passion that they have great ‘relish’
for. The Virtues raise money to help
Father Joe, an Indian Catholic priest
they met on the Gold Coast who
is now back in India, forming local
parishes and building schools in the
Kerala region.
How do they raise money for this
worthy charity? The answer, Father
Joe’s Tomato and Onion Relish of
course, and it’s quite delicious from
all reports! The tasty relish is sold
at various places dotted around the
Gold Coast including St Vincent
Catholic Church at Clear Island
Waters. So both Colin and Maureen
spend some of their spare time
peeling the tomatoes and onions
(Colin is excused from the onions)
that are required to make the relish
along with the other ingredients that
will remain a closely guarded secret.
One of the first to take advantage

couple Colin and Maureen Virtue.
The Virtues, who have just moved
in were actually part of a special
group that went on the very first tour
of the community wearing builders
hard hats while it was still under
construction.
Although at that stage incomplete,
they were immediately impressed
with what they saw but just couldn’t
quite make the figures work out. All
that changed rather quickly recently
when the couple contacted sales
consultant Sue Bensemen after
hearing about the discounts on select
apartments. “It really helped us over
the line, we rang on the Monday then
put down a deposit the following
Saturday,” said Maureen. “ Then we
put our house on the market and
within 10 days we had an offer and it
was sold.”

Now settling in to life at the ‘Manor’
the couple are enjoying this new
phase in their lives. Both like to start
each day with a swim in the pool
and a spa. In Maureen’s words, “It
warms the blood up for the day.”
Colin takes it a little further and
makes regular visits to the fully
equipped gym. They also like being
part of a new community and head
to the Residents’ Retreat often
for community events. “There’s a
wonderful group of people here,
not just the other residents, but
the management and staff also,”

Virtues relish the savings on offer
she said. “We love the outlook, the
amenities and the fact that we are
so close to the Mary Immaculate
Church. We can walk there for mass
and we don’t have to take the car
out.” The Virtues lead a busy and
interesting life that includes voluntary
work for the Clear Island Waters
Catholic Church, trips up the M1
to Brisbane to visit family and their
grandchildren, and one charitable

the ‘Manor’ all gathered at the
Residents’ Retreat to celebrate
De Paul Manor Estate’s second
birthday recently. A custom
ordered cake was one of the
highlights of the celebration
that included a few informal
speeches and sing along at the
piano with the visiting choir to
mark the special occasion.

Happily ever after
This is a story of true love that
transcends continents and spans
more than five decades. Now happily
married and enjoying life at De Paul
Manor Estate, David White and
Dr Marjorie Baughan first met in
post war Japan in 1947. David, an
Australian, was working as a military
officer while Marjorie, an American,
was working for the U.S. Surgeon
Generals office. Introduced through
friends, for the next several months
they were inseparable.
Soon David had to return to Australia
and Marjorie was determined to
become a doctor, not an easy career
choice for a woman in that era,
so they continued their romance
through the mail. Three years later
they met up in London, the feelings
were still as strong but their careers
would conspire to take them in
different directions.

required. Residents also have the

David and Dr Marjorie Baughan White
Though they continued to
correspond by mail, the years of
transcontinental separation began
to pile up, and eventually David
fell in love with an Australian girl,
and married in 1956. Marjorie
meanwhile, focused on her studies,
ultimately earning her degree and
finishing her internship despite all
the obstacles. She went on to study
haematology and oncology at UCLA
before embarking on a successful
medical career, holding several
professorships.
Sadly David’s wife passed away in
1994 after a long debilitating illness,
and David never thought he would
marry again until a trip to the U.S.
a little later on changed everything.
The couple met up again and it
was like Japan and London all over
again, the magnetism was still there.
After a month together they both
knew it was time to get married. It
wasn’t too long before they officially
tied the knot in the Australian
township of Gundaroo, in front of
David’s children and members of
his late wife’s family, who graciously
accepted Marjorie.
Considering that most of the folk
around here love a good cuppa,
it’s not surprising to hear that
the residents raised over $600
doing their part for the annual
Australia’s Biggest Morning Tea
charity event. Once again the
Residents’ Retreat proved to
be the perfect spot to hold the
morning tea that was attended
by more than 40 people.

As usual, there’s never a dull
moment with residents coming
together to celebrate birthdays,
morning teas and public holidays.
Lately it’s been extra busy with a
delicious pancake farewell to popular
De Paul Manor staff member Ruth,
who is heading north to be closer to
family. Then there was a ‘streamers
and all’ bon voyage farewell party for
Village Coordinator, Jess, who was
off on an overseas holiday to Ireland
and Europe. The community also
welcomed De Paul Manor’s very own
‘Piano Man’, Barry Porter and wife
Ros, who recently moved in to their
new apartment. The couple have
been a part of the close community
here for a while with Barry famously
‘tinkling the ivories’ at community
social events.
Village Coordinator, Jess Ford, a
favorite of the residents, has recently
returned from her European holiday.
As Resident Services Coordinator,
Jess’s Bachelor of Social Sciences
(Psychology) qualifies her in case
management and counseling.
