Early morningsBeing down the beach everyday while working on the Dunedin Light weekly reports photographer Derek Morrison often gets asked by people

how they can get into surfing. “We’ve been able to show more people in the city what great surfing beaches we have here,” he explains. “Most people love the ocean and want to learn how to surf or be a part of it on early mornings like this image here of Chris Sinclair at St Clair Beach.” Derek said surfing had a lifelong learning curve, but it was enjoyable from the very beginning and you could learn at any age. He said paddleboards were a popular starting point for those wanting to get out there and shorten the learning curve, but said the mini-mals and fun boards being produced these days were also popular for those seeking a thrill as well a connection with the ocean. The surf school at St Clair is also the perfect starting place for those without their own gear. Mornings are the best times to surf and Dunedin has a healthy pre-work surf fraternity – “they’re the people sitting next to you in the office with salty eyebrows”. Derek has just released his first book Dunedin Light Seasons, which is available at all good bookstores.

Dunedin sings Handel’s masterpiece, Messiah, at Knox Church on Tuesday, December 11 at 7.30pm. Conductor Peter Adams will conduct the City of Dunedin Choir and audience members who wish to sing in this breathtakingly beautiful music. Everyone is welcome to join the City Choir singing Messiah. A grand unveiling

The exciting and dramatic redevelopment project began in 2008 and is to be complet-ed in time for the opening on December 8th.

Stage one consisted of the construction of the building to house the museum’s collections. Completed in November 2009,

After four years, four stages and over $30 million, the unveiling of Toitu Otago Settlers Museum on December 8th is set to be a grand event.

Stage two was the redevelopment of the the NZR Bus Garage. External work on the 1939 concrete heritage garage was completed and a new exhibition display installed.

Stage three was the refurbishment of the existing Burnside brick heritage building, adding an extra 1800sqm of exhibition space, and installing a new exhibition display.Stage four was the big one - the creation of the new entrance foyer (pictured right) which houses Josephine, the museum’s unique steam locomotive, and provides reception, shop and function spaces.

While the four-year redevelopment was underway, 51,000 objects were carefully catalogued, packed and moved into the brand new state-of-the-art, purpose-built storage facility. The total cost of the project is $38 million. The Dunedin City Council committed $28 million, with the remaining funds to be raised by the museum. The total redeveloped museum floor space sits at 5988m², which is a 59% increase in exhibition space, a 60% increase in public spaces, a 77% increase in other spaces including shop, stores and meeting rooms. 18 newly created exhibitions are now housed within 9 totally refurbished exhibition spaces.

As well as the building side of the project, there has also a huge amount of restoration happening behind the scenes. The restoration of the Roslyn No. 1 tram, the first of its kind in New Zealand, was undertaken by the Heritage Tramways Trust based at Ferrymead in Christchurch. “The Heritage Tramways Trust were thrilled to be involved with the restoration of such an historic vehicle as the Roslyn No1 Tram” said Dave Carr, Chairman of the Trust. After a year and half in storage at a secret Dunedin location, Josephine, one of five double-ended Fairlie engines, is now installed into the northernmost corner of the new entrance foyer. Ja 1274, Dunedin City’s historic 100-tonne locomotive can be viewed in its new shed, located between the museum and the railway station. It has taken 31 years of service, a 537,000 mile journey and three months of tender loving care from the museum’s conservation team to restore the Tiger Tea trolley bus to its former glory.

Admission to the new museum will be free for everyone. There is a $12 entry fee to Records and Archives and there may be a charge for touring exhibitions.

Ingredients - Base

1 cup plain flour

½ tsp salt

¼ tsp mustard powder

1 cup grated cheese

64g melted butter

Spinach and Cottage Cheese Quiche

BASE: Bind all dry ingredients with melted butter & evenly press crumb mix into bottom & up the sides of a 25cm quiche dish.

FILLING: Lightly sauté onion. Blanche spinach, squeeze out water and chop finely. Add to onion with nutmeg and milk. Continue to gently cook. In a bowl, beat eggs, and mix in cottage cheese, chives and grated cheese. Add to onion and spinach mix, combine well and evenly distribute in quiche base. Arrange thinly sliced cherry tomatoes around edge of quiche. Bake at 180°C for 30 minutes (rotate half way through baking). Slice into eight pieces. Serve with a fresh summer salad.

Ingredients - Filling

1¼ medium/large onion

2 handfuls spinach

Pinch of ground nutmeg

¼ cup of milk

4 eggs

250gm cottage cheese

Chives

½ cup grated cheese

A couple of cherry tomatoes

Ingredients (Makes 2 dozen)

1 cup plain flour

3 cups icing sugar

350gm melted butter (warm)

2 cups egg whites

Sieve dry ingredients and mix together. Whisk egg white with electric beater until past the bubbly stage and medium firm peaks form. Add all the butter and gently continue mixing until thoroughly combined. Add egg and butter mixture to dry mix and gently but thoroughly combine. Evenly deposit into greased muffin tins. Bake at 180°C for 8 minutes and then place ½ a plum or 8/10 frozen raspberries/cranberries on each friand. Bake for a further 10 minutes before rotating in the oven. Bake for a further 3-4 minutes until slightly golden on top. (Raspberry friands may require longer due to colder batter). Leave to cool for 5 minutes before taking out and placing on a wire rack to cool. Evenly dust with icing sugar to serve.

Caramel Iced ChocolateIngredients

1 Tbspn Cocoa Amore Caramel powder

Good scoop creamy vanilla ice cream

Fresh full cream milk

Whipped cream

In a cup, mix Cocoa Amore Caramel powder to a paste with a little boiling water. Place a good scoop of creamy vanilla ice cream in a large sundae glass and pour fresh full cream milk in, until ¾ full. Tip the caramel paste on top of the ice cream and milk. Finish with whipped cream & real chocolate shavings.

A Rhubarb Christmas

It’s a little bit different because you can enjoy a lovely glass of wine with your brunch/lunch and then buy a bottle on your way out to take home to enjoy. It’s a great opportunity to showcase superior wines at an affordable price. Wine tastings can be tailored to suit your individual requirements. “It’s about putting people into a comfortable environment and having some fun. Sometimes it’s even about learning something new. We like to take the pretention out of wine tasting.” said Sam.

Rhubarb loves to theme various events throughout the calendar year. This year has been somewhat quieter than some of the previous, with the Royal Wedding in 2010 and the Rugby World Cup in 2011. Although the Queen’s Jubilee and the Olympics were certainly notable events, including a display of flags to commemorate the recent All Black test in Dunedin. Rhubarb has built up a great collection of flags over the years. December 1st begins the festivities for the run up to Christmas. The 20 hours of Christmas printed on this page is a light look at an old favourite albeit a little tongue-in-cheek. Being responsible hosts Sam and Helen do not expect that this is the case at your house. On a more serious note the 12 Wines of Christmas should give you something to consider when planning your libations over the holiday period.

For the last 8 years Rhubarb has operated a wine shop in the middle of their licensed café in Roslyn. Owners Sam Kerr and Helen Wright wanted to create a hospitality environment for all ages and all stages. The formula has proven successful. The large table in the middle of the wine shop is regularly booked for family groups that wish to sit under the fabulous curved ceiling.

To help you with your choices, Rhubarb is running a promotion from December 1st until close on December 20th. From the land100 years later, as the world celebrated

the Queen’s Jubilee, Percy’s family, joined by over 200 local residents, gathered in the station homestead’s old gardens, now Wanaka Station Park, to celebrate this centenary year.

This year also marks another celebration in the Rippon family: 30 years ago, Rolfe carried forward Percy’s faith in Wanaka by realising his vision of the Wanaka soil sustaining quality grape production and planting the first commercial vines at Rippon. He had of course been assessing the land’s potential since his youth and carried out more thorough studies upon moving back to the farm in 1975, but it was in 1982 that he planted vines with the express interest of fostering a viable business from winegrowing. Thirty years on, Rippon and its wines stand testa-ment to Rolfe and Lois’ convictions in the land and its produce.

The fruit and wines of 2010 were issued from a calm season and result-ing in wines of extraordinary precision and clarity. When tasting them, it feels like tremendous amount of matter has been compressed into the space of the wine and its feel – it’s difficult to qualify this, but with the knowledge of what awaits us in the vintages ahead, it seems that this has to be a function

The result is that ever more energy is being delivered into the plant’s prospective progeny - the grape and it’s seed. Happily, it also means that the textural markers which define our three Mature Vine Pinot Noirs: Rippon, Emma’s Block and Tinker’s Field, are once again hugely apparent.

The 2010 Mature Vine Pinot Noirs are, to us, the voices of the places from which they were issued. Rippon, our flagship wine, speaks as the voice of the farm as a whole through all of the mature vines planted therein; Emma’s Block and Tinker’s field are born of very specific sites within the farm, whose vines are now of an age that they can speak with honesty of these sites. It is fitting then that these wines, Wanaka born and bred, should match so perfectly the produce of the land that surrounds them: Silere and Cardrona Merino, Bendigo game, wild mountain thyme and Central Otago cherries. All of these, together and separately, work wonderfully with the Rippon Pinot Noirs for a truly local meal.

1-2 tsp fruit chutney (we use Provisions of Cromwell)

Load your Tuscan-style bread roll with aioli, spinach, bacon, fried egg, cheese and fruit chutney. Sit back and enjoy!

Kai Whakapai means “food made good”. The Kai, as its more commonly known, is café-bar enjoying pole position on Wanaka’s lakefront strip and regarded as an integral part of Wanaka’s social fabric.

The Kai has reinvented itself several times since it opened in 1994, and employed hundreds of Wanaka locals at some point. Current owner-operators, Roger & Shonagh North, recently revamped again and steered the ship back towards its original direction: A relaxed bohemian hang-out that’s super-friendly, showcases the best of local products and where everyone is treated as a local.

Despite its relaxed veneer, “behind the scenes the staff work incredibly hard”, assures Roger. “They’re amazing. They’re a passionate and highly skilled team who

just keep on getting better and better. The team is now 16 strong and very stable. They are all very individual, yet fantastic team players and united in their dedication to quality. Above all they’re a whole heap of fun and manage to share that fun with our customers.”

The Kai core business remains a café, with three quarters of its trade attributed to food and coffee. But in the early evening, as many guide books and Wanaka locals would attest, it is hard to beat watching the sun set with a nice cold handle of Wanaka’s very own Brewski.

Kai WhakapaiArdmore Street, Wanaka

Gluten-free Banana CupcakesIngredients (Makes 20 cupcakes)

1 cup milk

2 tsp lemon juice

250g butter, softened but not melted!

3 cups sugar

2 tsp vanilla essence

4 eggs

4 ripe bananas, mashed

500g gluten-free flour

2 tsp baking soda

1 tsp salt

2 tsp cinnamon

Mix milk and lemon juice together and set aside. Combine butter and sugar in kitchen aid and beat until pale and creamy. Add vanilla and eggs one at a time, beating well after each addition. Add the bananas and mix well. Fold in sifted flour, soda, cinnamon and salt. Fold in milk and lemon juice. Spoon into greased silicone ‘Texan muffin’ moulds, dividing between 20. Bake at 170°C for about ½ hour or until cakes spring back to the touch. When cool, pipe with chocolate cream cheese icing or your own choice of topping. Garnish with dried banana chips.

Sweetcorn, Roasted Pepper & Feta Fritters with Chilli Jam & Salad

Ingredients - Fritters (Makes 35 fitters - 3 per person)

500g fluten-free flour

¼ tsp chilli powder

1 tsp salt

2 can creamed corn

2 can sweet corn kernals, drained

400g cubed feta

4 eggs, separated

1 bunch spring onions, finely sliced

400g tinned roasted peppers, well drained and diced

2 cups water

½ bunch coriander, chopped

FRITTERS: In a large bowl, whisk together egg yolks and water. Sift over flour, salt and chilli powder. Combine. Add corn, feta, spring onions, peppers and coriander. Whisk egg whites and fold through. On a well oiled grill, spoon out 1/3 cups of the mixture, forming each into a circle. Cook for 5mins either side and lay out on a cooling rack.

Iced ChocolateIngredients

2 scoops good quality vanilla ice cream

2 tbsp chocolate sauce (made by mixing Cadbury’s hot chocolate powder and water until pouring cream-like consistency

Full fat milk

Freshly whipped cream

Crushed Cadbury’s flake to sprinkle on top

Line sundae style glass with chocolate sauce. Add icrecream and top with milk. Top with the whipped cream and sprinkle with crushed Cadbury’s flake. Voila.

Ingredients - Tomato Chilli Jam (Makes a couple of jars worth)

4 large red onions, finely diced

6 tsp crushed garlic

10 long red chillis

2 tins cherry tomatoes

2 cups brown sugar

1 cup balsamic vinegar

½ cup sweet chilli sauce

CHILLI JAM: Put all ingredients EXCEPT sweet chilli in a pot. Simmer for 3 hours stirring occasionally so it doesn’t catch on the bottom. Add sweet chilli and continue to simmer until thickened. Can take up to 4 hours in total. It will thicken further upon cooling. Stack fritters, placing saute or fresh spinach in between layers. Top with homemade tomato chilli jam & and some colorful roasted peppers as a garnish. Serve with a simple meslun side salad drizzled with a balsamic vinagrette.

Pour me a Brewski!Kai Whakapai is famous for Wanaka’s very own pilsner, Brewski, as poured by Duty Manager Floortje Draisma (pictured right). Brewed at Wanaka airport, Brewski’s principal outlet is Kai Whakapai, almost exclusively a “Wanaka Beerworks” bar.

Since opening their store in Wanaka in 2005, Marc and Nicola Martionvich have quickly developed a reputation for creative design, exceptional quality and personal service. Listening carefully to their clients’ design ideas and specifications and working closely with them results in beautifully finished jewellery being created, unique to each individual.

Marc has over 24 years of experience designing and making jewellery in New Zealand. His foray into jewellery design began with a handmaker’s apprenticeship under the critical eye of a talented master jeweller and he progressed to take on the role of head jeweller for a large international jeweller.

Marc established Martinovich Exceptional Jewellery to design and make distinctive one-off engagement and wedding rings for clients. Fusing the old with the new, Marc combines modern techniques with classic design elements to create timeless pieces. The challenge to create unique jewellery for his clients takes passion and skill. Marc says, “I want my customers to be overwhelmed by a piece of jewellery they wouldn’t have thought possible. I get enormous satisfaction from creating a special ring and I won’t compromise on quality, whatever the budget.”

Marc and Nicola Martinovich have made the design process simple for their clients, while ensuring the results are perfect. Once a client has booked a consultation, they come into store and sit down with Marc himself. Marc loves to get to know all of his customers so always enjoys some initial introductory chatter. Marc then begins to take the client through the design process where he will ask particular questions, and get comments on design concepts, images or ideas. Marc’s expertise in the jewellery design industry means the client does not have to do a lot of thinking nor come up with concepts, as Marc does that, from gauging ideas from opinions.

Marc is extremely clever at getting a handle on each client’s taste, even if the client does not know what their own taste is. Throughout the consultation Marc will sketch and explain his ideas. Eventually the design becomes narrowed down to something that is unique and exclusive to the client. Marc goes beyond for all of his clients. For example if choosing a stone is pivotal to the design, Marc will source stones for the client to view, these will usually range slightly in grade, size and value. Together Marc and the client will view the stones and discuss the stones qualities before the stones are chosen to be incorporated into the piece. It is important to know that changes

can always be made and some times are suggested even when the ring is nearing completion. Marc always has his clients in mind when making each piece so if he feels a change is more in-line with the client’s particular tastes, he will contact them and discuss it before proceeding. Marc loves to be present when clients come to collect their pieces, saying everyone is completely blown away with how Marc has been able to create a piece so unique and suited to them that they could not have ever imagined themselves. Marc and Nicola pride themselves on being able to remember each piece by the name of the client - instead of “the diamond ring made in July”, it is “Lucy’s ring” or “Anna’s ring”.

In 2009 Martinovich opened their Christchurch store in Riccarton Mall so customers can meet with Marc and Nicola to discuss their design requirements. Each piece of jewellery continues to be handcrafted by Marc in the Wanaka workshop. Their Wanaka shop is located at 40 Helwick Street, and is open from 9am - 5.30pm Monday - Friday, and Saturday 10am - 1pm by appointment.

Like most of the food at the Mediterranean Market, the butchery specializes in meats locally sourced and of the highest quality. In November 2010 The Mediterranean Wholesale Market was named Supreme Award winner at the Great NZ Sausage event for its pork and fennel sausages. The Market credits their success to high quality, fresh ingredients such as free-range pork from local suppliers.

The Dry Aged Beef cabinet is where the prime Ribeye, Sirloin and Rump is aged in a traditional style over a 28 day process, and can extend to a maximum of 75 days. The meat is exceptionally tender and the flavour is greatly enhanced by this very controlled process.

The Mediterranean Market also cure their own cheese in the cheese aging room, allowing the stock to reach the perfect maturity. Cheese is bought in bulk in large rounds, and broken down into smaller retail packets.

Boutique items that are often hard to source and can be expensive to buy for the average Joe, are stocked at the market having been imported from all over the world.

The Market are proud to stock award- winning Pure NZ Ice Cream, made locally using the very best ingredients available. From chocolate ice cream using 70% Belgium chocolate to berry ice creams loaded with fruit; the flavours are intense and original.

Well, we all know it’s extremely tough work manning the barbcue, launching the boat, pulling up huge fish, doing bombs, sinking beers, working on the tan or sleeping in the shade. Deafened by a symphony of rubber jandals slapping the sun-baked earth we smile and laugh, because the only thing we need to think about is doing it all again tomorrow. Wild Descent, presented by 100% PURE Racing (the organisers of the GODZone adventure race), is a multi-day, expedition-style kayak race held between the 17th and 20th January, 2013. Wild Descent is part kayak expedition, part adventure, part race, taking participants through some of the most breathtaking scenery imaginable on a journey from start to finish. The route, in this edition of the event, will traverse a distance of approximately 260km, travelling from Wanaka and finishing at the Pacific Ocean on the east coast of New Zealand. Teams and pairs will be expected to kayak in a variety of challenging conditions from long sections of white water, through narrow gorges, to slower moving hydro dam-created lakes. Teams will pass through a series of checkpoints along the course which will be positioned to ensure safety at the most challenging rapids. At the end of each day participants will arrive at the overnight camp location which will be staffed with race officials and volunteers. Family, friends and supporters are encouraged to follow you on your adventure and stay with you at the overnight camps.

Summerlands is an exciting new festival taking place at the Lake Hawea Hotel on the 2nd of January. Summerlands features acts such as Dub FX & Flower Fairy, Tiki Taane performing an acoustic set, P-Money, Emma G & MC Tali, K+LAB, Sum-mer Thieves and SamSam.

On-site camping is available for just $10 per person, able to be purchased with your Summerlands ticket.
