Easy Cauliflower Pizza 1 medium sized head of cauliflower 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 2 cloves minced garlic optional a few shakes of crushed red pepper 1/4 cup shredded low fat Parmesan cheese 1/4 cup skim milk (or reduced fat) mozzarella cheese 2 eggs Toppings: Pizza sauce, cheese for topping, veggies, etc. The options are endless! Cover pizza pan with parchment paper. Preheat oven to 450 degrees. Using cheese grater, grate entire head of cauliflower (minus the core and any green stems) until you have a bowl of “rice texture” cauliflower. Add to this all other ingredients and mix well. Pour mixture onto the parchment paper and spread it evenly. Then press it firmly into place. Bake at 450 degrees for 20 minutes. *If adding toppings – remove crust after 10 minutes, add toppings and then place back in oven.
