Named for its town of creation in Jalisco, Mexico, tequila is an amazingly complex spirit with delicious flavours from smokey, sweet to caramel & everything in between.

Our blanco tequilas are served with a choice of our house made sangrita, a delicious mix of orange, grapefruit & tomato juices with spices, seasonings & jalapenos to add a nice bite.

Alternatively our house made verdita is a sweet & spicy mix of pineapple juice & mint with a few jalapenos added for good measure.

Tequila can only be produced in the state of Jalisco and limited regions in the state of Guanajuato, Michoacán, Nayarit and Tamaulipas. It’s divided into 2 main categories: Lowland and Highland (Los Altos).

The lowlands reflect less sweet, more herbaceous profiles whilst the highlands tend to be more sweeter and floral in flavour due to the blue agaves being larger in size.

TEQUILA

For the tequila purists. Aged for up to 59 days, however predominately not aged at all, most blancos have strong tastes of spiced agave with good acetone burn on the nose. Almost perfectly clear and served either straight up or in a caballitos to bring out the aroma, this is tequila in its most purist form.

BLANCO(PLATA, PLATINO, SILVER, CRYSTAL)

AÑEJONow we’re getting serious. Añejos are aged from 1 year up to 3 or 4 years in barrels limited to 600 litres. They will impart flavours of caramel, toffee, butterscotch or coffee and possibly even more spice or smoke. The barrels used are a mix of white American oak, French limousin or German oak and this has a huge impact on the flavours attained. Some distilleries use old bourbon casks or char their casks to add different flavours.

EXTRA AÑEJOA relatively new category that must be aged over 3 years but predominately 4-6 years with huge flavours even more complex. Here we are talking dark chocolate, Christmas cake, sweet caramel or a smoky vanilla warmth depending on your choices. Designed for the connoisseur, or those with some cash to splash. Served with a palate cleanser and spiced fruit for the true appreciation of these fine spirits.

REPOSADOReposado can be aged for up to 1 year, with the majority being aged 4-7 moths in oak barrels. Here we start to see more flavours from the aging process. You start to find more spice such as cinnamon, black pepper and vanilla. The flavour will generally be smoother than their blanco counterparts.

For a long time, tequila was essentially a type of mezcal. While tequila is made exclusively from a single variety of agave tequilana weber azul or blue agave - Mezcal can be made from 28 different species. They are also made in different regions of Mexico than tequila and the agaves are usually cooked for several days in underground pits lined with hot coals, adding their distinct sweet, smoky character that is utterly unique.
