Fiddlehead ferns Cook these to remove harmful acids and toxins. Fresh pastured chicken Pastured chickens eat grasses and grubs. Herbs: chives, mint, sage First come the chives—mint and sage follow. Leeks These fall leeks are plucked from thawing soil. Lettuces Tender now, these may suffer in summer heat. Morels Availability depends on rain and humidity. Nettles Once boiled, the stingers are harmless. Oysters Wild, not cultivated. Parsnips These sweeten after a winter underground. Radishes Crisp and peppery. Ramps These pungent leeks grow in the wild. Rhubarb The leaves are toxic, the stalks are not. Salsify Some say this root tastes like oysters. Scallions Trim off the ends and use the rest. Spinach For best flavor, sauté with a pinch of sugar. Spring garlic Don’t mistake this for its scallion look-alike. Spring onions Young onions are milder and more tender.
