COMPANY BACKGROUND

While Bubbies Homemade Ice Cream & Desserts was born and raised in the picturesque Hawaiian Islands, its heritage goes back to the Finger Lakes area of upper New York State where a young Keith Robbins learned how to produce quality ice cream under the tutelage of a master crafter, Pat Mitchell. By the time Keith finished college, his destiny was sealed in ice: premium, handcrafted ice cream.

After moving to Hawaii and earning a degree in nutrition from the University of Hawaii, School of Public Health, Keith began to experiment and develop ice cream with local natural ingredients and exotic Hawaiian flavors.

By 1985, Keith had opened his first ice cream parlor a few blocks from the Manoa campus in Honolulu. The ice cream was manufactured one flavor at a time and Bubbies Homemade Ice Cream was born. Naming his new product was not an issue – Keith gave his product the name of the woman who first introduced him to ice cream, his Bubbie (grandmother).

Within weeks of launching, Bubbies began to grow its reputation and production was soon expanded to serve more than the over-the-counter, single-cone consumer. The natural flavor and texture of Bubbies earned a fast-growing reputation and repeat customers spread the word.

In the early 2000s, Bubbies shifted its primary focus to producing mochi ice cream, a Japanese-style premium dessert consisting of ice cream wrapped in specially prepared sweet rice flour dough. With the explosive popularity of mochi ice cream, Bubbies’ distinctive taste and texture propelled it to becoming one of the most coveted sweet treats in the world.

Today, Bubbies mochi ice cream desserts are shipped to international destinations including Mexico, Europe, Scandinavia, Russia and the Middle East. Bubbies is available in mainstream markets, specialty retail outlets, resorts and restaurants throughout the United States. Expanded manufacturing operations and production capacity have created additional mochi options for consumers, retailers, resorts and restaurants. Rick Schaffer, Chief Executive OfficerRick Schaffer is CEO at Bubbies Homemade Ice Cream & Desserts. Rick brings decades of accomplished leadership in the consumer food industry successfully positioning, selling and marketing food brands to a wide range of end-users. Rick’s expertise includes the entire lifespan of retail brands from sourcing, manufacturing, merchandising and marketing. Rick has the deep knowledge and expertise to successfully elevate and bring added value to brands in the Consumer Packaged Foods (CPG) industry.

Most recently, Rick was Vice President of Retail Sales at Elk Grove Village, Ill.-based Grecian Delight Foods, a leading supplier of Greek and Mediterranean foods to the retail and consumer industry. Previously, Rick served as Vice President of Sales, Frozen Division, at Inventure Foods, Inc. The publicly traded Phoenix-based Inventure Foods brands include Jamba, TGI Fridays, Poore Brothers, Boulder Canyon Foods and Nathan’s Famous.

As Vice President of Sales and Marketing at Taunton, Mass.-based Tribe Mediterranean Foods, Rick led a team that marketed the hummus brand to grocery retailers around the U.S. In addition, Rick spent more than 10 years as a Vice President of Sales at Seattle-based Ocean Beauty Seafoods, Inc., a premium provider of sustainably sourced seafood to consumers around the U.S.

Brian Locke, CPA, Chief Financial Officer Brian Locke is the CFO of Bubbies Homemade Ice Cream & Desserts. Brian is an energetic and conscientious financial executive with 24 years of seasoned progressive leadership and advisory experiences across Big Four public accountancy, U.S. and U.K. public companies and entrepreneurial private industry. With a proven ability to inspire and execute financial objectives in challenging environments and industries, Brian provides sound stewardship over Bubbies’ financial operations, internal/external reporting, control environments and risk management.

Brian started his career in New York as an auditor with Price Waterhouse, LLP in their financial services practice and served as a Controller for Tullet Prebon, PLC, a U.K.- headquartered Wall Street inter-broker dealer. Brian’s diverse experience set also includes a CPA consultancy with the Siegfried Group, LLP and tenure as Corporate Controller for Inventure Foods, Inc.

Most recently, Brian completed a four-year run as CFO at Scottsdale, Ariz.-based China Mist Tea Company with stewardship over its sale to Farmer Brothers’ Inc. in late 2016.

Katie Cline, Director of Marketing Katie Cline is Director of Marketing at Bubbies Homemade Ice Cream & Desserts. Katie is an experienced and diversified marketing professional with a strong background in leading cross-functional teams in the marketing, development and implementation of CPG brands. During her career, Katie has managed local and national marketing campaigns for household brands including Southern Comfort, Finlandia Vodka, Boulder Canyon Foods, TGI Fridays, got2b and Nathan’s Famous.

Before joining Bubbies, Katie was a Brand Manager, Beauty Care, for German-based Henkel, a global conglomerate that manufactures several notable CPG brands. Previously, Katie served as Senior Brand Manager for Phoenix-based Inventure Foods, Inc. At Inventure, Katie led the Snack Division’s marketing efforts resulting in the successful research, development and launch of several new and existing brands.

Katie earned an MBA from Arizona State University’s W.P. Carey School of Business and a bachelor’s degree in marketing from Buena Vista University in Storm Lake, Iowa.
