  • Flavors are critical to food and beverage product development. At the most basic level, they help to make products taste good, and that’s what consumers want.According to a report from

    MarketsandMarkets, Dallas, the global food flavors market is estimated to reach $13.7 billion by 2018, driven by increased demand for natural foods and safety concerns with respect to processed products. In 2012, the market was dominated by North America, followed by Asia-Pacific. Currently, two key factors are affecting

    flavors in the marketplace: increased consumer demand for bold flavors and unique flavor combinations, and ongoing demand for more healthful products, whether they be low-sodium, low-fat, reduced-sugar or otherwise enhanced nutritionally.According to the 2013 “Flavor

    Consumer Trend Report” from Technomic, Chicago, 37 percent of consumers are increasingly driven to try more exciting and innovative flavors. And there is an increased demand for spicy flavors—54 percent of consumers prefer hot or spicy sauces, dips or condiments compared to 48 percent in 2011.The uptick in demand for spicy foods can

    be attributed to the increased popularity of ethnic cuisine, driven by growing global influence in the United States, as well as evolving consumer preferences.

    Comax Flavors, Melville, New York, in its 2015 flavor trends predictions, anticipates this ethnic-inspired trend will continue. Specifically, Comax’s “Melting Pot” flavor-trend category features versatile flavors that cater to the large and growing multicultural population in the United States and its younger demographics. The Sterling-Rice Group, Boulder, Colorado, also sees opportunity for ethnic-inspired trends in 2015. Among its list of 10 culinary trends for 2015 are “Advanced Asian” and “Matcha Madness.”However, flavors have more to

    contribute than just spicy or tangy notes. Flavors can help mask bitter or unwanted notes added by functional ingredients and can help improve the taste of low-sodium or other “healthy” foods. And, increasingly, consumers want flavors to be natural. In the United States, the natural-flavors

    sector grew 132 percent between 2009 and 2013, according to a 2013 “Colors & Flavors” report from Mintel, Chicago. In addition, artificial-flavor use has become almost non-existent in Europe, so many multinational companies have started using natural flavors to satisfy consumers around the globe.The global market for natural flavors

    reached $3.5 billion in 2011, according to a report by MarketsandMarkets, and is expected to hit $5 billion by 2017, increasing at the compound annual growth rate (CAGR) of 6.2 percent from 2012.

    While flavor innovation is currently center stage across all food and beverage categories, it’s important to remember consumers still enjoy the classics. The dairy sector is a prime example. When it comes to ice cream flavors, for instance, chocolate is the top flavor choice for women, according to The Harris Poll, which surveyed 2,242 adults between July 17 and 22, 2013, with 29 percent of women opting for chocolate. Vanilla is the narrow favorite for men (27 percent), followed by chocolate (26 percent).One thing is definite—consumer

    flavor preferences are always evolving. Identifying the key flavor trends and creating the flavors consumers want is critical for product success. ■

  • What do you expect to drive the consumer market around flavors in the coming year?The consumer wants to have their taste

    buds tantalized. More than 80% of Americans admit to being open to trying new flavors. People are not just consuming food to fill a void; they want their snacks, breakfast sandwiches, take-out lunches, frozen meals, etc., to be packed with flavor—whether that flavor is a sophisticated heat, a hot new ethnic flavor or a bold exotic spice.

    What is the biggest area of innovation/product development in the market? “Sophistication. Our flavors are not

    one-dimensional. For example, Red Arrow’s Roast Chicken flavor has the savoriness of juicy chicken combined with browned, roasted notes, but there are slight notes of caramelization and a fatty chicken-skin note to add to the complexity.   • I n the food and beverage industry, flavor is an ever-changing variable that can be influenced by emerging global cuisines and evolving consumer preferences. The popularity of ethnic foods among U.S. consumers has been on the upswing over the past few years, and now, more than ever, Americans are moving out of their comfort zones to explore bolder flavors and more culturally diverse foods, opening the doors to endless flavor options for food product manufacturers and designers.

    Ethnic CuisinesDriving Flavor Trends

    A recent survey conducted by market research firm Mintel, Chicago, on the state of the ethnic-foods sector found younger consumers, as well as those with children, have palates that are becoming more adventurous and sophisticated, and they are eager to explore lesser known cuisines with unique flavor combinations. New cuisine trends include Brazilian, Russian, Vietnamese, Argentinean and African food. Mintel estimates the ethnic food market will grow by 20.3 percent from 2012 to 2017, likely driven by continued consumer interest and more-focused product development.

    Spotlight on Ethnic FlavorsAccording to the 2013 “Flavor

    Consumer Trend Report” from Technomic, Chicago, 37 percent of consumers are increasingly driven to try more exciting and innovative flavors. What’s more, there is an increased demand for spicy flavors, as 54 percent of consumers prefer hot or

    spicy sauces, dips or condiments compared to 48 percent in 2011.Sweet flavors pair well with the

    greatest number of other flavor profiles, including savory, sour, smoky or spicy.“In a competitive foodservice climate,

    flavor differentiation is a must-have for operators,” said Darren Tristano, executive vice president, Technomic. “Because today’s foodservice consumers have such a strong expectation for innovative flavors, operators and suppliers have to help the menu stand out by staying ahead of the flavor curve.”Demand for authentic hot and spicy

    ethnic flavors has dominated the food and beverage scene for a number of years, and there is no sign of it cooling down. Evolving American palates take their dining cues from fiery and authentic flavors offered by Latin, Asian, African and Indian cuisines, and seek variety from all sources, including restaurants and processed foods.

    Cooking shows also have taken the mystery out of ethnic preparations, while the booming food-truck movement has delivered affordable exotic flavors to a wider demographic than ever before.However, one of the most important

    factors fueling hot and spicy ethnic cuisine is the growing Hispanic population that is projected to account for 60 percent of U.S. population growth between 2011 and 2016. In fact, U.S. Hispanics wield more than $1 trillion in purchasing power, and spent roughly $9.5 billion in 2014 on food and beverage products, according to the “Hispanic Food & Beverages in

    used to turn up the heat and create interesting global flavor profiles. Green chiles, habaneros, jalapeños and chipotles are now mainstream ingredients found in a wide range of foods, including breads, condiments, marinades and sauces. Chefs and food product designers also are exploring other options for adding heat, including the Peruvian aji amarillo and the Sichuan pepper, which, along with other spices, add interesting twists to meats, sauces, marinades and vinaigrettes.Spicy and bold flavors of Mexico, as

    well as the vibrant flavors of Brazil, will continue to drive flavor trends in the near future. High-profile events like last summer’s 2014 FIFA World Cup and the upcoming 2016 Summer Olympics are

    sure to put South American food and flavors in the spotlight. In fact, a recent Culinary Trend Tracking Series (CuTTS) report from research firm Packaged Facts, Rockville, Maryland, identified South American foods and flavors ripe with opportunity for the food industry.Aji peppers and rocoto will see

    expanded use in sauces and as ingredients for snacks with a global flair, while purple corn and purple potato will show up in more authentic and healing foods, including those for consumers avoiding GMO (genetically modified organism) ingredients. Quinoa, amaranth and pichuberry will play on texture and flavor attributes, as well as leverage health and wellness to increase penetration in the specialty and natural market. Pisco and caipirinha will draw on perennial interest in international spirits and beverages to foster new mixology and flavoring applications, while South American stews like Brazil’s feijoada are beginning to pop up on menus.Of particular influence in 2014 was

    Peruvian cuisine, which not only is a hot trend in and of itself, but a powerful funnel for bringing resurgent South American cuisine into the American food retail and foodservice marketplaces. In fact, 57 percent of American Culinary Federation chefs surveyed for the National Restaurant Association’s “What’s Hot in 2014” survey voted Peruvian cuisine the top trend in the Ethnic Cuisines and Flavors category.The bottom line is the popularity of

    ethnic foods has been on the upswing over the past few years, and food product manufacturers and designers are delivering both traditional and

    authentic flavors, as well as new flavor combinations,

    to meet growing consumer demand. ■

    ethnic foods among U.S. consumers has been skyrocketing over the past few years, and there is no sign of it slowing down in 2015.Need examples? New offerings in the

    grocery aisle include General Mills’ Helper Bold, a version of its boxed line of pasta available in Spicy Chipotle Chicken Enchilada and other flavors; Philadelphia Cream Cheese chipotle spread; Kraft Jalapeño Deluxe Macaroni & Cheese; and Lay’s Flamin’ Hot potato chips. This list could go on and on.Hot and spicy will remain on the menu

    for 2015. The Sterling-Rice Group’s list of 10 culinary trends for 2015 is heavy on flavor, forecasting deeper explorations of global cuisines and cooking methods, especially Asian, and new foods and flavors that meet demands for balanced nutrition as well as adventurous eating experiences.

    Barbecue Takes Center StageAccording to Technomic Inc.’s “Market

    Intelligence Report: Barbecue,” the flavors that resonate the most with consumers don’t typically come from sauce. The two descriptors that appeal to them the most are “grilled” and “smoky,” so chefs and operators at all segments are finding ways to bring more of those appealing flavors to their food, which, in turn, will drive consumer interest at retail.Barbecue conjures memories not only

    of taste and smell but of time and place. Restaurant operators have captured those moments through baby back ribs, shredded pork and slow-cooked brisket, but despite the popularity of these traditional favorites, consumers are eager to try new variations, attracted by interesting flavor combinations and ethnic influences. At the same time, they are looking for better-for-you dishes that don’t skimp on taste.

    No longer relegated to a backyard staple, barbecue has branched out to include innovative ethnic and regional offerings such as Korean, Japanese, Chinese, Caribbean, Cuban, Hawaiian, Mexican and other Latin cuisines.According to the report, 70 percent of

    consumers claim flavors imparted by preparation methods such as grilling, roasting or braising are appealing or very appealing, and are attracted to flavors, “grilled,” “savory,” “spicy,” “sweet” and “smoky.” What’s more, flavor companies are kicking it up a notch with authentic flavors that emulate the experience of popular cooking methods, such as smoked, charred and wood-fired foods. It used to be that you could only get a good, down-home barbecue at a local mom-and-pop joint. Now that barbecue has exploded, there are actual food shows dedicated to the art of smoking and barbecuing. The trend has pushed upwards to foodservice, quick service and midscale restaurants showcasing their talents with smoke. This renewed interest in all things barbecue presents food developers with the opportunity to create a host of products that break out of the traditional sauce, rub and marinade envelopes.

    The train to Flavor Town continues to pick up speed both at the restaurant and consumer goods level. As mentioned in the Ethnic Cuisines Driving Flavor Trends article, more consumers are stepping out of their comfort zones and experimenting with bold flavors and flavor combinations. Food Product Design has identified four culinary trends expected to kick it up a notch in 2015—ethnic/hot and spicy, barbecue, dairy and fermented flavors.

  • On-Trend Dairy FlavorsWhen it comes to favorite dairy flavors,

    many consumers stick to traditional vanilla. In fact, vanilla reigns supreme as the No. 1 ice cream flavor, and it’s the most common flavor choice in the yogurt category. However, today’s consumers are becoming more adventurous when it comes to trying different flavors and flavor combinations in the dairy aisle.Flavor innovation is key in dairy

    applications—one primary reason is to create excitement around a product. Consumers frequently buy vanilla ice cream to top with chocolate sauce or perhaps for a birthday party. But nobody is going to tell their neighbors about it. A veggie-flavored ice cream or an ice cream reminiscent of wing sauce on the other hand? Now that’s something to talk about (assuming the products taste good). And as consumers grow more adventurous in their flavor choices, keeping flavors exciting becomes increasingly important.Equally important to innovation is

    discovering the next “it” flavor. As consumer flavor preferences diversify, finding the next big hit is more challenging. Megatrends like the popularity of ethnic cuisine are guiding manufacturers to create products, including ice cream and yogurt products, that meet consumers’ changing flavor preferences.Some of these trends include the

    emergence of ethnic and spicy flavors; sweet and savory combinations; products inspired by beverage flavors like green tea- and alcohol-inspired varieties; and seasonal favorites.What’s more, flavors that once would

    have been considered niche are now mainstream. Pumpkin spice is one example. Although pumpkin has long been a flavor of fall, this festive flavor now emerges in nearly every food category during the holiday season.In some cases, flavors are becoming

    so bold, they’re redefining product categories. For example, a savory yogurt line produced by Blue Hill offers vegetable-inspired flavors that

    challenge consumers to enjoy yogurt as a savory snack versus the traditional sweet indulgence consumers are accustomed to.

    Fermented GoodnessInterest in savory fermented foods is

    growing alongside appreciation for naturally healthy functional foods and of hand-crafted foods prepared with artisan technique and pride.According to the “Fermented Artisanal

    Foods: Culinary Trend Tracking Series” report from Packaged Facts, 53 percent of consumers seek out bolder flavors. This statistic has played out well for fermented foods that have found a rising tide of popularity due to the convergence of this desire for spicier, bolder flavors and a growing focus on global foods that represent authentic preparations.Regional preparations of fermented

    foods, like craft pickles and small-batch whiskey, are being elevated in the preferences of consumers looking for artisan foods. In addition to growing

    artisan appreciation of these foods, more consumers are preferring foods that contain ingredients geared toward wellness. The probiotic goodness of some of these foods, such as kimchi, lactic-acid fermented craft pickles and miso, are appealing to those looking to boost digestive health.Propelled by culinary interest in umami

    flavor, fish sauce and dried shrimp are seeing larger roles as ingredients in the kitchens of popular restaurants and foodservice operations as they carve their path toward consumer homes. Increasing demand for specialized flavors and consumers’ desire to connect their food to a time and place have paved the way for a reintroduction of specialty fermented foods in the market, both retail and foodservice. High-volume manufacturers are either reformulating foods to bring back that special flavor or simply reminding their customers of the traditional processes used to create their products, despite the mass volumes they achieve. ■
