fila's in house Nutritionist Ashlee Zinna shares her recipe for Her delicious and satisfying vegan nut roast. perfect for these cold nights and
weekend dinners with friends, not to mention a great next day lunch!
after trying this mouth watering, savoury roast, you may never go back to your traditional roast again!
What you'll need:1 brown onion chopped and diced
200gm almonds ground200gm cashews ground
200gm wholemeal bread crumbs150 180mls vegetable stock1tsp Oil I use coconut oil
Salt, pepper, Rosemary to taste
i use a food processor to ground up my almonds and cashews
Method:
Fry onion until just cookedAdd ground almonds and cashews, cook stirring for 5 minutes
Add bread crumbs, stir to combineAdd salt, pepper, rosemary and slowly add stock, mix well.
Press mixture into a loaf pan firmly and bake for 40 minutesin 180 degree Celsius oven.
Once done, use a bread knife to cut. the smell alone once you open the oven door will cement this as a firm favourite for a
healthy, meat free meal for you and your whole family.
Your nut roast will keep in an airtight container in the fridgefor up to four days.
