Litchfield National Park is just an hour-and-a-half drive from Darwin and features a myriad of diverse environments including rugged sandstone escarpments, perennial spring-fed streams, monsoon rainforest, magnetic termite mounds, waterfalls and historic ruins.Litchfield National Park is an aesthetically stunning landscape, shaped by water and time, culturally rich and steeped in history.This 1,500 square kilometre park was the original home of the Wagait Aboriginal people. The Finniss exploration was the first European connection to the area and the Park was named after Frederick Henry Litchfield, a member of the expedition. For 75 years until 1955, the area was the centre for tin and copper mining. It then fell under a pastoral lease until it was designated a national park in 1986.You can spend as little as one day in the park, taking a quick dip in each of the plunge pools and rock holes on the drive through, but to really experience the true beauty of Litchfield its best to stay at least two days.

H o w t o G e t T h e r eVia Batchelor, 100 km south-west of Darwin, the Park is generally accessible all year (sealed roads) via Batchelor. In the dry season it is also possible to get to the Park via Litchfield Park Road off Cox Peninsula Road (unsealed road 40km) a 4WD is recommended.

Melted low-fat dairy spread, to grease

265g (1 3/4 cups) self-raising flour

40g (1/4 cup) plain flour

1 teaspoon ground cinnamon

140g (2/3 cup, firmly packed) brown sugar

125ml (1/2 cup) skim milk

2 eggs, lightly whisked

50g butter, melted, cooled

2 overripe medium bananas, mashed

Preheat oven to 180C. Brush an 11 x 21cm (base measurement) loaf pan with melted dairy spread to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre. Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the pre-pared pan and smooth the surface.

Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.
