Long before the movie, Sideways turned the nation off on Merlot and on to Pinot Noir there was La Crema. Since 1979 this family-owned estate nestled in the Russian River Valley has establish an unmatched reputation for quality with a benchmark of consistently fine wines. Lush Pinot Noir grown in a classic Burgundy style where La Crema’s cool climate vineyards in Sonoma and Mendocino offer an unusually long, cool and even growing season. The 2007 vintage is exceptional and Winemaker Melissa Stackhouse has produced another award-winning wine with mouth-watering juiciness. Balanced acidity and sturdy tannins round out the mouth and this one of those wines that never disappoints and can always be recommended.

The Stage has opened in the old Spectator’s location in Sunshine Plaza.

Bodega Colomé Malbec Climbs In Wine Spectator ‘Top 100’ Again

The Bodega Colomé Estate Malbec 2007 vintage has once again received critical acclaim from across the globe, but also has been named as both a ‘Smart Buy’ and rated as #32 of the 100 best wines in the world by The Wine Spectator. This celebrated vintage also picked up 92-point ratings from both Robert Parker of The Wine Advocate and by The Spectator’s James Molesworth. Since the first vintage of Bodega Colomé Estate Malbec was released in 2006, this lush and juicy red from the mountains of Salta has established itself as the very best that Argentina has to offer. That 2004 vintage earned a 91-point rating, and ever since Colomé Malbec has been selected as one of the Wine Spectator’s ‘Top 100’ Wines in the World, but this year’s ranking at #32 ranking is the wines best showing to date. Colomé Malbec is

made with grapes from 90-150 year-old vineyards that are the oldest in the country and are from vines found

at the highest elevation in the world.

Andrew has had a remarkable career as a winemaker with over 37 vintages to his credit in the Barossa Valley. When it was released in select markets in 2006, Pango Rhum was the first new product that Rhum Barbancourt had released in over 30 years. More than a flavored rum, Pango starts with an ultra-premium aged dark rhum made from 100 percent sugar cane juice, then adds the flavors of tropical fruits laced with ‘Haitian Spices’. This unique combination of unexpected and unfamiliar aromas and tastes will take cocktails uniquely out of the mainstream. We used it in Mojitos, Coladas and mixed Pango Rhum with an assortment of juices, energy and soft drinks and we determined that it would give tropical cocktails a kick and recommend it as a great addition to the back bar. This is a unique but mixable “bottled rum punch” that can be enjoyed straight…on ice, or even over ice cream.

When Dr. Augustin Thompson of Union Maine introduced his new herbal soft drink Moxie way back in 1884, he called it “A delicious blend of bitter and sweet, a drink to satisfy everyone’s taste”. Moxie, was so well received that it became the first mass

produced carbonated soft drink in the United States, and it’s still sold today. Thompson knew how to create interest and claimed that Moxie contained extracts from a rare, South-American plant that a friend named ‘Lieutenant Moxie’ had discovered. Moxie’s flavor, more spicy and bitter than most modern soft drinks is a result of the herbal gentian root, and the flavor remains unique. The Moxie Man icon and the slogan ‘Make Mine Moxie’ remains popular in some areas and on May 10, 2005 the brand became the official state soft drink of Maine.

Zevia is all-natural, has zero calories, zero net carbs, zero fat, and little or no sodium, but it does include stevia, an herb native to South and Central America used for centuries to sweeten food. Stevia is hundreds of times sweeter than sugar and has no effect on blood sugar levels. Zevia is available in seven varieties, Natural Cola, Natural Orange, Natural Twist, Natural Root Beer, Natural Black Cherry, and Natural Ginger Ale.

Chocolate Libations Are The Perfect ‘Message In A Bottle’

Our discovery of the luxurious Botegga Gianduia has spurred a new respect for chocolate liqueurs and has motivated a bunch of ‘Outrageous Cocktail’ ideas here in the Underground. This luxurious liqueur is produced by Sandro Bottega, a producer and ambassador of grappa and an innovator of grappa-based liqueur. Crafted with Sandro’s artistry and ingenuity at his family-owned Distilleria Bottega, Gianduia combines a rich, smooth cream made from the popular soft Piedmontese chocolate Gianduia with fine grappa from the Alexander range. Bottega’s use of grappa in place of the common neutral spirit base has resulted in a refined and elegant liqueur, with rich velvety cream on the palate, with sumptuous flavors of chocolate and hints of the world’s finest hazelnut. Distilleria Bottega also has a family owned Venetian hand-blown glass facility, and Sandro Bottega also designed the frosted, tear drop-shaped bottle that is used for Botegga Sambuca and Botegga Limoncino

Chocolate Vodka Earns its Place on Back BarsChocolate Vodka Earns its Place on Back Bars The recent launch of the delicious 360° ‘Double Chocolate’ Vodka brings great value and quality to the category and we now have a wide variety of Confection Vodkas to choose from when making dessert cocktails. The popularity of Chocolate Martinis has created the demand for liquid sweetness in all types of on-premise retailers and the choices and supply of Chocolate Vodka is still relatively limited. While it seems there are dozens of fruited vodkas, Van Gogh’s Dutch Chocolate and Three Olives Chocolate Vodka have been the ‘either-or’ choice for a long time. While both are imported, both brands are known to have a basket full of flavors and Van Gogh’s Chocolate is one of 19 varieties while Three Olives has 17 flavors. Alchemia is a smaller artisan producer from Poland who distills only Ginger, Wild Cherry and Chocolate Vodka at a luxury price, but 360° ‘Double Chocolate’ is a high quality great value vodka made right here in America. It’s also the very first flavor extension of 360° Vodka the eco-friendly, four times distilled and five times filtered vodka. Premier Beverage Company distributes 360 Double Chocolate Vodka

Growing Consumer Curiosity for ChocoVine Creates BTG Feature

Following a busy holiday retail season, ChocoVine is sweeping the country and the idea of Chocolate Wine popping up on-premise is starting seem like a reality for the near future. The blend of fine French Cabernet combined with rich Dutch chocolate from Holland has created a silky smooth wine based adult beverage that can be served on the rocks, chilled straight up or in a multitude of cocktails. Even though the ‘cork dorks’ will shutter at the thought that ChocoVine may be the new ‘White Zin’, it will create after dinner drink sales and nightcap cocktail opportunities.

There are three traditional Mardi Gras colors…Purple, which stands for justice; green, which stands for faith; and gold, which stands for power

Carnival to Mardi Gras The Fun Begins With Colorful Costumes

And Tropical Cocktails Although it happens all over the world, just the thought of Carnival and more specifically Mardi Gras immediately starts the party. Even though it’s more of a sanctioned party with religious roots, each culture seems to let it all go in that the time period in-between Christmas and Lent. So while every tradition is a bit different, every celebration has plenty of colorful masks and feathers, exotic dancing and festive music and lots and lots of cocktails. We think of the beautiful culture of Brazil when we think of Carnival because of their passion for fun, the samba schools that parade every night, and all those over-the top costumes that are more like Vegas or the Moulin –Rouge. We all love the culture of New Orleans and that liberating feeling of Mardi Gras, and American flock to Bourbon Street for the ornate masks, the multitude of cocktails and certainly the quest for beads.

Quality Helps U.S. Embrace Cachaca Beyond the Caipirinha Where there’s a party you know there are beverages and for Carnival, the ‘Spirit of Brazil’ is Cachaca. Cachaca is often compared to rum, which is also derived from sugarcane; however, Cachaca is made from the pure juice of the cane without molasses. What we do know about Cachaca is that it’s the key ingredient in the caipirinha, Brazil’s famed lime and sugar cocktail. And since Americans seem to compare everything to Vodka, Cachaca has been misunderstood. We all know how many Caipirinhas are served in Rio and Miami, but while every cocktail program should include Cachaca-if you only have one you might try Sagitiba’s Velha. Aged in oak barrels and made from the best water sources available, Sagitiba’s Velha is a pot still Cachaca, fruitier and more distinctive in flavor and is a past double gold medal winner in the San Francisco World Spirits Competition. More like quality tequila, in Brazil Cachaca not only mixes better, but boutique brands can sell for over $600 per bottle.

FACT: Pat O’Brien’s signature Hurricane has been and always will be an important part of New Orleans culture. At the end of prohibition in 1933, Pat O’Brien converted his speakeasy to a legitimate drinking establishment in the 600 block of St. Peter Street. Business was good and the bar was always filled with neighborhood folks. It was always a game to get liquor at the right price and supply. As time went on he needed to create a new drink to help him get rid of all of the less popular rum that local distributors forced him to buy before he could get a few cases of more popular liquors such as scotch and whiskey. He used the juices of fresh passion fruit, oranges and lime along with grenadine with ample amounts of light and dark rum then poured the concoction into hurricane-lamp-shaped glasses put fruit on top and gave it away to sailors. It’s one of the most recognized cocktails in the world and the ‘Hurricane’ lives on.

CORKS, CASKS & CELLARSIN THE UNDERGROUND

Even though he oversees the harvest, blending, aging, and bottling of millions of cases every year, the name Randy Ullom isn’t on a label, and really is unknown to the vast number of people that serve and drink his wines. Ullom is a giant in the business and since March of 1997, Randy Ullom has had one the wine industry’s most prestigious and respected position as Winemaster for Kendall-Jackson Winery. The title Winemaster is unique because it represents his intimate involvement in the intricacies of the viticultural and winemaking programs of the entire portfolio. Randy Ullom and owner Jess Jackson have produced more award winning wines and more than your wine sales representatives will ever tell you. Just last year their flagship product, Kendall-Jackson Vintner’s Reserve Chardonnay, earned an unprecedented 90 points from the famed Wine Advocate Robert Parker and for contrast; it was seen on President Obama’s kitchen table. In 1993, Ullom

was hired by Jess Jackson to be the winemaker at Camelot Vineyards and also gave him the respect and responsibility of heading up a new Chilean operation as founding winemaker and general manager of Viña Calina. In 1996, Ullom helped Jackson establish wine production in Argentina with the Tapiz label and by 2006, he became the company’s Chief Operating Officer. Randy Ullom’s impressive organizational and leadership skills, combined with an exceptional winemaking talent that ultimately influences every wine Kendall-Jackson crafts, from grape to glass. “Being a family-owned company, we’re not as bound as other companies are to the quarterly income statement to the stockholders. We have a very long-term vision,’ said Ullom in a recent interview. As the new decade begins and consumer confidence becomes key to wine sales it may be time to embrace the passion of family winemakers like Jackson and Ullom and make sure our wine lists have the brands they know and trust.

Soon all consumers of California Wine will be able to tell how green their favorite wines really are. Winemakers and grape growers who forgo pesticides, sow cover crops, reduce waste and energy consumption, provide workers health insurance, and are mindful of their non-farming neighbors will be able to distinguish themselves as certifiably sustainable under a new third-party audit system that was the first order of action for 2010 by the Wine Institute, a public policy advocacy group. The Certified California Sustainable Winegrowing Program is part marketing tool, part voluntary self-regulation, and partly a way to help consumers navigate an increasingly complicated purchase of grape juice. “People do want to know that the products they purchase are grown and produced in some sort of sustainable fashion,” said Chris Savage, director of

environmental affairs at Gallo Wines. “Our expectation is it will become even more important in the future.”California is the world’s fourth-largest producer of wine. The state’s nearly 3,000 wineries produce 90 percent of the wines consumed in the U.S.

Over the next several years a return to growing, harvesting, and exporting Haitian Bleu, the flagship product of Haiti’s coffee industry, could help rebuild their economy. Haitian farmers saw the value in growing a better product for the booming specialty coffee industry and until hurricanes destroyed many fields in recent years, Haiti benefited from revenue from selling a higher quality Arabica coffee. In recent years, Haitian farmers have been educated in optimal growing and processing techniques with the help of the Fair Trade Coffee Association. A renewed demand for Haitian Bleu will be a huge incentive for farmers to continue to produce the best possible product. Help this effort by buying coffee or donating to providing seedlings directly to farmers at www.singingrooster.org

Doctors have told 35 million Americans to stop or cutback their morning coffee kick-start since its the leading cause of aggravating stomach troubles like heartburn and acid reflux. As a reply to warnings, industry leader, Folgers, will reposition its Folgers Simply Smooth brand by calling it “low acid” coffee while Puroast® Low Acid Coffee is debuting across the country. The Folgers showed slight reduction but Puroast was far less, registering at 50% lower in acidity.

COFFEE FACT: First brewed in 1892 as a special blend for the Maxwell House Hotel in Nashville, Tennessee the brew has been advertised as ‘Good to the Last Drop’ since 1917.

It looks like the deal is sealed that will put Heineken, Amstel Light and Newcastle Brown Ale on the same beer truck as Tecate, Dos Equis, Sol and Bohemia.

The Heineken Group out bid SABMiller to broker a deal valued at $7.6 Billion to buy the beer operations of Fomento Económico Mexicano, known as Femsa. Femsa is the largest beverage company in Latin America, exporting its products to the U.S., Latin America, Europe and Asia. Femsa’s other holdings include a majority stake in the largest bottler of Coca-Cola in Latin America and in OXXO, a large convenience store chain in the region. The beer division has presence in three of the largest beer markets in the world Mexico, Brazil and has a custom-crafted portfolio of 35 high-quality beer brands.

Scottish adults go through 25 per cent more alcohol than their UK neighbors do. According to NHS Health Scotland the average Scot, drinks the equivalent of nearly 540 pints of beer or 46 bottles of scotch whiskey a year. The figures suggest that Scots slightly

outdrink the Irish but are outdrinking the English and Welsh by 2½ pints of beer or 2½ large glasses of wine per week.

This crafty brew was born in the garage of Orlando resident Tom Moench, who after winning a bronze at The Great American Beer Festival, has contracted his Orange Blossom Pilsner to a South Carolina brewery. OBP pours to a fragrant nose and boasts 2.3 teaspoons of Florida orange honey in every serving, but only has hints of sweet. The honey creates the alcohol, and this pilsner drinks crisp, and finishes dry. Orange Blossom Pilsner ‘Squared’ or OBP2 packs a honeybee sting of 11% ABV.

Why is it we feel compelled to eat our way through Super Bowl Sunday?

Was Thanksgiving and Christmas so long ago that we desperately need this? I mean it has been a whole five weeks since New Year’s… are we in such dire straits that we must gorge ourselves and we must do so now? Except for Thanksgiving, more food and drink is consumed in America on Super Sunday than any other day of the year. Considering how fat we are (as a nation), that’s a WOW! Super Sunday is also where many dreams go to die. Not just the dreams of one team but the dreams of many overweight people. They have made their New Year’s resolution to start working out and watching what they eat. For five weeks, they are focused and dedicated to the cause. Then... things go horribly wrong. Has this scene played itself for you or a loved one? It’s Super Bowl Sunday. You have to watch but you can’t do it alone. So, you go to a party or you host one. The meal has as many courses’ as the pre-game show has hours (Minimum six). You begin by picking at the carrots and celery. Ten hours later, you’ve been drinking a bit and you’ve finished a bag of Dorito’s. In between, you’ve consumed the same amount of carbs as the entire winning offensive line during their pre-game meal. It’s the next morning where you wake up and either get back on the treadmill (so to speak) or you give up the fight for another year. So there is an awful lot riding on Super Bowl Sunday. There’s immortality for the winning team, financial viability for many sports bars and restaurants, and a struggle of waistlines and cholesterol levels for millions of us. What’s an American to do? That’s silly. It’s the Super Bowl. For better or worse, it says as much about America as the Fourth of July! So while you’re being a great American, make sure you bet illegally on the game too.

So eat, drink, gamble and be merry! A nation is counting on you. Don’t let her down.

It was pretty brave taking on the 13,000 square foot monster formerly known as Dwyers, but Rob DeGennaro’s Icabod’s theme was a big hit and packed them in last season. Although the huge 364-seat restaurant that featured

a giant menu, live music and a troll theme held its popularity, the rent loomed large and Icabod’s abruptly closed on January 23, 2010.

The Pavillion in Naples that is directly across from Mercato will see a piano bar with a tropical wave open this month. The Keys Bar & Grill will feature a dueling piano bar and will open between Grumpy’s Tavern and the China Pavillion and hopes to draw a local and laid back crowd.

A European chain restaurant launched in Naples, Italy, in 1997, opened its first restaurant in the U.S. and in Naples Florida this week. Rossopomodoro opened at Fifth Avenue South and Eighth Street South. Until 2006, it was the location of Naples Fifth Avenue Pharmacy for 35 years, and the site of Rexall Drug Store in the sixties.

Mike D’Angelo is a new account representative for Opici in Naples but he’s far from new to the industry. For the past several years Mike was the general manager and maintained the huge inventory and record sales at the ABC Liquors on Immokalee Road. Voda, the new lounge and nightclub coming to the Promenade in Bonita will have the largest selection of vodka in SW Florida.

The Late Night Bar Business is never typical and is always far from usual but the chase for the late night weekend dollar is an especially difficult struggle in the high-energy dance and nightclub scene. The latest twist sees Venu closing in Downtown Fort Myers and Voda scheduled to open in early March in the Promenade Shops in Bonita. Voda will be owned and operated by Ryan Sherry and his new location called Voda, which translates to ‘water of life’, will feature the largest selection of vodka in any nightclub in the state. For a starting point let’s define nightclubs as those 4-cop license holders that typically must derive at least 90% of their revenue from the sale of alcohol, and that are not restaurants that become ‘clubs’. That nightclub deck got a shuffling when The Blue Martini and all that is ‘Mercato’ turned SWFL’s collective heads, but the honeymoon lasted long enough to change business for many. Sway Nightclub tried big name, high dollar entertainment but called it quits before Christmas and Club Vegas in East Naples never seemed to turn on all the lights. But from Immokalee Road to Bonita the night life is alive and well and the favorite of thousands who party at Ultra on Wednesdays, Vision on Thursdays and both places every weekend. Vision has Southwest Florida’s longest running Latin Night every Friday and the new V Lounge has drawn crowds from throughout Southwest Florida. Ultra and Privilege located in a strip plaza at the County line will be north of Vision and south of the new club Voda. When Voda enters the market it will relight the upstairs club that was successful as Aja. That upstairs club never opened following the downstairs flop of the short lived ‘Alligator Rocks’ concept.
