    ChevalierIn the 17th century, Frances chevaliers -or knights- wore wide-brimmed hats, a sign of their nobility and elaborate taste. Each hat was adorned with an ostrich feather on the left, while the right side was pinned down to give the knight freedom to move during swordfights. Chevalier cheeses capture a little bit of that French noblesse.

    Chevalier Double Cream Brie is a soft cheese that is rich, and features a pronounced cream and hazelnut taste.
