CAREERS AND EMPLOYMENT EXPOFor students who are graduating, looking for casual work or interested to know more about career pathways and opportunities, the Careers and Employment Expo is an excellent opportunity to explore all the options and market themselves by interacting with potential employers. The Expo allows you to meet over 30 industry organisations in one place, sharing knowledge and insights and highlighting why they are a workplace of choice for skilled and trained students. Exhibitors such as Rockpool Dining Group, Hamilton Island, InterContinental Hotels Group, Delaware North, The Langham Melbourne and Luxury Escapes attended the Expo in 2017.
MENTORING PROGRAMThis program is available to students studying for any Bachelor degree and is designed to provide students with exposure to the realities of their chosen industry by pairing them with an industry mentor across an eight month period. The program will give you the opportunity to:

networks – Identify your interests and skills and
match them to appropriate careers – Broaden your knowledge of the

INDUSTRY ENGAGEMENTIndustry representatives are on campus regularly, engaging in a range of activities and sharing their time and insights into their fields with you. These include partnerships offering practical experience in major events such as the Melbourne Food and Wine Festival, networking events, on-campus recruitment drives, and guest speakers and mentoring. You are given opportunities to gain valuable experience to ensure a smooth transition from study to work.
NATIONAL INDIGENOUS CULINARY INSTITUTEThe National Indigenous Culinary Institute (NICI) is a national program that creates highly skilled Indigenous chefs. Running since 2012, the NICI gives Indigenous Australians the opportunity to work with some of Australia’s top chefs in leading Melbourne or Sydney restaurants that support Indigenous culture.William Angliss Institute has partnered with NICI to run the Indigenous Trainee Chef program, a three year course that pays Indigenous people while they train and gain excellent experience in top Melbourne or Sydney restaurants with internationally renowned Culinary Guardians that include Neil Perry, Guillaume Brahimi, Matt Moran, Peter Doyle, Michael McMahon and Barry McDonald.There are a number of other Indigenous programs available at William Angliss Institute.

WORK ABROADWilliam Angliss Institute qualifications are internationally recognised with many graduates moving on to establish their career outside of Australia. Work opportunities are also available to students while they complete their qualification. The Careers and Employment team are available to assist with working overseas opportunities.You can also take advantage of interstate opportunities and work and travel Australia at the same time to see different parts of the country. Students and recent graduates have been recruited to work at the Sheraton Grand Mirage at Port Douglas, outback camp Longitude 131° at Uluru-Kata Tjuta and Hamilton Island.
DISNEY CULTURAL EXCHANGE PROGRAMSDisney International Programs have been visiting the Institute since 2008. Students from all program areas have flocked to the opportunity to participate in six or 12 month paid internships at Orlando, Florida, with Disney selecting many William Angliss Institute students every year.
As part of Disney International Programs, you can experience a once-in-a-lifetime opportunity to learn from one of the world's most innovative entertainment companies.
Living and working at Walt Disney World Resort allows you to connect with people from across the globe and create lifelong memories. Interns gain valuable leadership, presentation and customer service skills – all things that Disney is known for worldwide.
Bachelor of Tourism and Hospitality Management student Sarah Jenkins completed the 12 month internship at Disney World, Florida.
“The Disney International Program changed my life forever, and I encourage all students to complete this program. I met amazing people who I now call my best friends, I had supporting mentors from Disney who I keep in touch with and my skills in hospitality have since been recognised by many and have assisted me in securing a job at the Novotel Melbourne on Collins as a result. When I complete my degree this year, I plan to work on the Disney Cruise Line and further my career in the best way possible. If you can dream it, you can do it so dream a little harder and you’ll see yourself at the happiest place on earth", Sarah said.

INTERNATIONAL STUDY TOURSStudy tours can vary from two weeks to over a month in duration. They offer a glimpse into the various cultures and lifestyles from around the world. They can involve industry-related sightseeing, work placements and opportunities to earn credit towards a course of study.Our Travel and Tourism students have completed study tours to locations such as Vanuatu, Vietnam, Thailand, Fiji and New Zealand.Students completing degrees are offered opportunities to participate in an overseas study tour. Study tours have visited China, Hong Kong, New Zealand, United Kingdom, Spain, South East Asia, Greece and Turkey, Sri Lanka and Japan, focusing on tourism, culture or culinary arts. The study tour counts as credit towards the degree, presenting a great way to mix travel and study at the same time.This year Patisserie and Baking student groups will be travelling to Singapore to experience the prestigious 2018 Asia Pastry Cup and Expo, a Cookery student group will be visiting the Worldchefs Congress & Expo in Malaysia, and our Food Science and Technology students will travel to New Zealand to explore the New Zealand Institute of Food Science & Technology Inc. Conference. In recent years our student groups have travelled to other overseas destinations including Lyon, Hong Kong, Greece, Dubai, Japan, Paris, Belgium, Italy, Malaysia and Singapore.
Student grants are made possible with support from the Australian Government's Australia Awards - Endeavour Mobility Grants program.
STUDY EXCHANGEBachelor Degree students are able to study abroad with our partner institutes for six or 12 months, while staying enrolled at William Angliss Institute. William Angliss Institute currently has Study Exchange partnerships with the Free University Bolzano (Italy), CETT - University of Barcelona (Spain), and University College of Birmingham (UK).
There is opportunities for you to organise a study exchange through a non-partner university. This is a fantastic way to immerse yourself in the culture of the host institute and country. Study abroad subjects are delivered in English and recognised by William Angliss Institute as part of their degree studies.
Students who undertake study abroad programs stand out from others when applying for jobs. They have an international perspective from their global experience and are better able to interact within diverse cultures within the foods, hospitality, events and tourism industries. Plus, they make lifelong friends in exotic locations, learn about other cultures, languages and find opportunities for jobs, development and personal growth.
HAMILTON ISLANDHamilton Island is located in the heart of the tropical Whitsundays. As the gateway to the Great Barrier Reef, Hamilton Island offers an employment experience like no other. With five different accommodation types and a multitude of food outlets, this is a great opportunity to grow your skills and learn from the industry's finest professionals - all this before you even graduate. With over 60 different activities across the island there are many things to do when you’re not working. Snorkelling, scuba diving, sailing and trips to Whitehaven Beach – these will be the best days off in your life!

SCHOLARSHIPSThrough the generous support of the Institute’s many friends and industry partners, the William Angliss Institute Foundation awarded 45 scholarships in 2017. The Foundation was established with the intent of providing ongoing assistance to students wanting to achieve their career goals through the Institute.William Angliss Institute encourages all prospective students to apply for eligible scholarships, even before they have received their offer of enrolment.

SIR WILLIAM ANGLISS SCHOLARSHIPIn recognition of the pioneering work of the late Sir William Charles Angliss, the William Angliss Institute Foundation has established a number of educational scholarships. These scholarships are offered on an annual basis to eligible candidates who are either current or prospective domestic students in any Certificate, Diploma, Advanced Diploma or Degree course within the fields of foods, tourism, hospitality or events at our Melbourne or Sydney campus.
INTERNATIONAL INTERNSHIP SCHOLARSHIPIn 2016, third year apprentice chefs Alex Reddrop-Birchmore and Lachlan Maddigan were selected as joint winners for the International Internship Scholarship, provided by the William Angliss Institute Foundation. The scholarship offers an international work experience opportunity at Fergus Henderson’s St John Restaurant in London, UK. The selection of Alex and Lachlan as the successful candidates was overseen by Ian Curley, head chef at The European and ambassador for the scholarship.

An apprenticeship or traineeship is the perfect way to get trade qualified by mixing practical work with study.
We support Australian Apprenticeships and the employers who provide them by offering specialised training for
apprentices and trainees in foods, business and hospitality.
APPRENTICESHIPS
To start an apprenticeship with us you first need to find an employer prepared to take you on as an apprentice. The Australian Apprenticeship Centre then registers your training agreement with the Institute. As part of your apprenticeship, your training options include classroom-based training or workplace-based training. You also have blended options incorporating class- and work-based training. The apprenticeship will be completed when we receive confirmation from your employer that you have demonstrated the competencies necessary to complete the training contract.

AUSTRALIAN SCHOOL BASED APPRENTICESHIPS/TRAINEESHIPSAn Australian School Based Apprenticeship (ASBA) or an Australian School Based Traineeship (ASBT) allows you to begin an apprenticeship or traineeship while you are still at school. If you are passionate about a trade then the ASBA program means you don’t have to choose between it and your secondary qualifications.ASBAs are a partnership between employers, schools, RTOs and students. They allow you to become involved in your trade while you satisfy the vocational component of VCE, HSC or VCAL.By embarking on an ASBA you are able to complete certificate-based training that can be credited towards a full apprenticeship.

TRAINEESHIPS
Traineeships are a great way to formalise your work qualifications. Whether you are interested in business, hospitality or patisserie, a traineeship will provide invaluable training that will give you an edge over your competitors. To start a traineeship with us you first need to find an employer prepared to take you on as a trainee. Then the Australian Apprenticeship Centre registers your training agreement with us.So you can work and learn at the same time, traineeships are undertaken in your workplace with our trainers who will organise visits in conjunction with your training plan. During these visits training will be conducted, as well as assessments and one-on-one evaluations of your progress. Units that cannot be assessed and completed in the workplace will take place on campus.

Angliss graduate and pastry chef at the renowned restaurant, Elisha is
responsible for coordinating the pastry section, running the soufflé room during service, making chocolate bon bons, macarons and other petit fours. Vue de monde is synonymous with elegant fine-dining in Australia and looks to create classic cuisine with locally produced ingredients and a focus on sustainability.
Geraldine Nankervis, Vue Group Director of People & Culture said, “Regularly Vue Group has taken great participants who complete their pastry apprenticeship in collaboration with William Angliss Institute.”
“As part of the program, apprentices rotate across all Vue Group venues: Pastry Production, Burnham Bakery, Benny Burger, Jardin Tan, Piggery Café, Iki-Jimē and complete their apprenticeship at Vue de monde. This provides them with incredible exposure to various styles of leadership, different styles of cuisine and an opportunity to conclude their apprenticeship at one of the best restaurants in the country.”
Apprentices join masterclasses with Vue Group’s suppliers and get first-hand contact with Shannon Bennett who is extremely passionate about the success of this program.
Past apprentices have gone on to have successful careers with international Michelin star restaurants, have opened their own restaurants locally and some have even returned to the business in senior roles after international work and travel opportunities.
Elisha said, “Studying at William Angliss Institute has helped me with my confidence and has pushed me to be the best I can be. It has made me passionate and driven to achieve my career goals. It gave me a lot of insight into the industry and opportunities for work experience in other well-known restaurants such as Om Nom Kitchen and Spice Temple.”
Elisha’s view for the future has a distinctly global perspective.

After graduating from William Angliss Institute with a Diploma of Travel
and Tourism, Mandy was offered a position with Global Ballooning as a Sales and Marketing Assistant. Having progressed to the position of Asia Marketing Manager, Mandy develops strategic plans to achieve marketing goals, conducts product training with local and international agents, attends tradeshows and provides support to the operational team. She also creates engaging content for promotional channels including Global Ballooning’s Chinese website, social media, collateral and presentations, using footage from her balloon flights.
Mandy gained practical knowledge of the local tourism industry during her studies, which was vital to the success of her career launch.
“During my study at William Angliss Institute, I visited many tourist attractions in Melbourne and regional Victoria, and I developed a range of skills and knowledge through my course work. I really enjoyed studying tour guiding and marketing. The teachers inspired me, as they are very knowledgeable and provide a fascinating insight into Australia’s tourism industry,” Mandy said.
After initially graduating with a Bachelor of Journalism and Mass Communication and working as a journalist in Hong Kong, Mandy’s love of travel became the inspiration for a successful career change.
“A love of travel led me to Australia and eventually to Melbourne. I instantly fell in love with this city. When I was travelling around by myself, I had a light-bulb moment when I thought, I love adventure, I’m really passionate about tourism, so why not make this my career? I want to get up every morning and think, I love going to work,” Mandy said.
Mandy’s drive and enthusiasm for the industry continues to motivate her. “William Angliss helped me to take the first steps into this exciting industry, provided basic tourism knowledge, and gave me an excellent networking channel to meet industry experts. I would say, never stop learning and always challenge yourself outside your comfort zone. I have been ballooning over 30 times and I still enjoy flying. I think you just need to find out where your true passions lie and work hard on them.”

“My training at William Angliss Institute gave me a strong fundamental skill base for entry level positions which meant I had a confident start to my career when I first went into the industry,” he said.
“Over the next few years I want to continue to build relationships with guests in the Melbourne dining scene, grow my network of professional contacts within the industry and open myself up to as many learning opportunities as possible,” Cameron said.
A William Angliss Institute Hospitality Management Diploma has taken graduate
Cameron Maher around the world and from waiter to Group Assistant General Manager in just seven years.
“It has been such a great ride - hospitality can be an incredibly fun, diverse and rewarding industry to those who make it a part of their life. Hard work and long hours are balanced with the opportunities to travel, meet amazing people and work with incredible products and properties," said Cameron.
Cameron recently started working as Group Assistant General Manager at Andrew McConnell Restaurants. Starting his career as a waiter at the iconic restaurant The Fat Duck in the UK, Cameron then became Head Waiter at The Fat Duck in Melbourne before being promoted to Assistant Restaurant Manager at Dinner by Heston Blumenthal Melbourne and then moving as Restaurant Manager at Estelle by Scott Pickett in Northcote.
Cameron completed his Advanced Diploma of Hospitality Management at the Institute from 2007 to 2010 and travelled to London to land a job at Dinner by Heston Blumenthal London.
Cameron was working at The Fat Duck in the UK when he was asked to be part of the team to open The Fat Duck in Australia.

to be enormously beneficial for me both professionally and academically. I was able to apply the theory I was learning in my studies to my current job and the knowledge I had from my previous industry experience to my studies.
“During my Bachelor, I often found myself tweaking my operating procedures at work based on teachings in class which resulted in obvious improvements. For example, a catering report and running sheet I created as a part of an assessment for my catering subject is now the run sheet that I use every day for each of my events. The way I recruit my staff and the processes I follow has come directly from the theory from my Human Resources classes.
Since completing my Bachelor of Event Management I have been able to focus solely on my full-time role as Functions Coordinator and have found that a number of academic frameworks have increased the overall productivity of our business.”
Brittany first enrolled at the Institute in 2011 as an 18 year old out of high school when
she chose the Institute as her first preference due to its reputation and specialisation in hospitality and events.
Graduating with a Diploma of Event Management in 2013, Brittany was selected to participate in the International College Program at Walt Disney World, Florida, USA.
The six-month internship saw her posted at the top resort within the Orlando resort where she took on the role as Hostess at the Grand Floridian Resort.
Upon her return to Australia Brittany resumed her position within the Australian Leisure and Hospitality (ALH) Group and began to work her way up to assistant venue manager.
“Many of the skills gained in my diploma at William Angliss Institute were carried across to my role with ALH. From marketing to staffing, basic food and beverage knowledge, to providing exceptional customer service - there wasn't an element within my role as assistant venue manager that wasn't in some way derived from my studies at William Angliss Institute.
“As I wanted to become an event manager, I returned to the Institute and completed a Bachelor of Event Management to refresh my skills and create more industry contacts,” Brittany said.
Six months into the two year course Brittany was offered her current role as Functions Coordinator.
“Working full time and studying full time was incredibly challenging (40 hour work weeks, plus studying didn't leave time for much else), however this juggling act proved
