Simply Organic was awarded first place Best Burger. Pictured is a burger from this
summer, made up of eight-ounces of grass-fed beef, crispy romaine lettuce, thin red onion, heirloom tomato, house pickles, toasted pub bun and garlic fries. Different
burger combinations were Classic, BBQ, Earth, Apricot Chipotle, Five Alarm, Mojito,
Cubana and Vegetarian. Simply Organic also was voted first place Best Lunch and second place Best Fries. Unfortunately, Simply Organic closed up its shop last week. The good news is it is reopening into a full-scale restaurant at
Wellspring Plaza, located at 9144 Burnett Road. This 75-seat, family
friendly restaurant will open as Gather, Gastro Pub likely in

At the end of Yelm city limits to the west sits The Cattleman, a
Louisiana-style Southern barbecue restaurant where two men are
preparing food based on recipes they learned from their mothers.
Owner Clark Sumner and his proclaimed “pit master” Reginald
Christor are providing Yelm with an authentic, Southern-style
barbeque that is uncommon for the area. The duo make The
Cattleman unique with their different backgrounds, providing
customers with barbeque that will take them to the south.
The Cattleman was started by Sumner’s family after The Bunkhouse went out of business.
“We saw the opportunity and seven days later we were business
owners,” Sumner said this summer.
With background roots from South Carolina, Colorado and
Wyoming, Sumner has made the Yelm area home for over six
years.

The Cattleman Adds Southern BBQ Kick to Yelm

Pit master Christor is from Shreveport, Louisiana, and moved
to Yelm after being stationed at Joint Base Lewis-McChord dur-
ing his 18-year career in the Army. During his time in the mili-
tary, barbeque was a consistent topic of conversation between
his friends and was where he was mentored in the art of using
indirect heat to smoke meat.
Having met when Christor needed help from his neighbor
Sumner, they formed an alliance to provide Yelm with the “best
barbeque in a 60-mile radius.” Together, they have been working
to bring authentic Louisiana barbecue to the plate of customers.
DETAIL ORIENTEDEvery detail is considered: the ingredients in the rub, the type
of wood they burn to keeping track of the exact temperature of
the meat from the time it leaves the fridge to the time it is served
on a customer’s plate.Ingredients for the rub used are kept secret from the public.
“We want people to come in and enjoy it here,” Christor said.
“If we gave out the recipe, you could just go home and make it.
That’s 20 years of hard work. You can’t give that away for free.”The rub might be kept secret but the wood they use is not.
Alder is the wood of choice by the duo because it is dense and
therefore creates more smoke.
“You have to smoke it through and through,” Christor said.
He chooses to burn alder over another popular smoking wood,
applewood, because the Louisiana-style barbecue provides more
kick than it does sweetness.
“Applewood is too sweet,” he said.
Perhaps the most important detail when cooking meat is the
temperature. The smoker runs between 200-250 degrees and the meat is pulled off after six hours, reaching 150 degrees. When the meat is pulled, it immediately goes into a vacuum-sealed bag
where it is stored in a hot hold at 141 degrees. When the meat is
removed from the hot hold, it goes onto direct heat for approxi-
mately one minute to create a glaze.

what it took to put together this photo of a local senior prep
athlete:
“We needed a space that if we ended up selecting the non-
composite image it still looked good. So we used the historic
panorama wall of what Tacoma waterfront used to look like
in the 1800s. We shoot with studio lights and portable battery
packs on location so you get the lighting and look of a high
budget sports shoot. Studio lighting in the studio or on location
is one of the main things of what really separates us from the
competition. We selected the image of the soccer player and
used specialized software to cut him and the ball out. Then in
Photoshop, we placed him in a rainy soccer field. We bent his hand and his foot to look more like he was in the air and not
flat on the ground. Then added water and splashes to his skin and ball. And finally, we added a little motion blur and played with the tone of the overall image and voila we made an image
that this senior will be excited to show his friends and eventu-
ally hopefully his grandchildren.”

FOR PHOTOGRAPHY:
1. The best camera you have is the one you have
on you. Shoot with the camera you have at the
time and know its limitations.
2. Shoot with light from the sun reflected off of
walls onto your subject and not the sun as your
direct light source. The light will be much softer
and flattering.
3. Shoot with the background in mind.
Keep distracting objects out of the shot.
4. Compose the image with lines that lead to the
subject or at least have the subject
balanced in the shot.
5. Don’t be satisfied with the image the phone
or camera gives you. Play with editing the color,
saturation and the crop until it tells the story you
envisioned. Black and white conversion can make
an image focus the eyes to the subject the way
you wanted.

PRIORITIES AS M AYOR:Editor’s note: The general election for mayor of Yelm took place
on Tuesday, Nov. 7. When this special section went to print, the
outcome was unknown. If JW Foster won, here are his priorities for
the next four years.
1. Take care of the employees who take
care of Yelm.
2. Encourage and stimulate economic vitality
through support of local businesses.
3. Maintain a balanced budget that supports all
services we provide the citizens of Yelm and the
many who call Yelm their home base.
