Our 14th floor rooftop herb garden, first established in 1997, was Canada’s first urban rooftop garden, further demonstrating our commitment to local products and environmental stewardship. Our chefs and apprentices care for and nurture our garden to bring the freshest ingredients to you and your families. Our garden is also home to some 300,000 bees that thrive here in this beautiful city and reside in our six rooftop hives. We are able to harvest an average of 375 pounds of honey annually for use throughout our kitchens.

A MESSAGE FROM THE KITCHENThe legendary kitchens of Fairmont Royal York have been proudly serving guests from all over the world since 1929.

As part of Fairmont’s commitment to environmental stewardship, this menu contains locally sourced, organic or sustainable items whenever possible. All cuisine is prepared without artificial trans fat. The bountiful availability of Ontario food products is supported by one of the most agriculturally rich regions in Canada and enables us to purchase more than 50 percent of our food from Ontario and Canadian producers.

Our province boasts some of the world’s finest produce, from the apples and pears of Wellington County to the sweet corn and peaches of Niagara.

We proudly serve Canadian beef on all of our menus and source sustainable seafood options through our partnership with Ocean Wise, the Vancouver Aquarium’s conservation program.

High standards of hygiene and cleanliness are have been delivered at Fairmont Royal York for over 91 years. However the COVID-19 pandemic demands that we elevate those standards even further; therefore, we have implanted the below standards with our in room dining and dining venues, which represents some of the most stringent cleaning standards & operational procedures in the hospitality industry:

• Contactless option for drop-off and pick-up at door

• Shift to disposable accompaniments, such as salt and pepper, etc.

• Removal of additional tray accessories when order is delivered (i.e. flower vase, etc.)

• Trays disinfected between each use

• Delivered by In-Room Dining attendant in mask and gloves

• Gloved & masked ALLSAFE Ambassador offers hand sanitizer and mask upon arrival

• Mandatory screening for all diners, which may include a temperature check

• Face coverings mandated for all employees and guests in all indoor public spaces

• Seat allocation to promote physical distancing

• Envelope / pouch to place masks in while dining

• Shift to disposable or digital menus or disinfection between each use

• Change of items / disinfection of all touchpoints on table between diners

• Increased frequency of cleaning and disinfecting for both front and back of house with EPA- registered chemicals, proven effective in preventing the transmission of COVID-19

• Masks for all restaurant workers, front and back of house

• Rigorous hand hygiene for all employees

• Gloved culinary employees prepare all ready-to-eat food
