Cassava root is native to the highlands of Guyana with its
Latin name, ‘Esculenta Crantz’, has been known by popula-
tions from tropical countries all over the world. The cassava
itself is grown in several tropical and subtropical regions
and the tubers are long and thin. Cassava is also known for
its starch, which is stickier than that of rice and is suited to
widespread industrial applications around the world, in par-
ticular in South-East Asia, Sub Africa and Latin America.
Cassava root is the raw material used to make Attiéké. In
Ivory Coast, cassava root is processed mainly by women us-
ing traditional and ancient methods to produce the semo-
lina. It is an extremely popular local speciality.
What is dehydrated Attiéké production process ?
The dehydrated Attiéké is obtained by completing several
steps to process the cassava, which takes two to three days.
These steps are peeling, grinding, fermentation, pressing,
granulation, drying, winnowing-sifting and steam-cooking to
obtain what is called fresh Attiéké. This fresh Attiéké is then
dehydrated and winnowed a second time before being pack-
aged. Dehydrated Attiéké contains 100% cassava semolina.

For 100 g, cover with 100 ml boiling water and close the
container tightly. To cook in a couscous steamer, let sit for
5 min. In the meantime, bring 100 ml water to a boil. Pour
the Attiéké into the top of your couscous steamer and stir
for 3 min. Remove your Attiéké from the couscous steamer,
add a small amount of butter / oil and season your dish To
cook in a microwave, let sit for 10 min. and cook for 2 min. 30
sec at 900W. Remove the dish, add a small amount of but-
ter / oil and stir. Your Attiéké is ready to be seasoned.
