There are so many projects taking shape in our community that it keeps us busy trying to keep track of them all! I know that some of them (think infrastructure projects) can be frustrating, but the end is in sight for at least some of them! April is always a busy month and that’s especially true this year. The tentative list of topics includes but is not limited to the following: Crime update by BCP – Southern District Cross Street Market update – Atlas Group Discussion of enforcement and remedies for permit/zoning violations – Department of Housing and Community Development CHAP update – FHNA ARC (Architectural Review Committee) Baltimore City Liquor Board community update Federal Hill Main Street Beautification Update May Election Update and Nomination Forms Attending FHNA meetings is a great way to keep abreast of what’s happening in not only our community but all the communities on the peninsula. Attending FHNA meetings is a great way to keep abreast of what’s happening in not only our community but all the communities on the peninsula. It’s so exciting to meet new members at our monthly meetings and learn what tops their list of priorities for improving the quality of life in our neighborhood. It won’t be a quick process, but we have a new member who has offered to work on our website with us. It’s sorely in need of an overhaul and I am excited that it may finally happen. This month’s recipe is a seafood recipe from Vietnam, cá kho tộ. Translating roughly to “caramelized fish”, this dish involves applying a technique to a savory preparation that – in the west – is relatively uncommon outside dessert and confectionery. Any apprehension will quickly give way upon tasting the dish. Ingredients2/3 c fish sauce1/2 c water

1 c sugar4 shallots, thinly sliced2 lb tilapia

¼ c lime juicePepper, freshly ground – about ½ t

½ c cilantro, finely chopped

1. Mix the fish sauce and water in a small measuring cup. Set aside.2. Add the sugar and a splash of water to a pan – the heavier, the better – and heat over

medium. 3. Mind the pan, but don’t disturb it until the sugar begins to melt. Then shake the pan

intermittently and carefully until the sugar is darkened and completely liquified.4. Turn off the heat. Taking great care not to splash, slowly add the fish sauce and water.5. Setting heat to medium again, whisk the liquid gently until combined, then add the

shallots. Stir until the shallots soften.6. Stir in the lime juice and pepper, then set the fish in the pan.7. Reduce heat to low and simmer until the fish is cooked through. Season with salt and

additional lime juice as desired.8. Garnish with cilantro and serve over rice, with sauce as desired.
