FLEUR DE SEL Considered the “caviar of salts”, Fleur de Sel is harvested in the Guerande region of France. Chefs around the world consider this the best fi nishing saltavailable. Its special crystalline shape, rather than fl ake, helps it to dissolve slowly, delivering a full and balanced fl avor.

Fleur de Sel is collected from the very top layer of the famousFrench salt ponds. Conditions must be just right for farmers to collect even a pound of this full-fl avored fi nishing salt. On a clear summer day, with no wind, the pa-tient farmer will hand harvest thedelicate top layer of the salt pond, and the world has a bit more Fleur de Sel to enjoy.

Fleur de Sel is best used as a fi n-ishing salt, as it breaks down oth-er herbs and highlights individual fl avors in foods. Use a sprinkle just before serving and it will en-hance any gourmet meal.

SEL GRIS The French perfected the art of high quality, hand-har-vested sea salt by using centu-ries old Celtic methods. It’s no coincidence they produce the fi n-est grey sea salt in the world. Sel Gris is known for its color, miner-als, and high moisture content. Sel Gris gets its beautiful grey color from the clay lining the salt ponds. The mineral content is ex-traordinary, with bonus nutrients not found in most sea salts. SEL GRIS - Brut The naturally large, irregularly-shaped crys-tals of Sel Gris Brut are the tra-ditional size gleaned from the Celtic harvesting methods. Care-ful hand-harvesting with wooden tools produces this beautiful, ex-tra coarse crystal.

SEL GRIS - Tamisé Carefully sifted French Grey sea salt, these coarse salt crystals are smaller than our Sel Gris Brut and slightly larger than the size of Fleur de Sel. Great for baking and cooking, or to add crunch to your favorite dish.

SEL GRIS - Fine The same high quality grey salt as the coarser varieties, but stone ground for easy dispensing from a salt shak-er. No additives of any kind are mixed with the salt. The naturally

delicious fl avor of grey salt and lower sodium content make this a perfect replacement for ordinary table salt, and it is easily used in the kitchen or at the table.

SEL GRIS - Velvet Stone ground to almost the consistency of bak-ing fl our, this grain size melts quickly and evenly. Velvet is perfect for snack foods as it can be used to “dust” an even salty coating on popcorn, roasted nuts, chips, and more. Be careful - less is more with this fi ne grind!

HIWA KAI™ This unique Hawaiian inspired sea salt has a stunning black color and silky texture. Solar-evaporated Pacifi c sea salt is combined with activated charcoal to create this unusual seasoning. This complements the natural

MAYAN SUN™ from El Salvador is a tropical sea salt formed from ocean water trapped in man-made ponds. These mangrove sanctuar-ies are nurtured by mineral-rich volcanic soil. Pure ocean water is captured in the salt, imparting great fl avor and high mineral con-tent.

TRAPANI is handcrafted from tra-ditional salt pans along the famous “Salt Road” in Sicily. The crystals are the fi rst to “bloom” on the sur-face of the salt ponds, and retain valuable nutrients which add deli-cate fl avor to the salt. It is best used as a fi nishing salt for gourmet dishes.

CYPRUS BLACK LAVA™ is creat-ed when Mediterranean fl ake salt is mixed with activated charcoal. The beautiful color is not the only benefi t that the charcoal adds - it also gives it a unique earthy taste and acts as a natural detoxifi er.

CYPRUS FLAKE is known for its large pyramid-shaped crystals with a light and fl uffy texture and mild taste that is characteristic of Mediter-ranean sea salts. Popular for cooking, this salt is also commonly used as a garnish for fi sh and vegetable dishes.

Flake Salt 101 Wondering about fl ake salts? How are they made and what makes them so special? Let’s start with a fundamental tenet of all-natural salts: Where and how your salt was harvested affects its taste, texture, smell, and color. Just like your fa-vorite wine, coffee, and chocolate, all-natural salt is a product of its environment. Salt crystals can be moist or dry, delicate or dense, powdery or crunchy—and every-thing in between! Perfectly orchestrated timing plays a key role in the formation and density of salt crystals. As op-posed to a long, solar evaporation

process that produces traditional, granular sea salts, fl akey salts form on the surface of salt ponds. Time & temperature must be just so to produce the ideal texture – from the delicately irregular fl akes of Murray River, to the large, dense pyramids that comprise Cyprus Flake. No two fl ake salts are alike, and each has its own distinguishable qualities.

As they are generally much more la-bor intensive to produce, fl ake salts are typically more expensive than some of their salty counterparts. However just a pinch goes a long way, and to make the most of their unique characteristics, they are per-

fect for use in topping & garnishing applications.

Flake salts are a mild and balanced choice. They dissolve quickly, so they offer a pop of salty fl avor up front, enhancing all of the nuances of the dish and then quickly getting out of the way, careful not to overpower. Not to overlook their other best as-set: fl akes are crunchy, providing a palpable satisfaction with each bite.

Because fl akes vary in size from paper-thin shavings to heartier pyramids, when cooking it is recom-mended to use the more substantial fl akes for higher moisture dishes and

the more delicate fl akes for lower-moisture dishes. The key, of course, is that it must melt in your mouth, not on your food, for the most dra-matic effects! For food processors & manufactur-ers, fl ake salts are the best choice for a topping application or in a spice blend. MEDITERRA® sea salt is har-vested in the South of Italy, where they have been producing salt since 200 B.C. Mediterranean sea salt is known for its mild fl avor and bright white crystals. With-out additives of any kind, it is

naturally high in magnesium, which acts as a natural anti-caking agent. This is a very high quality salt, and is available in multiple grain sizes.

SONOMA gourmet sea salt is the only commercially produced sea salt in the United States. Harvested from evaporation ponds in NorthernCalifornia, this is a natural sea salt at an economical price, mak-ing it perfect for food manu-facturers or food processors.

Fusion® Sea Salts are the result of SaltWorks’ quest to combine all natural sea salts with pure flavor to create the ultimate seasoning. As we searched for extracts and powdered flavors… we were disap-pointed over and over again.

After 18 months of development, 3 proprietary flavoring processes were born using real, whole ingredients.

Liquid Fuse: The genuine flavors of these Fusion Salts are gained by using a proprietary process of liquefying whole natural ingredients and fusing them with the salts.

Dry Fuse: This method is used when we want to combine the flavor of a liquid (i.e. Merlot) with the salts. We actually use several unique processes based on the liquid to concentrate the flavor, so we are able to fuse it with the sea salts.

Fusion Blend: Fusion blends are simply whole ingredients combined with their perfect sea salt companion to create pure delicious flavor.

This is a new generation of gourmet, natural flavoring. We are proud to offer the Fusion line of Artisan® Salt Co. sea salts. We will continue to add new and exciting varieties!

As our Fusion flavored sea salts are all natural and handcreated, they can vary slightly in color & appearance from batch to batch. This is normal, and does not affect the delicious flavor of these all-natural products. As we do not use anti-caking agents in any of our creations, Fusion salts may absorb moisture from the air. Some varieties may become sticky if not stored or packaged properly. It is important to store the salts in an airtight environment that is dry and cool. We use oxygen absorbers and silica packs in all of our retail jars and bulk bags to help minimize this characteristic.
