Welcome to our latest edition of the Drywite Product Guide. Because this Product Guide is designed to stay current for a longer period any updates will be posted via our website: drywite.co.uk

Drywite Ltd evolved from the Pioneer Potato Company Ltd, which was incorporated on 20th July 1933 by H.G. Lee when his fourteen-year-old son Malcolm had the inspired idea of selling ready peeled potatoes. To overcome the problem of their peeled potatoes discolouring when kept out of water, Malcolm and his father formulated their own preservative, which caused such interest among local fish friers that they soon gave up potato peeling to concentrate on the production of their preservative, which was patented and named Drywite.

In 1935 the company changed its name to Drywite Ltd and by 1939 Drywite Potato Preparation was available throughout the UK via a national network of Fish Frier’s suppliers and today Drywite Products are used in most Fish and Chip shops and restaurants throughout the World.

As the name implies the major benefit of using Drywite All Seasons is that it has been developed to address seasonal variations in the quality of potatoes. Winter or summer, Old Potatoes or New Potatoes Drywite All Seasons will improve your end product. For most of the year you will require a standard dose and at times you may be able to reduce the dose then when sugar levels are higher you can increase the dose to suit, thus offering a variable dose and addressing issues with starch and sugar leading to darkened frying medium.

Consistent Quality

Having chipped potatoes directly into a Drywite 25 Gallon Chip Bin (code SI-25). Thoroughly rinse chips to remove starch. Drain Bin of water by removing Rubber Bung. When drained replace Rubber Bung.

Add the solution to the chip bin by pouring over the chips. Repeat process 2(ii) until chips are fully covered.

After draining allow the chips to dry for at least 1 hour. Store in cool (10ºC), dry conditions, chips will remain dry, white & ready to fry for at least 48hrs.

DO NOT RE-SOAK IN WATER!

Using a Drywite Solution Mixing Bucket (code DMB), mix Solution as follows:

Fill the Bucket up to the 25 litre mark with cold water.

Soak the chips in the solution for exactly 15 minutes.

For perfect crisp fried chips, fry at 188ºC to 196ºC.

Add one 25 gram of Drywite Formula No.2 Powder or Drywite All Seasons Powder, using the measure attached to the bottle cap. Mix thoroughly.

After soaking the chips for 15 minutes, drain the solution away by removing the rubber bung.

Stainless Steel vs Tinned WireWe give you the choice - you choose!Originally, core frying utensils, chip shovels, fat skimmers, fish turners etc, the tools of the trade, anything that ever got dipped into hot frying medium, continually day after day, dating back to the 1930’s were made of wire and coated in tin.

It is only comparatively recently, back in the 1970’s, that British utensil manufacturers, started producing utensils in stainless steel. It was believed that this new wonder material would revolutionise sales and that the old traditional tinned wire goods would diminish.

We at Drywite Ltd, the premier suppliers of utensils to the Fish & Chip Industry, believing that we should give a choice decided to supply both the traditional tinned wire and the new stainless steel.

Well before the rush to buy cheap imported stainless steel utensils started at the end of the 1990’s, we had noticed that for 20 years the industry had a preference for tinned wire instead of stainless steel.

So, we asked the question, why?

Until a few years ago stainless steel utensils were on average 3 times more expensive than tinned.

So, was it down to price?

No. Because over the last few years our industry has became awash with cheap imported stainless steel, now resulting in the traditional tinned wire utensils becoming more expensive than their stainless steel counterparts. Yet despite this trend we find sales of tinned utensils out sell stainless steel varieties at the rate of 10 to 1.

Why?

The answer is quite simple. Because tinned wire utensils last longer. Unlike stainless steel which becomes increasingly brittle in use. Being constantly dipped it into hot frying medium and soon resulting in strands of stainless wire snapping off and possibly contaminating food.

The molecular make up of the traditional tinned wire utensil remains constant and is not affected by the high temperature of the frying medium and therefore takes a lot longer to wear out.

As part of our policy for continued development, we have, over many years, inspected both types of utensils returned to us under complaint, most of which have been worn out. Both types generally have their own characteristics.

Many tend to break at the welds, which is the weakest point.

The stainless steel utensils are often returned with strands of wire missing completely.

However, the tinned wire utensils, although broken are generally still intact.

So from the point of view of both value for money and safety tinned wire utensils are the better value.

The Drywite Young Fish Frier Competition started in 1995 and every winner has become nationally known through the publicity the competition creates. The National Federation of Fish Friers and The Seafish Industry are also involved in judging the Competition. All finalists are invited to the prestigious Fish & Chip Shop of the Year Competition Awards in London where the National Title is presented to the Winner.

The competition was initiated by the Directors of Drywite Limited, Kelvin Lee and Briar Wilkinson, in memory of their late father Malcolm Lee, who had always encouraged young people to succeed. Malcolm’s belief was that if young people could be encouraged to make fish frying their career, and if all children could be encouraged to eat and enjoy fish and chips, the future would be safe.

Since its conception the Competition has highlighted the vast number of highly trained young professionals working in our Industry and all finalists have benefited from great publicity even if they did not ultimately win. It is not only the young fish friers who benefit from entering the Competition – the Winning Shop can easily receive thousands of pounds worth of free publicity.

All previous winners of the Drywite Young Fish Frier Competition so far have not only thoroughly enjoyed taking part, but have also increased their personal confidence and ability to promote themselves and their business locally and nationally.

All finalists have benefited from both national and local press and television and radio coverage, and of course national recognition

within the fish frying industry. Previous winners, Michael Fotheringham, Nigel Hodgson, Callum and Lyndsay (nee Petrie) Richardson, Carlyn Kearney, Stuart and Raymond Fusco all went on to win the Seafish Fish & Chip Shop of the Year Competition.

Stuart Fusco who won in 2004, went on to achieve Les Routiers Café of the Year Award in 2005. All winners have gone on to achieve greater success in business. Previous winner Lyndsay Petrie-Richardson was presented to Her Majesty the Queen at Buckingham Palace.
