PREPARATIONNonya Spice Blend• In a blender, blend all ingredients till smooth.

Nonya Paste• In a pot, sweat Nonya spice paste, Knorr South East Asian Spice Paste and lime leaves till fragrant. • Fold in pineapple puree, sugar, tamarind sauce and bring to boil.

Nonya Sauce• In a pot, boil Nonya paste and water.

PREPARATIONLuo Han Guo and Longan Base• In a pot, bring water to boil, add luo han guo, longan, rock sugar and simmer for 45mins.• Strain base, reserve longan and set aside.

Jelly Base• In a pot, bring luohan and longan base to boil.• Whisk in Knorr Concentrated Tamarind Sauce and Carte D’or Vanilla Flan Mix.• Bring to boil and fold in logan meat.• Set into desired wares or mould.• Let it set in chiller overnight.

Osmanthus Sugar Syrup• In a pot, all in all the ingredients and bring to boil.

PREPARATIONSticky Dates Mixture• In a pot, add all the ingredients, bring to boil. Cook dates till soft.• Set aside and cool down.

Butter Mixture• Using a kitchen mixer, cream butter and sugar till smooth.

Egg Mixture• Fold egg mixture into the kitchen mixer.

Flour Mixture• Gradually add in flour mixture into mixer, mix well till smooth.

Sweet Tamarind Sauce• In a pot, mix all the ingredients and bring to boil.• Ensure mixture is smooth.

Before serving• Preheat oven to 180 degree Celsius.• Lay grease proof paper onto desired baking mould.• Pour batter mixture onto baking mould.• Bake in water bath for 30 mins.• Once pudding is cooked, pour sweet tamarind over and let it soak up all the sauce.• Portion the pudding.• Garnish and serve.

Phyllo Pastry Roll• Preheat oven to 175 degree Celsius.• Mix well flour and egg white.• Lay phyllo pastry, brush clarified butter and sprinkle ground almonds. Repeat process till you had gotten 6 layers.• Lay 200gm of fig compote and wrap with phyllo pastry.• Apply flour mixture to seal the corners.• Bake in oven for 20 mins till pastries is cook and golden brown.

千层油酥皮卷• 预热烤箱至175度。• 充分混合面粉和蛋白。• 将千层油酥皮铺平,刷上一层澄清牛油, 并撒上杏仁粉。重复动作,直到叠上了 6层酥皮。• 用叠好的酥皮包裹200克的糖煮无花果。• 再用调好的面糊封口。• 放入烤箱烤20分钟,直至金黄色。
