long time.
Later that evening our Cooks meeting was delayed for a
visit from Bishop Bull Winkle, comedian and song-
meister extraordinaire. Cooks were chomping at the bit
to select their steaks so the FBA cooks meeting was pre-
empted again. Finally boxes were handed out and I went
outside to judge steaks.
Saturday began bright and early. The smoke was rolling
and the judges were on time and ready to help, but they
had little to do because Mrs. Skinny had the judges area
set up so pretty in pink & black. Nice gift package too.
Once the judging for Chicken, Ribs, Pork and Brisket
was complete, all judges stayed for the Mystery Meat
challenge. And the mystery meat was Bacon… What a
display it was. We were so busy handling the turn in I
have no photos, so that will be a special memory for the
cooks and judges. By reading this you can imagine there
was a lot going on every single day of Skinny’s BBQ
Throwdown. There were lots of awards given that were
surprises to those winners. So without further adieu…
Out of 40 teams, Peoples Choice top honors went to
Kenny Nadeau, Uncle Kenny’s BBQ Pictured here with
Matt Polfer.
The Skinny’s BBQ Throwdown at the Moose competi-
tion was fierce, especially with all the out of state teams
that made the long drive to come down to Merritt Island
for some serious FBA competition and good times. Here
we go... Very exciting for Boog-a-lou Smoke Crew,
Travis Millender, Tina & Mark Zondervan who took the
top spot in Chicken, to give them 5th place over all.
1st place Ribs went to Pig-Chicka-Cow-Cow. Back
Yard Bros taking 2nd and Swamp Boys in the third
spot and Team Uncle Bucks in 4th. I mention them all
because they were all in the 195.somethings. Needless to
say, this was an extremely tight race.
Dennis Schmitz presents FBA Contest Rep, Bill Tanner, with
his 50 contest pin and Finally Mike Cox received his Master
Judge Badge.

The Team with the most random Bling went to Eric
Pinkham and Nice Racks voted the team with the best
name. Nice Racks also won the Bacon mystery meat
challenge. Pictured below. But to top it all off, Nice
Racks took 1st place Pork with a 199. 3 Wow! Things
that make you go Hmmmmm.
Movin’ on… The winner in Brisket was our team from
Missouri, Shake N Bake. They also took home the prize
for coming the farthest.
Before we go any further, Kudos to Cary Chastain,
Hold your Horses BBQ, who got a nice little check for
taking
top hon-
ors of all
the Geor-
gia teams
who
came to
play.
Everyone knows that all scores are posted on our FBA
website. The reserve Grand Champion went to Tim
Maloy and a very jubilant crew, Patty Maloy and Mike &
Monica Jones Back Yard Bros.
And last but not least the Grand Champion of the
Skinny’s BBQ Blowout at the Moose is awarded to Lee
Thompson & Amanda Podlucky of Pig-Chicka-Cow-
Cow!
Lee & Amanda, aka PCCC are on a big time roll and
might think about picking up a couple of lottery tickets.
I am unsure of the exact count, but I know they are get-
ting close to the possibility of an automatic invite to the
Jack Daniels Invitational and if that happens, it opens up
the possibility for another FBA team getting their bung
pulled for “the Jack” … fingers crossed.
Many thanks to Fred & Patty Distasio, Tim Maloy and
the Moose Lodge #2073 for their continued support of
the Florida BBQ Association.

My son Shane has been involved in high school
wrestling since he was a freshman in 1999 at Gulf
Coast. He graduated in 2003 and has been coaching
since he got out of high school. He has been friends
with Edwin Rey since school and when he married
Coleen, Shane and Edwin became brother in laws.
They also became coaches at Golden Gate high school
turning the wrestling
team into a powerhouse.
This year they celebrated
their first state cham-
pion in a cool young man
by the name of Gerald
Roger the 3rd. Gerald
battled his way to the
132 pound state champi-
onship beating a very
talented group on his
title run. He won the
prestigious "king of the
mat" title from the
school and also won a
rack of Big Papa BBQ ribs!
I was sent several pictures of Gerald holding
trophies and his ribs were definitely in the pictures!
Anyone that follows the sport of high school wrestling
will know the strict diets and discipline these kids
learn to follow and how much a kid likes to eat. This
young man enjoyed his ribs and I am sure proud of
this great young man. Go Titans!
We just got back from an exciting trip to Colo-
rado where we got to see some old friends and cook a
steak in an SCA event in one of our favorite states!
Michael Ulrich put together a nice contest and we had
a blast hanging out at the Holy Smokes Grillin’ Shop.
Janet said they should never let me hang out in front
of a grillin’ shop ‘cause I spend way too much money!
When I cooked my first competition in Sebring
back in 2007 my good friend Dwayne "Oolah" Orlosky
was living in Florida and was part of the beginning of
Big Papas Country Kitchen. At our first competition
ever we were entered into the beer can chicken cate-
gory and had really never cooked a beer can chicken.
Janet went to a store to buy a chicken, I went to the
cooks meeting and Oolah started a fire. We injected
and rubbed and turned in our first competition cate-
gory ever and won our first trophy and check in our
first competition ever. Janet swears they gave us first
place because they knew it would hook us and she was
right- we were hooked!
Oolah moved back to Colorado and this was our first
cook together in 8 or nine years. Oolah and his girl-
friend came from
Grand Junction to
Castlerock to hang out
with us and we had a
blast. We hit a Ca-
sino, ate at Casa Bo-
nita - a unique Mexi-
can restaurant that
has cliff divers, bear
chases, shoot outs and
performances like you
have never seen. We
ate at a burger place
called Craveburger
and it was so good we
went back one more time before we left.
Janet took a 5th place in steak and a 2nd place in
Bloody Mary. All I could manage this trip was a third
in Bloody Mary but it was worth the trip to see my old
friend and to meet his friend Dee who is a true sweet-
heart. She taught me the proper use of cubbies in the
back of an SUV and was the best chauffeur ever. I also
enjoyed our trip to Duluth Trading center. They have
some intriguing items to shop for. A bottle of special
shampoo that looks like whiskey, only $49.95. Buck
naked underwear, $29.95. Good looking work pants
(long pants) which would never be worn in Florida,
$89.95. Take a pocket full of cash when you go.
Kelly Felton ran the grilling shop in Centennial and
was fun to get to know. She is a true egghead and runs
a really nice store. If you are ever in the Denver area
stop in and see her. If they host another steak contest
get by and see them - her store has lots of stuff to buy.
Janet has always been good at finding us a nice place
to stay and this trip we stayed in Castlerock at an air-
BnB that was a basement in a big home looking out
the back directly at Castlerock. We had a great morn-

The number one tourist attraction besides hiking to
the top of Castlerock (we will save that for next trip)
was shopping at the old barn antique mall. They
converted a 100 year old barn into a cool shopping
spot with a wide variety of items to choose from. If
you make it to Castlerock, Colorado take the hike up
the mountain, shop the old barn and get your best
burger ever at Craveburger!
Before my good friends John and Chris Sweeney
went back to Michigan for the summer John and I
made a batch of fresh homemade pork jalapeno
cheddar sausage and I am definitely hooked on
making (and eating) homemade sausage. It is truly
an art and hard work but the results are worth the
effort.
We will be giving away samples of our BBQ next
week promoting the great folks at Bass Pro Shop
and our sauces and rubs will be available for sam-
pling and purchase and hope to see a lot of our
friends there!
Good luck to everyone and safe
travels! Whether you are cooking
BBQ, steaks, grilling or making
homemade sausage keep on
Smokin! See everyone soon!
