When a potato has more catalase, it means that it produced the catalase in order to decompose hydrogen peroxide, thus the more catalase a potato has, the more hydrogen peroxide it has in the body.

More hydrogen peroxide means more metabolic reactions, and more catalase would mean greater cellular activity

Different types of potatoes have different amounts of cellular activity and metabolic rates
