with a sous vide preparation, the bacon that comes with the canadian scallops is slowly cooked. this results in a surprising taste and texture. the salmon is house smoked with oak moth. we apply a cold smoking technique that provides a refined taste.

the ceviche preparation of the mackerel, with lemon and vodka, completes this very fresh starter.

for our steak tartare and carpaccio we use maas rijn ijssel oxen from piet van de berg. homegrown meat as it is meant.

the vadouvan mayonnaise in the asparagus panna cotta brings east and west together. vadouvan is a spice mixture from india and provides a unique combination.

we serve the antiboise sauce lukewarm; this time not with tomato, but with bell pepper. delicious with the dorade and the zeeland razors.

we cut the sirloin steak for you. it is slowly cooked for a very tender result, always beautiful rose and accompanied by a delicious garlic sauce.

the morel sauce with the slow cooked guinea fowl is a great combination. briefly fried on the skin with a delicious crispy result, an absolute must!

we extract essence from tomatoes in 24 hours, as a basis for the preparation of the vegetarian tomato risotto. a velvety dish in combination with mascarpone and parmesan.

belgian chocolate in the marquise, violet candy and a strawberry marshmallow makes our dessert menu one to remember.

the amstel room, overlooking the river, can accommodate up to 90 guests. the garden room with a private roof terrace suits groups up to 60 guests. as well as the rent of the terrace at the rear of the historic building, it is also possible to use the entire floor for your event.
