    Easy Cheesy Chicken Enchiladas

    1 T olive oil

    ¾ C frozen onions1 T minced garlic

    1 can zesty diced tomatoes with jalapenos

    ½ - 2 oz can red enchilada sa!ce

    1 packet taco seasoning mi"

    1 t c!min

    1 C canned #lack #eans$ rinsed and drained

    1 C frozen corn$ rinsed and drained

    1 plain %annaford chicken$ shredded

    & 'large (o!r tortillas and)or 1* small (o!r tortillas

    1 T #!tter1 ½ - 2 C cheddar cheese$ shredded

    1 ½ - 2 C monterey jack cheese$ shredded

    1+ %eat olive oil in sa!cepan and sa!t, onions !ntil golden+2+ dd garlic and lightly sa!t,+.+ /!ree zesty tomatoes in food processor+0+ n a sa!cepan add the tomatoes$ ½ can enchilada sa!ce$ taco

    seasoning$ and c!min++ 3immer for 1 min!tes$ adding ½ c!p water if sa!ce is too thick+

    with cheese+11+ f yo! want to heat thro!gh$ #ake at .79 for 17 min!tes+
