Historia de Ecuador:• Spanish conquistador Francisco Pizarro conquered the

land in 1532, and throughout the 17th century a Spanish colony thrived by exploitation of the Indians.

• The first revolt against Spain occurred in 1809. • In 1819, Ecuador joined Venezuela, Colombia, and

Panama in a confederacy known as Greater Colombia.• When Greater Colombia collapsed in 1830, Ecuador

became independent. • Peru invaded Ecuador in 1941 and seized a large tract

of Ecuadoran territory in the disputed Amazon region. • In 1981 and 1995 war broke out again. • In May 1999, Ecuador and Peru signed a treaty ending

the nearly 60-year border dispute.

Geografía de Ecuador:

• Ecuador, about equal in area to Nevada, is in the northwest part of South America fronting on the Pacific.

• To the north is Colombia and to the east and south is Peru.

• Two high and parallel ranges of the Andes, traversing the country from north to south, are topped by tall volcanic peaks.

• The highest is Chimborazo at 20,577 ft (6,272 m).

• The Galápagos Islands in the Pacific Ocean about 600 mi (966 km) west of the South American mainland, became part of Ecuador in 1832.

• Ecuadoreans tend to eat three meals a day, in similar fashion and hours to North Americans.

• Breakfasts tend to be served between 6:30 and 9am.

• Lunch is between noon and 2pm.

• Dinner is between 6 and 10pm.

La comida de Ecuador:• Breakfast -- The typical

breakfast in Ecuador is quite simple, usually anchored by scrambled eggs and potatoes or rice. Pancakes are often an option, though they might be oilier and crispier than the pancakes you're used to. Breakfast is often served with fruit, toast, corn tortillas, and coffee.

• Sandwiches & Snacks -- Empanadas -- small, deep-fried pastries stuffed with meat or potatoes. Tamales, a mixture of cornmeal, meat, and spices wrapped in banana leaves, are widely available, as are humitas, a similar preparation that's steamed in a corn husk. Llapingachos are popular potato-cheese patties found all across the country.

seriously. Soup is served with almost every lunch and dinner, both at restaurants and in private homes. During Lent, Ecuadoreans make fanesca, a milky broth served with fish, green beans, lima beans, and a bean called chocho. On the coast, you'll find caldo, a general term for soup,  Menestra is a thicker lentil stew often served with both vegetables and either meat or fish. 

La comida de Ecuador:• Seafood -- Seafood is often

available inland, though it is most plentiful and best on the coast, where shrimp, lobster, and a variety of fish are always on the menu. The coastal region is famous for its ceviche, a cold concoction of fish, conch, and/or shrimp marinated in lime juice and seasonings.

• Vegetables -- The potato is the king of Ecuadorean cuisine. It is eaten at almost every meal, and as snacks. There are varieties of potatoes in the Andean region, from tiny spuds no bigger than a peanut to larger varieties as big as a large orange, with colors ranging from yellow to brown to purple to blue. Patacones, or fried plantains, are frequently served as side dishes on the coast.

Las celebraciones de Ecuador:• Carnival is celebrated in February or March (the week

before Lent) and ends on Ash Wednesday. Ecuador has a very unique version of Carnival, nothing compared to other countries celebrations. Even before Carnival lots of people sell these Water weapons in every part of the country.Most travelers prefer to go to Ambato, where Carnival is celebrated with colorful parades (Fiesta de las Flores y de las Frutas).The authorities are trying to eradicate this traditional custom and actually it has been done in "Salinas" the best beach of Ecuador.

Las celebraciones de Ecuador:• "Semana Santa", is celebrated the week before Easter

and starts on Domingo de Ramos (Palm Sunday). The celebration is held all over the country. There are some processions in the streets on Good Friday, specially in Quito. A very important tradition during the Holy week that is worth to mention is the "Fanesca". Which is a traditional soup made with Bacalao (salt fish) and several different grains. During these days the Catholics don't eat meat.

• Ecuador has a very unique tradition on December 31, Ecuadorians celebrate New Year's eve with the "años viejos"("old years"). These, are stuffed dummies constructed with paper, sawdust, wood and firecrackers shown through the whole country before they are burned.
