    Welcome to our readersWhat a fast year this has been. Now as we are rapidly heading towards Christmas and another New Year most of us are looking forward to this time of the season.

    Christmas is a time for families, for getting together and enjoying the seasons treats. Like a visit to the Pantomime or taking the children to visit Santa. It is also the time to seek out those special gifts for all your family, friends and those excited children.

    Falkirk, Grangemouth, Boness and surrounding areas all have such a variety of unique shops as well as some

    of the nation`s favourites. Make this year the time to shop locally and support the small independent stores who will be able to o er you a wide range of di erent and unusual gifts. When you are out shopping why not treat yourself to a little lunch or a glass of wine in the many Bars, Restaurants and Cafe`s that abound around the district.

    Whatever you are planning to do this Christmas and New Year most of all enjoy yourself, relax have fun and remember the true meaning of Christmas is more than just gifts. The best gift is the gift of time spent with people you love and care for.

    No British Christmas is complete without a classic

    Christmas Cake. Easy if you prepare and weigh all the

    ingredients and line the tin before you start.

    A Christmas cake can be made 2 months before Christmas

    for it to mature and to be fed at regular intervals with

    brandy. If you are making it later, dont worry, it will still

    taste good.

    If you have time, you can also soak the dried mixed fruits

    the night before in a little extra brandy and proceed with

    the recipe next day. Makes an even more moist cake.

    Ingredients 1lb 2oz/525g currants

    8oz/ 225g sultanas 8oz / 225g raisins 4oz / 110g mixed candied peel, fi nely

    chopped

    6oz / 165 glace cherries, halved

    10oz/ 300g all purpose or plain fl our

    Pinch salt level tsp mixed spice

    level tsp ground cinnamon

    level tsp freshly ground nutmeg

    2 sticks / 300g butter, slightly softened

    10 oz / 300g soft brown sugar

    Zest of lemon 6 large eggs, lightly beaten

    3 tbsp brandy, plus extra for feeding

    Prep Time: 60 minutes

    Cook Time: 3 hours 30 minutes

    Total Time: 4 hours 30 minutes

    Traditional British Christmas Cake Recipe

    PreparationHeat the oven to 300F/150C/Gas 2

    The temperature is low as the cake needs a long slow

    bake.

    Line a 9 inch cake tin with 2 thicknesses of parchment

    or greaseproof paper. Tie a double band of brown or

    newspaper paper around the outside. This acts as an

    insulator and to prevent the cake from burning on the

    outside. In a large roomy baking bowl mix the currants

    , sultanas,

    raisins, peel and cherries with the fl our, salt and spices.

    In another large bowl cream the butter with the sugar until

    light and fl uffy. Stir in the lemon zest. Add the beaten egg

    to the butter mixture a little bit at a time, beating well

    after each addition - do not try to rush this process as the

    mixture could curdle. If it does curdle simply add a tbsp

    of fl our and mix again, this should bring the mixture back

    together. If it doesnt come back together, dont fret, the

    cake will still be delicious.

    Carefully fold in half the fl our and fruit into the egg

    and butter mixture, once incorporated repeat with the

    remaining fl our and fruit. Finally add the brandy.

    Spoon the cake mixture into the prepared cake tin

    making sure there are no air pockets. Once fi lled smooth

    the surface with the back of s spoon and make a slight dip

    in the centre (this will rise back up again during cooking

    and create a smooth surface for icing the cake).

    Finally, using a piece of paper towel clean up any smears

    of cake batter on the greaseproof wrapping, if left on they

    will burn, and though it wont affect the cake, it doesnt

    smell too good.

    Stand the tin on a double layer of newspaper in the lower

    part of the oven, if you have a gas oven ensure the paper

    is well away from the any fl ame, and bake for 4 hours.

    If the cake is browning too rapidly, cover the tin with a

    double layer of greaseproof or parchment paper after 2

    hours. During the cooking time avoid opening the oven

    door too often as this may cause the cake to collapse.

    After 4 hours check the cake is cooked. The cake

    should be nicely risen and a deep brown all over. Insert a

    skewer or fi ne knife into the centre of the cake. If there is

    sticky dough on the skewer when you pull it out it needs

    cooking longer, if it is clean, the cakes done and remove

    from the oven.

    Leave the cake to cool in the tin on a wire rack for

    an hour, then remove from the tin and leave to cool

    completely. Once cooled prick the surface of the cake

    with a fi ne metal skewer and slowly pour over 2 - 3 tbsp

    brandy. This feeding should be repeated every two weeks

    up until Christmas.

    The cake should be stored wrapped in greaseproof or

    parchment paper in an airtight tin.

    Winter Cocktail Winter Cocktail Recipe Collection Winter Cocktail Midnight SnowstormThis recipe for a Midnight Snowstorm is very welcoming using crme de menthe. The minty, chocolate fl avour is so very smooth and creamy.

    Use white crme de menthe inside the drink and add green crme de menthe on top of the whipped cream for a little colour.

    Ingredients2 ounces white crme de mentheHot chocolate1/2 ounce green crme de mentheWhipped creamPrep Time: 6 minutes

    Preparation1. Pour white crme de menthe and hot chocolate into an Irish co ee glass.2. Top with whipped cream.3. Drizzle the green crme de menthe on top.

    Polar Cocktail The Polar Cocktail is an interesting classic cocktail that was fi rst found in the 1939 bartending guide, Just Cocktails. The name is slightly deceiving because it doesnt contain any of the fl avours we would typically associate with polar - no mint, chocolate or even brandy or whisky here - no, it is simply gin, maraschino, lemon and egg. Maybe it is the foam the egg creates on the top of the drink that made someone think of a winter frost.

    However it received its name, it is a great cocktail for this time of the year.

    Ingredients1 1/2 ounces gin1 1/2 ounces maraschino liqueurJuice of 1/2 a lemon1 egg whitePrep Time: 3 minutes

    Preparation1. Pour the ingredients into a cocktail shaker fi lled with ice.2. Shake vigorously to ensure the egg is fully mixed.3. Strain into a frozen cocktail glass.

    Recipe Collection Winter Cocktail Recipe Collection Recipe CollectionIceberg CocktailAn Iceberg is an easy, two-ingredient cocktail that can take on two completely di erent tastes depending on which liqueur you choose. For a subtle anise, choose Pernod or, if youre in the mood for a minty drink, go with peppermint schnapps.

    Why this drink has two polar opposites is beyond me, but either variation is a nice winter sipper.

    Ingredients2 ounces vodka1 teaspoon Pernod or peppermint schnappsPrep Time: 3 minutes

    Preparation1. Pour the ingredients into a cocktail shaker fi lled with ice.2. Shake well.3. Strain into a chilled cocktail glass.

    Irish WinterThe Irish Winter brings together two of my favourite ways to drink co ee. It is a subtle transformation of the classic Irish Co ee recipe by including the new Kahlua Co ee Cream, one of my favourite enhancements for the average cup of co ee. The same Irish whiskey, co ee, and luscious whipped cream topping are in this drink, but it is that liqueur that brings a unique creaminess to the base of the drink.

    Ingredients1 part Kahla Co ee Cream1 part Jameson Irish WhiskeyFreshly brewed co eeWhipped cream for garnishPrep Time: 3 minutes

    Preparation1. Combine ingredients in a mug or Irish co ee glass.2. Stir to combine.3. Top with whipped cream.

    It was Christmas Eve and the frost fairies were busy getting ready for Christmas Day. First of all they spread the loveliest white snow carpet over the rough, bare ground; then they hung the bushes and trees with icicles that fl ashed like diamonds in the moonlight. Later on, they planned to draw beautiful frost pictures on the window panes, to surprise the little children in the morning.

    The stars shone brightly and the moon sent fl oods of light in every nook and corner. How could anyone think of sleeping when there was such a glory outside!

    Jessie and Fred had gone to bed very early so they might be the fi rst to shout Merry Christmas! but their eyes would not stay shut.

    Oh dear! It must be most morning, said Fred; let us creep softly down stairs and maybe well catch Santa Claus before he rides o .

    Hand in hand they tiptoed to the dining-room and peeped out the big window - surely, surely, that was something climbing up the roof of cousin Nellies house; it must be old Santa. Fred gave a chuckle of delight; to be sure the reindeer were very queer looking objects, and the sleigh such a funny shape, but the children were satisfi ed.

    The old fi r tree, whose high branches almost touched the roof, knew all about those shadows, but it was so old no one could ever understand a word of the many tales it told.

    Theres something scratching on the door, whispered Jessie; but it was only a mouse, who

    had sni ed the delightful odours of the Christmas goodies and was trying his best to fi nd a way into the pantry and test them with his sharp teeth.

    Come, said Jessie, well turn to icicles if we stay here much, longer; so up-stairs they quickly scampered.

    Papa had been to town on an errand, so it was quite late when he came home. As he was hunting in his pockets for his key, he heard a pitiful cry, and looking down he saw a big, white cat carrying a tiny kitten in her mouth.

    Poor thing, said papa, you shall come inside till morning.

    Santa Claus had been there with the nicest wagon for Fred and a warm, seal-skin cap that lay right in the middle of it. When papa left the room, puss and her kitty were curled up comfortably on the rug singing their sleepy song.

    The sun was shining brightly in the dining-room window when Jessie and Fred made their appearance; then Fred just laughed with delight, for right in the crown of his new cap lay the cutest white kitten, with big, blue eyes and wee pink nose, while standing close by as if to guard her darling from danger, was good old mother puss.

    I never had a live Christmas present before, said Fred, now I know Santa Claus read the letter I threw up the chimney because I told him to bring me a kitten and here it is.

    Papa smiled and looked at mamma, and then everybody said Merry Christmas at once.

    Network Rail is replacing Station Road Bridge, PolmontNetwork Rail will shortly begin work to replace the bridge over the railway at Station Road, Polmont as part of the Edinburgh Glasgow Improvement Programme(EGIP) which will deliver electrifi cation of central Scotlands rail network.

    Representing a 2.25m investment in the railway infrastructure, the work begins in January 2015, and will last for nine months. A diversion route will be in operation throughout and once confi rmed with Falkirk Council, we will distribute an information leafl et to households detailing the route.

    The bridge replacement in Polmont is part of a series of similar projects throughout the central belt designed to ensure there is enough clearance above the rails to run overhead electrifi cation cables below the bridges safely.

    Work to prepare for the demolition of the 125 year old bridge is scheduled to

    commence in January 2015 and a full road closure will take place from 12th January until late October to replace the existing bridge. A temporary pedestrian footbridge will be installed to maintain pedestrian access during the work.

    Main demolition of the bridges is planned for mid June. The primary focus for Network Rail and contractor Morgan

    Sindall is to keep disruption to a minimum and deliver work safely on this this structure on schedule.

    Network Rail has now delivered clearance work at 48 structures with a further 10 planned for completion through 2015/16 as part of an overall investment of circa 60m preparing for the electrifi cation of the railway.

    This included the recently completed replacement of bridges at Redding Road and Hope Street in Falkirk which have both contributed signifi cantly to improving the road network as well as the railway.

    David Dickson, Network Rails route managing director for Scotland said;Extending electrifi cation across central Scotland is key to unlocking additional capacity, reducing congestion and ensuring that longer trains provide more seats for passengers, particularly at intermediate stations such as Polmont.

    While we understand that

    bridge works are inconvenient for people who live close by, we are grateful for the patience shown by the local community as we deliver this important work.

    Post-electrifi cation, Polmont will benefi t from faster journey times and higher seat availability on services to both Edinburgh and Glasgow with more reliable and resilient services on quicker, quieter, greener trains.

    Network Rail is hosting a number of community drop-ins throughout November and December to give everyone in the area the chance to meet the project team and fi nd out more about the work, how it

    may e ect them and to ask any questions. The project team will be visible in the community throughout the work and are happy to respond to any enquiries or questions about the project.

    I had a wasp nest on my roof. The council said it would be two weeks before they could attend to

    it. I phoned this morning, he came this afternoon. Wasps gone. Nick Finnigan was great. Phoned

    when he was on his way, had a look to check the problem, came in (and ladies, he covered his shoes!)

    checked the loft, went up on the roof, did the job and that was it done. Said to phone back if there were any more signs of wasps but didnt expect it to be a problem. Very nice, personable guy, very

The card was issued from the o ce of one of the periodicals of the time - Felix Summerleys Home Treasury. The fi rst Christmas card was fi rst lithographed and then coloured by hand.

    The Christmas Custom and Origin of Christmas CardsChristmas and New Year Cards were fi rst circulated in England in 1843. In 1843 not more than a thousand copies were printed - and that was considered a large sale of Christmas cards! The penny post had been introduced in 1840 which made it relatively inexpensive to post Christmas cards. Xmas cards fi rst mailed in England by W.C. Dobson. The fi rst Christmas cards were posted in America one year later in 1846. The numbers of cards distributed annually soon increased to tens and hundreds of thousands and there are now millions of Christmas cards sent every year.

    The First Christmas CardMr. J. C. Horsley, who was a member of the Royal Academy, designed the fi rst Christmas card which was sent out in 1846. It was designed at the request of Sir Henry Cole. It represented a family

    Cards and Crackers

    Christmas Crackers pagan, religious or modern? The Christmas Custom, Origin and History of Christmas Crackers is modern. They have no religious signifi cance. The shape of modern crackers is now a cylindrical cardboard tube with a paper type handle twisted on each end for two people to hold. The idea of Christmas Crackers is to pull the cracker together and the winner of the contents of the cracker is the person who holds the end containing the items. Christmas Crackers remain a popular tradition of at parties and at Christmas dinner, every guest gets a cracker.

    The Origin and the History of Christmas CrackersThe inventor of Christmas Crackers was a sweet maker, baker and pastry chef called Tom Smith from London, UK. He invented them in Victorian England in 1846 and they were fi rst sold by his confectionary company in 1847. Confectioner Tom Smith got the idea for creating Christmas crackers from the sugar almond sweets that he sold as they were wrapped in twisted coloured paper. These were styled on bon bon sweets he had seen in Paris, France. Tom Smith made them more fun by enclosing a motto or romantic message in each cracker and named them Kiss Mottos.

    The History of Christmas Crackers - The SnapAfter the success of his original Christmas crackers he added a snap to make each cracker to make the sound of a small fi rework cracker, as the cracker was pulled. He used the gunpowder compound saltpetre to ignite, by friction, the cracker to produce the sound with a chemically impregnated strip of card. He had to make the sweets larger so that the cracking components would fi t in. He was inspired to add the cracker element when he heard the crackle of a log hed just put on the fi re. The size of the paper wrapper had to be increased to incorporate the banger mechanism, and the sweet itself was eventually dropped, to be replaced by a small gift.

    The History of Christmas CrackersHe called his Christmas cracker a cosaque because the bang or cracking sound reminded him of the sound of a Cossack whip. His product grew in popularity and soon became known as a Christmas cracker rather than cosaques. He opened a factory to increase his his Christmas cracker production. As time passed progressed other items have been added such as a paper hat, jokes and joke and novelty toys. Toms son Walter had the idea of including paper hats. He also helped to write the mottos and sayings. His company grew and continued to manufacture Christmas crackers until 1953 when they merged with the company Caley Crackers.
