Cast iron has historically been the material of choice for cooking vessels. Evidence of this

can be seen in heritage centres all over the world. The most obvious benefit of cast iron

is its durability, as well as its heat retention properties which make it perfect for use in the

manufacturing of cooking items. Many Le Creuset pieces are handed down from generation

to generation, and their longevity mimics their lifetime guarantee. The Le Creuset brand is

recognised the world over for its quality and innovation and is one of the leading household

cookware brands worldwide.

The Le Creuset Cast Iron foundry was started in 1925 in a small town called Fresnoy-Le-

Grand in France - where all the cast iron pieces are still manufactured today. It was the

first foundry dedicated solely to the production of cookware. Le Creuset exports to over 60

countries worldwide, including Australia.

Since Paul van Zuydam bought Le Creuset, the brand has gone from strength to strength. Mr

Van Zuydam is still actively involved in the day to day running on the business.

INTRODUCTIONEach piece of cast iron from the extensive range is individually designed for ease and versatility of use. Le Creuset enamelled cast

iron cookware has a worldwide reputation for its cooking excellence and the colour it brings into a home. All the cast iron pieces are

still manufactured and imported from the original foundry in Fresnoy-Le-Grand. All the pieces are finished using a combination of

enamelling technology and individual manual expertise. The vitreous enamel finish ensures durability but also allows for the

Le Creuset signature colour collection. Due to the fact that each piece is cast from molten iron in its own individual sand cast,

all Le Creuset items are unique. This casting method also allows for a wide variety of shapes, styles and sizes to suit anyone's cooking style.

THE MANUFACTURING PROCESS:There are three main stages of the manufacturing process:

• CASTING

• ENAMELLING

• PACKAGING AND DISTRIBUTION

CASTING

A sand mould is made. This mould ensures that the sides, lid and base of the cast iron piece are all the same width, which ensures even heat

distribution when cooking. Every sand mould is individually made and this ensures that no two Le Creuset cast iron pieces are exactly the

same. A recipe of pig iron, recycled steel and iron, and other mineral ingredient are transferred to a furnace where they are melted to 1000°C .

This melted iron is then poured into a “creuset”, which in the English translation is “melting pot”. The hot iron is then injected into a sand mould.

The iron is left in its sand mould to cool completely before the mould is broken around the cast iron piece.

All pieces are then sanded and polished to remove rough edges on the cast iron product.

Any imperfections on the product are noticed by trained personnel who inspect the product. This is only one of many manual

inspections the Le Creuset cast iron piece undergoes.

A process of shot blasting occurs which removes any oxidisation on the product and creates an uneven surface for preparation of

the enamel coating.

The piece then needs to pass another quality check, and if it does not pass the inspection it is returned to the furnace to be melted down.

ENAMELLING

The first coat of enamel is sprayed on. This is called the ‘ground coat,’ a clear sealant that is sprayed on both the interior and exterior of the

product and helps to prevent rusting. The next coating is the colour enamel which is made up of powdered glass chips and colour pigment.

This ensures longevity of the product. The third and final coat is the graded colour exterior, which gives Le Creuset its signature look. After this

coating the piece is air dried and fired again at 800°C to give it its smooth glossy finish.

PACKAGING

Knobs, phenolic handles or wooden handles are fitted to the lids and sides of the product. The Le Creuset item is then packaged

and prepared for distribution around the world.

CAST IRON MANUFACTURING PROCESS IN POINT FORM:

• Cast iron pieces are handmade in the factory where they start life as raw materials.

• These raw materials include pig iron, recycled iron, steel and other mineral materials which are

melted in a furnace at over 1000 degrees.

• The molten iron is poured into a "creuset" (melting pot from which Le Creuset gets its name.)

• All pieces are sanded and polished to remove any rough edges.

• The shot blasting stage is also performed to remove any oxidisation and create a porous surface

for enamelling.

• Final quality checks are performed before the enamelling process.

• Three coats of vitreous enamel (glass enamel) coating are sprayed onto the pots.

• The product is air dried after enamelling and then fired at 840 degrees before being cooled.

SATIN BLACK ENAMEL:

The Satin black enamel can be found on the skillets, grills, frying pans, sauté pans, woks, tagines and a number of round and oval casserole

dishes. It is especially designed for higher surface temperatures - not simply using a piece on a high heat. The satin black enamel will keep

its good looks and allow a patina (a brownish black film) to build on its surface with continued use. A patina is the result of natural oils and

fats from the food baking into the hot surface. It must not be cleaned off as it enhances the cooking performance and release of food as

well as allowing reduced amounts of surface oiling. The higher surface temperature achieved causes caramelisation to take place on

the outside of food, which aids the retention of moisture and flavour and gives delicious sear lines on meats and fish.

Saucepans and Saucier

• Gradually absorbs heat and maintains slow and even cooking temperatures.

• Deep sides and contoured interiors make stirring, use and cleaning easy.

CARE AND USE:

VITREOUS ENAMEL & BLACK ENAMEL

• Before first use all labels should be removed, the product should be washed in hot soapy water, rinsed and dried thoroughly.

• All Le Creuset cast iron pieces can be used inside the oven and on top of the hob. Le Creuset cast iron can be used on almost

all heat sources, excluding an open fire.

• Cast iron should ideally be used on a low to medium heat setting at all times.

• Special care should be taken when using metal utensils, otherwise silicone or wooden utensils should be used.

• Le Creuset cookware is not suitable for dry cooking and cooking oils should cover the base of the cast iron piece.

• Do not leave a pan unattended at any time.

• Avoid dragging a pan across any heat element.

• Wooden handled pans should not be used inside the oven.

• Match the pan base to the heat zone to maximise efficiency and prevent overheating.

• Do not heat an empty pan or allow a pan to boil dry. This could cause permanent damage to the enamel or the pan.

• Do not cut food inside the pot or pan.

• Never place a hot pan onto a cold surface or unprotected surface.

• Never submerge a hot pot in cold water.

• Electric hand-held beaters should never be used inside a pot - this permanently damages the enamel.

• If there is food residue on the pan, leave to soak then wash normally.

• Nylon or soft abrasive pads or brushes can be used to clean your pan. Never use metallic pads or scourers.

• Never store pans when they are damp. Storage should be in dry cupboards or airy spaces.

• Le Creuset enamelled cast iron is extremely durable and hardy but it may be damaged if accidently dropped or knocked.

• Grills, skillets and Satin black pots with porous enamel should be seasoned with seed or vegetable oil before use.

This encourages the build-up of the patina layer, which enhances cooking performance. Because of this layer, these pots

should not be used in dishwashers as the dishwasher strips away this important layer. To remove stubborn or sticky residues,

fill the warm pan with warm water and leave to soak for 10-15 minutes before washing and drying.

COOKING TIPS FOR GRILLING:

• Ensure the cooking surface is sufficiently hot before cooking begins (if too cool, the sear lines will not develop).

• Place empty pan on medium heat and allow to heat for several minutes. Do not add oil to the cool pan as oil may become too hot and smoke.

• Scatter a few drops of water over the hot surface - if they sizzle and evaporate almost immediately the pan is ready. If they do not sizzle and cause water to evaporate, the pan is not hot enough yet.

• When the pan is hot enough, add oil using oil spray or brush with a Le Creuset silicone basting brush. Vegetable, groundnut or corn oils are always recommended as olive oil may cause excessive smoking (once a patina is built up, very little to no oil will be required).

• For distinct grill lines, leave the food undisturbed on the surface for several minutes. If the food is moved too quickly the lines will be poor and steam will be released onto surface.

• Food should be quite dry before placed on hot surface, as wet foods do not sear well and may result in a steamed appearance and flavour. Use kitchen towel to pat the surface dry of excess moisture and then oil can be brushed onto surface if required.

• Marinated food should have excess moisture removed with paper towels.

• Only turn your food once it is properly seared, this will help to lift with ease.

FAQs:

WHY ARE CAST IRON PRODUCTS SO HEAVY?

The weight of the Le Creuset cookware ensures optimum performance, heat retention and outstanding quality of cooking.

Also, the weight of the cast iron ensures that the cooking vessel is stable on the cooking element.

WHAT IS THE IDEAL HEAT SETTING FOR COOKING WITH CAST IRON COOKWARE?

Low to medium heat is ideal for cooking on the hob. This is because cast iron gets very hot and retains heat extremely well - using

higher temperatures can cause food to stick and burn. Using a high heat is not necessary, could be harmful to the product and is not

economical.

CAN YOU USE METAL UTENSILS INSIDE ENAMELLED CAST IRON COOKWARE?

Although one can use metal utensils for serving, it is suggested that silicone or wooden spoons are used. This is why we have such a

wide range of silicone utensils available. Metal utensils can scratch the enamel which diminishes the life span of the product.

IS ENAMELLED CAST IRON DISHWASHER SAFE?

Yes, but constant dishwashing may lead to some dulling of the enamels. This is not harmful and will not impair performance.

However, we do recommend that the dishwasher only be used occasionally as it is abrasive and shortens the life span of the product.

WHAT IS THE RECOMMENDED CARE AND USE FOR THE CAST IRON GRILLS?

Place the grill on the cooking element, dry. Turn the burner to medium and allow the element and grill to rise to heat together for 2-3

minutes. Water test the grill surface to ensure that the grill is hot enough. Lightly and evenly oil the surface of the grill and add the

meat/vegetables. Once food has been added to the grill pan, do not move it around.

To clean the grill, either add warm water and simmer to remove cooked-on food, or use warm soapy water. The dishwasher is not

recommended as it will reverse the seasoning process. Never immerse the hot grill in cold water.

INTERESTING FACTS:• If the enamel of a pot is slightly stained, boiling lemon juice or bicarbonate of soda diluted with water is a natural solution

to clean it.

• It is normal for the enamel to discolour over time.

• We sell a pots and pans cleaner that brightens the enamel and is specially formulated for glass enamel.

• Overheating a pot can cause the enamel to become matt and not glossy. Constant overheating over a period of time creates

crack lines in the enamel at the base of the pot.

• If overheated, the phenolic handles won’t melt but will crack and chip.

• All the phenolic handles and knobs are replaceable.

INTRODUCTIONStainless steel was the first non-cast iron cookware range of the Le Creuset brand and was originally called TriVita.

For generations Le Creuset has been synonymous with traditional cast iron quality cookware, but after launching the 3-ply stainless

steel range, users of traditional Le Creuset pieces were introduced to the wonders of Le Creuset stainless steel cooking.

Inspired by the excellent heat conduction and heat retention properties of its cast iron range, Le Creuset set out to create a range

of stainless steel pots and pans that would complement its cast iron pieces.

Le Creuset 3-ply stainless steel cookware are made using a highly technological, triple layer system. An aluminium core is sandwiched

between two layers of premium quality 18/10 stainless steel which includes special magnetic steel, making the pans suitable for use

on induction hobs. It is also suitable for use inside the oven.

HANDLES

Handles are hollow cast and riveted onto the stainless

steel items. This ensures that they stay cool to the touch

as heat is not transferred to them. They are also curved

for a comfortable grip.

Almost all the products in the stainless steel range have

an extra helper-handle to assist with lifting the pot when

full and to ensure a safe grip when moving the item.

WHAT'S THE BEST WAY TO CLEAN 3-PLY STAINLESS STEEL?

All pans in the range are dishwasher safe but, as for all premium cookware, washing by hand is recommended. The pots and pans

should be allowed to cool before washing in soapy water. Rinse and dry thoroughly. If there are stubborn residues, soak the pan in

warm water and use a soft nylon pad or brush to clean.

IS THE TOUGHENED NON-STICK A TEFLON COATING?

CAN I USE METAL UTENSILS INSIDE MY PAN?

INTRODUCTION

Introduced to the brand in 1998, the stoneware collection has proven to be a useful complement to the Le Creuset cast iron range.

Manufactured in Thailand in a Le Creuset factory, the stoneware pieces not only perform practically but also lend a distinctive

Le Creuset charm to any table or kitchen. The virtually non-porous stoneware is durable and chip resistant due to the two coats

of glazed enamel and four firings that each piece endures. The result is a collection of stoneware cookware pieces that look great

and perform exceptionally well. The Le Creuset stoneware range will not absorb odours or flavours and resists moisture absorption.

It features sure grip knobs, handles and rims that allow for easy handling and convenient use. This elegant range of stoneware

matches the cast iron pieces beautifully!

MANUFACTURING

The main composition of the stoneware pieces is a mixture of high firing clays, silica and feldspar. This ensures that the stoneware

is non-porous, impermeable and stain resistant once the manufacturing process has been completed. All Le Creuset stoneware

pieces are incredibly durable and very resistant to thermal and mechanical shocks. The enamel coating makes the stoneware

products very colourful, making them ideal for matching with cast iron pieces.

The manufacturing process starts with a design or conception piece, also called a prototype. The prototype is passed on to a

sculptor who creates a mould for the item. The clay, silica and feldspar parts are mixed with water to make them more mobile.

Once the clay and water mixture has been put into the mould, the water is squeezed out under immense pressure, leaving only the

stoneware mixture. The stoneware is left to dry in the mould for 12 hours until it can be removed without breaking.

Once dried, it is fired for 16-18 hours in a kiln. After being cooled, the stoneware piece is glazed with two different glaze coats

- a clear sealant glaze and an opaque glaze.

Once the stoneware piece has been glazed, it is fired again in a kiln at 1180°C-1200°C. This results in a smooth and glossy finish

and a very durable stoneware piece.

Lastly, an enamel coat with colour pigment is sprayed onto the item. The stoneware piece is again fired, this time at a lower

temperature of 700°C - 800°C.

Once cooled, the product is buffed, polished and packaged for export all over the world.

WHAT IS THE GUARANTEE?

The Le Creuset stoneware guarantee is five years. It is a limited guarantee in the sense that it only covers defects in the

• These customers usually bring in a product. They also usually make it known immediately that they are dissatisfied.

• They have had a negative or bad experience.

How to approach:

• Try to listen to the customer and understand the position they are coming from.

• Be helpful and informative. If you can’t help the customer show them who can or get someone to help you.

What to say:

• Listening is key here. The customer wants you to hear them and understand why they are upset.

• Be friendly and understanding.

• Follow procedure, unless customer is extremely aggravated and wants an assessment immediately.

Bear in mind this customer has spent a lot of money on a quality product. If it’s the product that’s upset him/her, try rectify the situation by assessing the product and replacing it, or giving the customer a solution to their problem through customer procedure.

If the customer is upset about the service he/she has received. Try and reassure them it’s very unusual to experience negative customer service in our stores. Be the sales assistant that makes their experience positive. Key point here is to be understanding. Don’t belittle the customer or their complaint.

BODY LANGUAGE:In the customer service industry, it is really important to be aware of your body language. One could have the best sales pitch, but if projected in the wrong way it can deter the customer from making a purchase.

Inevitably, the contact the customer makes with us results in the impression they have of the brand. This is why it is always important to dress appropriately and speak clearly and confidently.

Dress Code:

• Black clothing.

• Long trousers/ knee length skirts or skirts with opaque stockings

• Neat three quarter trousers are acceptable.

• Shorts are NOT acceptable.

• Le Creuset issued shirts.

• Large amounts of jewellery should not be worn. It can be distracting, unsightly and hamper you when working with the product.

• Closed shoes should be worn - if any product were to fall on your foot and you were wearing open shoes, the company would not be liable for the expense you incur.

• Hair should be neat or tied up. Best is to pin all flyaway’s up and out of your face.

• Make-up can be worn, but subtlety is best. Remember that you are entering your workplace, not a nightclub.

• Nails should ideally be short - when working with the product it becomes very counterproductive if you are worried about breaking a nail. Also, nail varnish should not be chipped or pealing. We work mostly with our hands when showing the product to customers; nothing is more unsightly than chipped nail polish or dirty nails!

STORE:

Remember the customer’s first contact with the brand is you and your store, Le Creuset prides itself on its customer service and excellent quality products. The standards are high, so it is essential to take pride in your store and yourself to ensure these standards are met. It does not take much more than five minutes at the beginning and end of the day to ensure your store is neat and tidy. Remember that other facilities might be open in your mall after you close and some customers might walk past the store. If it looks untidy and unsightly, that could cost you a potential new customer.A clean environment also promotes a good working environment. If you are proud of your store and that it is clean, it makes it easy for you to sell the product, making you more confident and more likely to close a sale.Merchandising in store is also very important. When a customer walks in they must want to touch and interact with the product. Strong displays and merchandising lure customers in, bad displays and merchandising don’t.It is important that all staff are aware of and familiar with basic standards of merchandising.

TABLES:

Depending on the look that you are aiming for or the product being promoted, round cast iron dishes ranging in size from smallest to largest should be displayed down the one length of the table with the oval cocottes on the other side. Best sellers or popular items should be placed in the middle i.e. buffet casseroles, tagines, grills etc. Ideally, the bottom of the table should mimic the top.It is important that tables and their displays are kept clean, as this is the main area in the store that a customer will be drawn to interact with. It needs to look clean and shiny.

BAY DISPLAYS:

Bays have a basic merchandising outline that needs to be followed. Here is a description of how a cast iron bay should look from left to right. This is just a general idea and can be changed within reason according to your store and preferences.

• Top shelf: large cocottes such as 31 and 35 Ovals & 30 and 34 Rounds

• 2nd shelf: 28, 26 & 24 (and sometimes 22cm) Rounds on left, large Tagine and small Tagine in middle with 29,27 and 25 Ovals on front right. Upper Middle shelf: Saucepans stacked on right with handles in same place, Wok in back left corner, Buffets and Saute-pans on risers in the middle & tatin dishes if there is space

• Lower Middle shelf: Bakers in front, 3 smaller pots on top of each other behind Bakers. Oval shallow casserole in front, with Saucier on riser towards the back. Another 3 Rounds in right back corner. Sometimes Tatin Dishes, Oval Dishes or Terrines can also go on this shelf.

• 5th shelf: Grills, Skillets and Skillet grills in their pan-stands

• Bottom shelf: Larger pots and fondues behind them.

• Remember that the labels of pots should always be facing out: this creates a strong, uniform look. Pot protectors should always be used and there should always be four per pot: one on each side of the handles. This protects the pot from getting scratched and allows the stacking of pots into pyramids for interesting and fun displays. Ideally bays should be styled in the same way as this creates a strong look, and consistency is key.

• The flame, cherry and cobalt bays should always be full bays as these are our key colours. Stainless Steel should also have its own bay and the products should be cleaned everyday as they tend to get dull and grubby from regular handling.

TOP TIPS:

• Be aware not to make bays too full or too sparse as this creates an environment where customers won’t interact with the product.

• Table displays allow customers to see the sizes and touch the product and get a feel for it.

• Risers and grill/skillet holders are important because they help display products in an attractive way, luring customers in and showing off the range.
