Easter Biscuits Makes 15 biscuits Preparation & Decorating Time: 45 mins Cooking: 20mins ________________________________________________________________ Ingredients 100g chilled butter 160g plain flour 1 large egg yolk 60g golden caster sugar 1 tsp vanilla extract Coloured sugar paste to decorate Method 1. Grease the baking tray or line with baking parchment. 2. Tip the flour and diced butter into a large mixing bowl and rub together with your fingers until the mixture looks like breadcrumbs. 3. Add the sugar, vanilla extract and egg yolk and mix into a dough with your hands. 4. With your hands, roll the dough on a lightly floured surface into a sausage shape. Wrap in cling film and chill for at least 1 hour. 5. Heat the oven to 180C/160C fan. Roll the dough to 5mm thick and using a cutter, cut into your chosen cookie shapes. Arrange on the baking tray, spaced apart. 6. Bake for 20 mins or until the biscuits are just turning pale golden around the edges, then transfer to a wire rack to cool. 7. Decorate with coloured sugar paste.
