AAco WAGYU masters of luxurious beef
In the same way only sparkling wine out of the French region Champagne can be referred to as “champagne”, only Wagyu beef born into the Japanese prefecture of Hyōgo can be called “Kobe Beef”.
Kobe beef is typically derived from Wagyu cattle, “Wa” being Japanese for “Japan” and “gyu” meaning “cow”.
Prior to 1868, the consumption of beef was banned in Japan for about one thousand years with most cattle being bred
for work purposes. It wasn't until the late 1800’s when Emperor Meiji decreed beef should be eaten and enjoyed by all Japanese
people, did beef become generally consumed in Japan.
Throughout the centuries, however, it is believed Japanese Samurai were fed Wagyu beef to strengthen them for battle, and upon
returning from war brought their diet home and began cooking their beef on plow shears, a technique known even today as sukiyaki.

All AAco Wagyu can be managed and traced from its original cattle station to the restaurant using the SureTRAK™ system.
From birth, each calf carries a specialised radio frequency tag from paddock to
the processing plant. Each carcass has a sample of DNA cross-referenced to its
radio frequency tag, meaning any primal cut from any of our carcasses can be
DNA tested to verify customers are truly purchasing and receiving a genuine
AAco Wagyu product.

Before being awarded the privilege to wear the coveted Master Kobe
brand, cattle spend between 500 and 600 days at “Aronui”, an AAco
Wagyu feedlot on the unspoiled Darling Downs, enjoying a naturally
grown and specially formulated feeding program that has been handed
down and developed from selected Wagyu feeding masters in Japan.

AAco is the proud home of some of the world’s most revered full blood Black Wagyu breeding bulls and cows.
001 Hirashige-Tayasu, also known as “Westholme 001”, was born in
Japan and is by Dai 20 Hirashige, the son of Kedaka, who gained 84.7
points as an "Ikushu-Toroku" - the highest honour in Japan at the time.
An official Kangen progeny test showed that at least 80% of his steers
would gain A5 grade.
