As we are fast approaching the Christmas period, we begin by sharing a drink with Accra Breweries Limited as they celebrate 80 years of operations in Ghana. Happy Birthday and cheers!

Having a drink with friends is a pleasurable experience, but we must also eat and what is better than a good meal shared with friends. We introduce you to Chef Gaby of the Lounge at Chase restaurant and discover his passions which are cooking, family and friends – the building blocks of life. What could be better?

My grandfather once told me that to understand the world in which you live you must “go and visit your country” and more importantly then share the experiences that you have had.

To share is a pleasure. Everyday you can discover new places to eat, drink, visit or even shop. It is said that it is better to give than receive, and that gifts and the giving of them maintain friendships, so you can indulge yourselves and make others happy at the same time. Pay a visit to the shops we point out to you in your favourite magazine.

We can’t speak about sharing without a nod to our friends in the arts. We say a big “thumps up” to Lilly, who managed to bring together the cream of Ghanaian art at a splendid exhibition held at the CFAO showroom. It was a fun evening, admiring some vintage art in the midst of some beautiful cars and charming ladies and in this case sharing was a real pleasure.

with Executive Chef Gaby of the Chase Lounge

hase is the latest addition to Ghana’s upscale hospitality industry. Located in the serene environs of Labone, opposite the Coffee Shop, Chase has a fast food section that serves a wide range of popular Lebanese foods

and continental cuisine and The Lounge, a high class restaurant with an intimate setting for your romantic evenings.

The Lounge is a chic beautifully decorated restaurant, which more importantly serves exceptional gourmet cuisine under the guidance of its international chef, Gaby Kachouh.

As well as a formal dining experience, The Lounge also offers an all-day breakfast menu, an ideal setting for those important business meetings.

After ordering the chef’s special, I had a one-on–one chat with executive chef Gaby and asked him a few questions about himself and the restaurant.

Chase interview

Alain GBEASOR (A.G): Good morning chef, can you tell us a bit about yourself?

Chef Gaby (C.G): I am Lebanese and a trained chef. I hold a BT3 in Food Production from the Ecole Superieur d’Ajaltoun in Lebanon, which has a highly accredited culinary arts programme. Since completing my formal education there I have had over 10 years experience as a chef in various hotels and restaurants in different parts of the world.

A.G: Chef, did you cook growing up?

C.G: Yes, coming from a Lebanese family who loves their food, cooking is definitely in my blood.

A.G: What made you decide to become a professional cook?

C.G: Passion and desire. I love to cook for others and that was the motivation for my professional experience.

A.G: Have you worked in any famous places?

C.G: Smiling - well wherever I work is famous- but seriously we serve some of the most famous people in the country. Come to The Lounge any day and see the rich and famous who gather here.

A.G: Please can you share the names of some of the hotels and restaurants you have worked at?

C.G: I have worked at lots of interesting places notably: the Leila restaurant, The Grand Hills Hotel in Broumana, Portomilio in Kaslik and Larisa Catering in the Middle East as well as Royal Riviera Hotel in Guinea and Amandine Restaurant in Niger.

A.G: Have you cooked for any famous people?

C.G: : I have cooked for ambassadors and diplomats from all over the world. At one time I cooked for over 1300 guests at one seating.

A.G: What kind of cuisine can we expect from you at the Lounge?

C.G: I cook continental, teppanyaki, sushi and of course Lebanese food on demand as well as Ghana fusion cuisine.

A.G: What influences your cooking style?

C.G: French and Italian cuisines have a considerable influence on my cooking.

A.G: What do you like to eat at home?

C.G: At home I make a variety of foods but on any day it will surely include lebanese mezza, fois gras, pasta and carpaccio.

A.G: How do you like to unwind after all the hard work?

C.G: I love to go to the beach or the pool with friends. I also love to do the tourist thing with my wife, Natalia Sanchez.

A.G: What advice would you give to young and aspiring chefs?

C.G: Know your limitations and build your skills slowly. Quality, passion and love must go into everything you do.

ccra Brewery Limited (ABL) was originally Overseas Breweries

Limited, incorporated on 30th June 1931, for the purpose of establishing a brewing industry in the then Gold Coast.

The 1930’s were a time of great world recession, however the company was built in record time and having survived the recession proved its resilience through the second world war and Ghana's days of struggle.

So hard were the times in reference, that the then Governor of the Gold Coast, Sir Thomas Shenton Thomas in his speech commissioning the project declared

The company was the first non-traditional manufacturing industry in the Gold Coast and the first brewing industry in the whole of West Africa.

In 1997, SABMiller Plc (then South African Breweries Ltd) the second largest brewing entity in the world, acquired controlling shares in the company. ABL is engaged in the manufacture and distribution of beer, sparkling soft drinks and non-alcoholic malt beverages.

Mr Gregory Metcalf has held the post of managing director of ABL since 1st June 2009. His experience includes product innovation, sales and marketing, administration and distribution management. He leads ABL with a vision that is to become the most admired company in Ghana’s beverage industry, by owning and nurturing local and international brands that are the first choice for the consumer.

ABL marks its 80th year and promises continued support to the Ghanaian economy through employment and increased use of local raw materials thereby creating rural wealth. In a 2011 Kapstein socio economic report on ABL,

Professor Ethan Kapstein of INSEAD reveals the following as contributions of ABL to the Ghanaian Economy:

• US$ 117 Million value Added to the Ghanaian economy equivalent to 0.4 % of GDP

• ABL contributes substantially 1.1% to the tax income of the country, thus US$ 46 Million in economy – wide tax income.

• ABL and its Associates provide employment and support for 0.2 % of the labour force thus 17,600 jobs throughout the Ghanaian economy.

1931 Accra Brewery Limited (then Overseas Brewery Limited) was the first brewery built in the European tradition in West Africa.

1939-45Club Premium Lager becomes the leading Ghanaian beer brand and proves popular throughout West Africa during the Second World War and after. The Club minerals range which included quinine tonic and muscatella was launched.

Moments

1960-68The Fermenting Hall was considerably enlarged as ABL chalked another milestone with the completion of a modern bottling plant commissioned by the then Head of State, Lt. Gen. Ankrah, OV, MC.

1989 - 94ABL began a major expansion drive to expand its bottling capacity resulting in a bottling plant which was commissioned by then Vice President, Mr. Kow Nkensen Arkaah on November 23, 1994.

1995-97SABMiller Plc acquires nearly 70% of the shares of ABL and a management contract in 1997.

2002-2007

SABMiller invested sustantially in capacity building at ABL. This lead to the installation of three new Uni-tanks in early 2002 and a further three Uni-tanks were commissioned in February 2003 in addition to a new cooling compressor to upgrade the brew house.

2008-2011Since the year 2008, Club Lager has tripled its sales volume and has become the fastest growing beer brand in Ghana. e

1. Discouraging Irresponsible Drinking

Accra Brewery is working with such stakeholders as employees, other industry players and the Ministry of Health to address irresponsible drinking and reduce alcohol-related harm in Ghana.

2. Benefiting Communities We Serve

ABL is helping develop small and medium sized enterprises in our localities with an aim to boost the local economy, improve health care and education levels, and bring more work to the area.

3. Water as a Priority

Brewing beer uses lots of water, not only in the manufacturing process but also in growing the crops that it relies on.Managing water efficiently is one of the key ways we can protect local environments and the communities around our plants.

4. Reducing our Energy and Carbon Footprint

ABL uses energy efficiently, investing in renewable energy sources and generating our own energy are key ways we can help to protect the environment. This will not only save money and resources, it will also reduce our greenhouse gas emissions and hence our carbon footprint.

5. Transparency and Ethics in our Business Dealings

Transparency underpins our approach to sustainable development and our business activity more widely. Our suppliers and customers want to know that our beers and soft drinks are of good quality and are safe to drink.

6. Health

Health is an issue of particular relevance to our business and our particular focus is on HIV/Aids because SABMiller has an extensive presence in countries affected by the pandemic.The potential consequences of poor health for our business are high and that is why we manage the issue as a priority and invest in healthcare provision for our employees and our local communities.

7. Encouraging Enterprise Development

Creating economic opportunities for small businesses near our breweries not only helps the local community but helps our business too. We benefit from not having to pay import duties and having access to more direct and secure supply chains, improved quality of products and new innovations.

8. Respecting Human Rights

At ABL, we have a duty to promote the values of the international community, in particular the United Nations Universal Declaration on Human Rights (UDHR).

9. Working Towards Zero Waste Operations

In managing waste generated by our businesses, we follow the principles of the waste hierarchy to reduce, reuse and recycle our waste in an efficient and, ultimately, value creating way. This requires us to use our resources efficiently and limit the disposal of waste to landfill.

10. Packaging – Packaging and Recycling

Over 66% of our waste consists of organic by-products from the brewing process including spent grains, waste yeast and trub (a residual sludge from the process). Minimizing the waste we produce and finding alternative uses for it are the key ways we can protect local environments.

Augustine Gokah in one of a few water colourists painting in Ghana. Born in 1961 he studied at the College of Art, Kwame Nkrumah University of Science and Technology,

Kumasi(1988) and holds a BA(Hons) Degree in Painting. He paints the reality of everyday life with passion and seriousness. His paintings spotlight the life of coastal and northern dwellers in Ghana. Offering an insight into both the life and landscape of its people. 'His use of a low range of colours, sharp contrast of light and dark, raw craftsmanship and a hint of modern underpinnings create an intrinsic tension between purity and sophistication. This persistent and consistent trait undeniably accounts for the multifaceted appeal and the drama of his paintings' John Owoo, freelance editor and art critic.

He has had several shows at home and abroad most recently at the Artist Alliance Gallery in September. His artworks are widely collected adorning both private homes and offices.

Directly or remotely, we encounter art on a daily basis. However, the essence of art and its impact, is made possible through the various forms of expression by artists. It is in this light that Tiga African Art assembled four artists who have more than paid their dues in the professional art world in this august show dubbed REMINISCENCE.

Directions

Preheat oven to 375 degrees F. In a small mixing bowl combine the butter, house seasoning, parsley, shallots, and garlic. Thoroughly rinse and dry the turkey. Tuck the wings underneath the body and place the turkey in a roasting pan. Rub the butter mixture all over the turkey. Stuff, if desired.

Roast for 18 minutes per pound (including stuffing weight, if using). The turkey is done when an instant-read thermometer is inserted into the thickest part of the thigh (and deep into the stuffing) and registers 165 degrees F. and the juices run clear. Remove from the oven and loosely cover with foil. Let rest for 20 minutes before carving.

Glaze: Combine all ingredients in a small saucepan over medium-high heat. Bring to a boil and reduce heat to medium-low. Let simmer until the cranberries burst, about 8 to 10 minutes. Strain the mixture through a sieve and let cool. Reserve for turkey.

Glaze » 3 tablespoons butter» 1 (12-ounce bag) cranberries» 1/2 cup maple syrup» 3/4 cup cranberry juice» 2 teaspoons apple cider vinegar» 3/4 cup apple cider» 1/4 cup brown sugar» 1 teaspoon salt» 1 teaspoon freshly ground black pepper» Turkey

Brie En Croute Directions Defrost 1 sheet frozen puff pastry for approximately 15 to 20 minutes and unfold. In a saucepan, melt 1 tbs butter over medium heat. Saute the 1/2 cup walnuts in the butter until golden brown, approximately 5 minutes. Add the 1/8 teaspoon ground cinnamon and stir until walnuts are coated well. Place the walnut mixture on top of the 1 (8-ounce) wheel Brie and sprinkle the 1/4 cup brown sugar over the mixture. Lay the puff pastry out on a flat surface. Place the brie in the center of the pastry. Gather up the edges of the brie, pressing around the brie and gather at the top. Gently squeeze together the excess dough and tie together with a piece of kitchen twine. Brush the 1 beaten egg over top and side of Brie. Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown. Serve with crackers.

he 3rd annual High Vibes festival opened at the Ghana National Museum in Accra. A project initiated by the french embassy and alliance

At the press briefing prior to the launch, Mr. Marc Benaiche producer of the Black Odyssey Exhibition said the exhibition was designed to honour the epic history and celebrate the achievements of our musical legends. This well attended launch saw the Honorable Member of Parliament, Fritz Baffour take the stage to give a spectacular musical rendition. Congratulations to the organizers, Creative Storm, and the french embassy for such a splendid showing, which saw guests dance all night long to vintage high life music from legends such as Pat Thomas, Ebo Taylor and Gyedu Blay Ambolley.
