LAUGHTER ... IS GOOD MEDICINE

Jesus, Moses, and an old man go golfing.

The first one to tee off is Moses. He smashes the ball and it is heading right for the water hazard before the green.

Moses raises his club, the water parts, and the ball makes it to the green. Jesus gets up to swing, cranks it out, and it is headed for the water hazard.

Jesus closes his eyes and prays. The ball skips across the water and lands on the green two feet from the hole.

The old man’s turn comes and he drives the ball. The ball looks like it is going to drop directly into the water.

A fish jumps from the water hazard swallowing the ball, as an eagle drops from the sky, grabbing the fish.

As the eagle flies over the green, a bolt of lightning strikes the eagle, making it drop the fish.

As the fish hits the green, it spits out the ball and the ball falls into the hole, making a hole in one.

THE UNKNOWN WORLD

THIS MONTH WE LOOK AT THE LITTLE ISLAND OF BORNEO

Borneo is a little island that sits off a small country called Brunei. Located on the N Coast and surrounded by Malay-sia. King Hassanal Bolkiah is the ruler of Brunei, and his family has ruled the country for the past six centuries.

Borneo is the third-largest island in the world and the largest island of Asia, boasting its land mass of 743,330 square kilometres.

The island is divided among three countries: Malaysia and Brunei in the north, and Indonesia to the south.

Brunei has nine mountain peaks that range from 775 feet to 3,772 feet in height, which offer many forest reserves for the hiker and adventurer. When coming for s visit, you can catch a baseball game at Sultan Hassanal Bolkiah Stadium or visit the Malay Technology Museum.

It is best to visit the country between October and February, because the rest of the year is very hot and humid.

Recipe Card

Royal Icing RecipeINGREDIENTS: 3 T Meringue Powder, 4 C Confec-tioners Sugar, 5T Warm Water

MAKES 3 C ICING

Beat all ingredients until icing forms peaks (7-10 min @ low speed with a heavy duty mixer, 10-12 minutes at high speed with a hand held mixer)

If using a large countertop mixer,or for stiffer icing use 1T less water

To think for pouring, add 1t water per cup of icing. Use grease free spoon or spatula to stir slowly. Add 1/2 t warter at a time until you reach the cor-rect consistency

Royal Icing is used in cake and cookie decorat-ing. This is a very handy recipe to know and to save for the next decorating project you begin.

Mom Moments ... They are only little once. We get no redos and we get no time off the clock. It is now or never, and it is no easy job. As James Dobson said, Parenting is not for whimps. This is a true statement.

While there are many how to books on Parenting, there is no manual. This is because everyone has their own ideas of what is wrong and right. We have to figure most of it out on our own, because we are the only one who knows our child the way we do.

One of the main steadfast rules in all parenting models is, however, consistency. This must be a factor in our every day lives and a part of every decision we make as parents. We must be consistent. Even when we blow it and make the mistakes of a lifetime, we must remain consistent. This is what brings our children security and balance in life and without it they will not know what to expect or what is expected of them. Without it we are setting them up for disaster and also setting our homes up for complete chaos.

No one likes to be around child monsters... However, they are everywhere. The problem is, the parents do not see them ... they are oblivious to the monster their child has become. This is usually a sign that there is no consistency in the family structure. No one has to abuse their child, you do not even have to be one to believe in spanking a child ... but the discipline you choose must be consistent.

I suggest reading books on the parenting model you have chosen and then speaking to those parents whom you admire the children they have raised and then take to heart what you read and hear and apply it. ... and then remember that love covers a multitude of sins ... Love them, Love them and ... LOVE THEM! (smile) ##

Kitchen Crax & Hax ...

Keep potatoes white. Cover shredded or diced potatoes with cold water before cooking to prevent the spuds from turning that gross grayish/brown caused by the release of a starch that makes them oxidize.

Slow down rotting. Store tomatoes stem end down to keep them from spoiling as quickly. This prevents air from entering and moisture from exiting the scar where the tomato once attached to the vine. Storing them at room temperature rather than in the fridge also makes them last longer.

Give bananas a longer life. Keep bananas fresher, longer by wrapping the end of the bunch with plastic wrap. Better yet, separate each banana. The plastic wrap blocks eth-ylene gases from releasing out of the stem, consequently ripening the fruit too fast.

Speed up ripening. Be a total magician and morph a ba-nana from green to yellow or a peach from crunchy to juicy all with the help of a paper bag. When fruit is tossed into the bag, concentrated ethylene gas helps it ripen faster.

Save cut fruit from browning. You’ve probably heard that a little squeeze of lemon juice can keep apple slices from looking unappetizing. A mixture of one part honey to two parts water works much the same to keep fruit from brown-ing. The citric acid and vitamin C in lemon juice as well as a peptide in honey slows down the oxidation process that causes discoloring.

Prevent brown sugar from hardening. Help brown sugar stay soft and scoopable by tossing an orange peel or a slice of apple along with the sugar into an airtight contain-er. For a quick fix, microwave brown sugar next to a small glass of water. The moisture within the microwave will help break up the block of sweetener.

Avoid plastic wrap disasters. Had enough of wrangling plastic wrap? Store the roll in the fridge to store leftovers with less of a hassle. Chilling the wrap makes it easier to transport it from the roll to your bowl.

Check if eggs are still edible. Gently place raw eggs in a bowl of cold water to see if they’ve gone bad. If the egg sinks to the bottom, it’s a-OK. If it floats, it has seen better days. Over time, the liquid inside eggs evaporates through the porous shell, leaving a gas bubble inside. The floatier it is, the older it is.

From the Editor’s Desk ...

Winter time ... Growing up in Washington State, I was always one who liked the snow of winter, but did not like the cold that accompanied it. Since it was impossible to separate one from the other, I suffered through the cold to enjoy the beauty of a fresh fallen snow. I guess it was a love, hate relationship.

Now that I am older and have moved to Arizona, I miss the beauty of the snow I hear of, but again, I still do not miss the cold. When I hear of what the people go thru in the winter, in some areas, I shiver just thinking of it. I am not sure how peo-ple survive when it is in negative digits. I do not know that I could do it.

While we have extreme temps here in Arizona, there is air conditioning everywhere you go, and it is easy to avoid being outdoors until it is cool-er, so I truly think this is a perfect climate for me. Other than those few months in the monsoon season, the rest of the year is heaven on earth. Winter is my favorite time of year here, as I am out in light shirts, flip flops and maybe a jacket in the evening. I can go anywhere, anytime day or night and be comfortable. It is like vacation para-dise every day here.

If you are stuck in an area of the country that you feel as though winter may never end, think of relocating to a new climate and try it. we tend to remain where we are planted ... but why? Adven-ture is fun and we all need a bit of it in our life. Check out a new place and explore the possibili-ties!
