Good afternoon Dr. Wolfe,
I just want to thank you for an awesome semester. I can be high strung at times which you probably are aware, but thank you for your patience. I have learned so much in your class that will help me in the future. I wish we had more professors like you, patient, under-standing and kind. This has been the longest semester, but you saw me through it and were with me every step of the way, and I appreciate you so much. Who knew there was so much to learn in a Food Science class. I hope you're feeling better; after the holidays I'll be heading back to surgery to have all the hardware removed from my foot that I broke 2 years ago. Wish me luck, the first surgery was awful, but my healing is taking longer due to the hardware. Once again thank you for all you've done Dr. Wolfe and Happy Holidays to you.

Dear DEP Readers,
I was very saddened by the news of dear friend and colleague Dr. Fred Wolfe passing on November 28, 2017. When I started working at CAC in 2004, Dr. Wolfe was one of the first faculty I met. He was always so gregarious. Fred was a trail blazer in teaching Online Nutrition, creating and piloting the FIRST Online Nutri-tion Class in Arizona. Our DEP 100% Online Nationwide Accredited Programs could not have been possible if it wasn’t for Fred.
I ran across some emails that Fred sent me over the last couple of years from his students. These are just further evidence that Fred was one of the best Profes-sors, EVER!

Short bio taken from one of Fred’s class introductions.
I was born and raised on Long Island in New York State. I obtained my Bachelor’s Degree in Chemistry from Hofstra Col-lege. I finished graduate school at Texas Tech, and then went on a two year re-search assignment at the University of Alberta, in Edmonton, Canada. That tem-porary assignment lasted 27 years. Dur-ing that time I became a member of the Natural Sciences and Engineering Re-search Council of Canada, and a Full Pro-fessor and Chairman of the Department of Food Science. Then I moved to Arizona and joined the Nutritional Sciences De-partment at the University of Arizona, where I was appointed Head of the De-partment. One of my major accomplish-ments at the U of A was the creation and development of the first fully online Nu-trition class at the U of A. That course became a Tier One Science elective for all students. I needed data for a research project that was aimed at validating online learning, so I started offering that course at Central Arizona College. Thus began an important relationship that continues to this day. When I left the U of Arizona I began teaching part-time as an online Instructor at Central Arizona Col-lege.

Professor, I just want to thank you once more for believing in
me and giving me a chance to complete this course at a very
difficult time in my life. There were times when i thought of
giving up due to the pain i was going thru but you were al-
ways willing to work with me. That left me with no excuse to
quit. I am very sure you are responsible for a lot of successful
students out there that face challenges like me. May god bless
you and your family for helping all students. We sure need
more professors like you so that we can have more educated
people in society.

Hello Dr. Wolfe, I just wanted to say thank you for awarding me
extra points on some of our recent class discussion boards. I
really enjoy the boards and put a lot into each one and genu-
inely appreciate that you took notice of this. Despite being a
very busy teacher, you remain attentive to your students and
always are very helpful at addressing any questions. Thank you
for being a great teacher, this is my favorite class I have taken
at Central Arizona so far and I look forward to the remainder of
the course!

Happy Holidays CAC Dietetic Department!!
I hope you all are enjoying your holiday break and spending time with loved ones!
I wanted to give a special "thank you" to Pam Hector, RD, who called last month with a follow up survey. If it wasn't for Pam, I would have never have taken the Die-tetic Technician Registration exam yesterday and passed! After graduating from the CAC program, I was very burnt-out and somewhat hopeless. I just wanted to thank Pam for giving me another perspective and re-minding me that I could still test.
My family has many things to be grateful for in 2018! Our family will be relocating in September to a new and exciting area. I plan on going back to school to pursue my bachelor's and start my path for becoming a regis-tered dietitian.
I hope 2018 will be as exciting for each of you as it is for me!

Hi Lisa,
I'm not sure if you will remember me as it has been sev-eral months since we emailed last, but you, Kim Bentley, and I snapped a photo together right after I received my diploma from the Dietetic Technician program at Central Arizona College back in May 2016.
I am so excited to share with you that, after an exception-ally personally challenging year, I finally have a date to leave Vermont and move to Arizona … April 9, 2018!
Over the next month I will be editing my resume, while beginning the process of packing up for the big move. I plan to begin my search for an NDTR job in Arizona once the holiday season passes. My plan is to pursue a role focusing on senior care as a primary career goal, with clinical NDTR as a secondary goal. Ideally, I would like to have a position secured to begin once I arrive.
In the past, you have been generous enough to provide a reference for me, and I greatly appreciate that. I would like to ask if you would consider doing so for me once again?
I hope that you and your family are doing well, and that you have a wonderful Thanksgiving holiday weekend!

Jean Halloran is the newest addition to the Dietetic Education Program (DEP). While new to the
position of DEP program assistant, Jean has served Central Arizona College’s students, staff,
faculty and community in various roles at CAC for over 12 years. In her new role at the college
as DEP- program assistant, Jean will be assisting as part of the front-line support for students
seeking degrees and certificates in the program area of nutrition.

Upon successful completion of these three courses a certificate of completion is issued from Central Arizona College.
*Pathway III: for graduates of a comprehensive 90-hour foodser-vice course curriculum, who also have two years of institutional foodservice management experience. Transcripts must include a minimum of one course in nutrition and two courses in foodser-vice management. You must submit a copy of your transcript and certificate of course completion, as well as employment verifica-tion with your application.
In 2016 the Centers for Medicare & Medicaid Services (CMS) issued its final regulations of Part 483 to Title 42 of the Code of Federal Regulations, the Require-ments for States and Long-Term Care Facilities.
The Certified Dietary Manager, Certified Food Protec-tion Professional (CDM, CFPP) is now the required credential for Directors of Food and Nutrition Services in long term care settings.
Food Service Directors hired prior to November 28, 2016 will have five years to meet the staffing require-ments outlined by CMS. Directors hired after Novem-ber 28, 2016 will have one year from hire date to meet these requirements.
